    If you put the wine in at the same time with the tomatoes and put a lid on, the alcohol will not cook out. Your ragu will be like your uncle who tells your aunt he never loved her at Christmas dinner: bitter and boozy.
    Put the sofrito and the meat together, put the wine in, cook it until yoh can't smell alcohol anymore, and then put the tomatoes. Add water if you need to, you can take the lid off and let it cook to the consistency you desire ❤

    Listen up food noobs, if you're planning to have this ready before you guests arrive, start earlier. 1.30 mins isn't even remotely enough time to tenderise chunks that big.

      I agree totally. It would be as tough as old shoe leather after 90 mins. 3 hours minimum on a low, low heat.

      You are not italian. Stop lying. She put the wine and the tomato at the same time. No italian will accept that. Then the water then the stock cubes. Was it too much for her to first dissolve the stock cubes in the water before adding it ? 😂

    i just made the recipe and it was totally worth it! It was very delicious and flavorful. I used tagliatelle instead of pappardelle and it works just fine.

    Pappardelle al ragù Bolognese - 😎 Three Meat Ragu braised served with pappardelle. Slow cook in deep pot for 45 minutes to make fork tender with meat following off bone.
    8 oz beef brisket (seared cubed)
    8 oz short ribs (smoked)
    8 oz spicy Italian sausage with fennel seed (raw)
    1/2 green bell pepper, diced
    1/2 onion, diced
    1 TBsp garlic, minced
    Black pepper and salt
    2 tbsp olive oil and 1 tsp Italian seasoning
    28 oz can tomatoe sauce
    Garnish with oil, parmesan cheese, and parsley.
    San Merzano Tomatoes 28 oz cans (the smaller ones taste better) ~ Michael Berzatto (The Bear 2022 TV series)

    Ok silly question with the meat and sauce in together what sort of heat do i leave it on the hob at...i know she said 1.5 hours but is that a medium heat...a low heat? At the end she chucks in some cheese i assume parmesan but also what was the other thing...the green? spring onion or chive?

    I love this hearty recipe. But, what if you don't use alcohol, what could I substitute for the red wine?

      the alcohol in the red wine evaporates. you can leave it out

      You can't really substitute red wine as its a fundemenal flavour for dishes like this, it really creates the base flavour for the sauce when everything else is added, wouldn't be the same without it...but, the alcohol burns off completely during cooking so after a few hours of slow cooking its neutral of alcohol but retains all the flavour :)

      @@tomelsb3695 I have problem using alcohol not because of the actual alcohol itself but the cost I need to pay for a bottle of wine. Any thing else I can replace the wine with?

      @@chantakzee with the oils they sell white cooking wine red cooking wine sherry wine masala wine and only $4 top per bottle (but sometimes bigger bottles of wine are about same price but don't last as long after opened like the cooking wines do

    Looks fucking delicious but i can tell you not a chef when you didnt reduce your wine or toss your pan. Apart from me being as harsh as possibly could be. This is the best ragu on you tube. I'm not kidding your ragu is better than all the celebrity chefs and a lot of Italians

      A celebrity chef is just a chef, it's not like sports where the best become the most famous. Gordon Ramsey is by no means the best chef in the world, he can't be because taste is entirely subjective, he just happens to be one of the more charismatic chefs.
