- This Braised Beef & Pork Ragu Tagliatelle is one of the tastiest ragu you will taste!
The meat is first oven roasted, to extract all those beautiful roast meat flavours. It’s then slowly braised with tomato puree and vegetables for 2 and a half hours.
Some would also call it Bolognese sauce as it works well on any pasta such as tubes or wide flat ones, like pappardelle.
Rather than using minced meat, the meat is pulled for that beautiful, shredded beef and pork fibre.
The sauce is made with red wine, tomato puree, thyme, garlic and vegetables. The pasta is then finished to cook in the pan, absorbing the ragu sauce for a beautiful, tasty result.
Ragu is convenient as it freezes well. I like to divide it in zip lock bags so you have ready made ragu anytime you need it. Why not double the recipe! What a work of art...You imagined this one up...as Chuck roasts get tender when slow braising in oven cooked in liquid...lots if onion and salt and pepper...Also a bit of beef stock or just water to give sauce room to move...and dont forget dash of sugar for balance

Thank you Chef. Beautiful recipe with well detailed instructions. I picked up a couple of your tips there about giving the pasta and ragu a couple of minutes to meld together and shredding the meats into the sauce. I really like the latter idea as we don't actually serve this type of meal in multiple courses. Thanks for thinking of us going into fall/winter.

Fantastic. I made similar using ox cheek and oxtail (couldn’t get the pork) and it was brilliant…a complete revelation. Thank you.
i made this with a couple tweaks:
1. No wine as I am not drinking right now and it would be best for me to avoid, so did all chicken stock instead
2. went with beef short rib as there was no pork shoulder, in hind sight should have just went with chuck roast as i had to spend some time skimming the fat off the top of the sauce, but not your fault, it is mine!
overall i would say its the best meat sauce i have made and ive been trying to make an awesome one for a long time (sunday gravies, etc.). This is a real recipe youd get in italy as the tomato is there but the focus is the meat, passata makes a HUGE difference over canned tomatoes IMO. Awesome recipe and thank you, this is going to be in my arsenal moving forward!!!!

Just cooked this yesterday and I think it’s one of the best things I’ve ever eaten. I’ve always loved a Bolognese type dish but this is next level deliciousness! I could only find Beef brisket in the supermarket which worked well aswell, but thank you for bringing this recipe into my life 🤣🤣🤣

Joel my good Aussie friend, outstanding recipe & don't change a thing, I really like the pasta noodles thicker like this with this recipe. Oh boy, Whiskey knew what was cooking & in early for his cameo with this recipe he made 3 appearances, lol, I think I would have mashed turnips & seasoned green beans on the side with this meal, plus a cold glass of sweet iced tea with a slice or two of lemon in it, & some Italian bread slices with real butter spread on, I'm set for a great supper.
Sounds great Steve, although I would replace the iced tea with a full bodied red wine. Whiskey is in the same spot right now wondering what my wife is up to in the kitchen 😂🐕
