you can create them to, just record separetly an render to multiple channel, you can do this with your favorite music for make a real 5.1 conversion method, well, you ll need some addiotonal knowlage

For me, I often record acoustic guitar to 1 stereo track, with a mic on L and the pickup on R. Treating this as stereo simplifies file management, track management, etc. Splitting these out later and re-balancing or applying different FX chains is a nice option to have.
yep, its multiple use, one of them is for use on surround system 5.1 channel, but you can use them for a high effective crossover solution, separete channel for: subbass, bass, mids and highs or super high frequency, use them for play instruments for each channel too. use them for multiple lenguages or comments, etc.

You can record two channels of a vocal take with one channel having hardware eq and compression and the other dry. You can edit and tune them in Melodyne as a stereo track and if you decide during mixdown that the EQ and comp were too much, you can quickly flip to the dry channel without having to redo all of the edits and tuning.
The song is actually one of Kenny's, called every other time by LFO. One of my all time favorites lol.

You can combine all the drum mics into a multi-channel track and perform grid quantizing very quickly. Then convert them back into separate channels.

Don't understand how you can have two performances, left and right on the same track? I would record them on separate tracks and pan L/R. Am I wrong?
Two mono tracks exported to one stereo.
This was a guitar stem. As was the bass and drums. They were exported stereo stems.
