Look no further! How to cook Authentic Ragù Alla Bolognese, with Tagliatelle

  • Bolognese sauce, or Ragu Alla Bolognese, is an Italian meat-based sauce for pasta which originated in Bologna in Northern Italy-also known as Bolognese Ragu. This version is the closest thing to the authentic recipe; however, there can still be many variations. I don't think there is an authentic version, but this is so close! Some use butter, others olive oil. For Ragu, I prefer olive oil. Some also add cream at the end; I don't think it needs it; the milk does the job.
    The secret, of course, is in the sauce; it has to be cooked for a long time; the longer, the better. Cooking it longer breaks down the meat fibres, which thickens and intensifies the sauce. In the old days, they used to cook this for 5 to 6 hours as meat was very tough. Today 2 to 3 hours is plenty. Traditionally the meat is not minced but chopped using a knife. If you don't have pancetta, you could use pork mince also.
    Some parts of Italy may also use butter instead of olive oil; I prefer virgin olive oil. Milk is also added towards the end of the cooking process to dampen the acidy of the tomato. The cream is an optional extra I usually use for dryer-style eggless pasta.
    Spaghetti Bolognese sounds like an authentic Italian dish, but I've never seen it in Bologna. You will never find it in Italy, or at least I certainly haven't. You will find it in Europe, the US, Australia, and other countries. It's also known as spag bowl, a terrible name, so please don't ever use the term unless you're a young teenager!

    This is how the things should be done😋 And the trick with adding the pasta undercooked and cooking it to "al dente" phase with the sauce is essential, and most of the people don't know about it. It really riches the taste and completely changes the game! 🙌🏻😁

    Wow, glad to watch it within 30 minutes of being posted! Actually I watched it twice :) The Timelapse is fantastic. The recipe is delectable as usual, but the most important thing is I keep smiling while watching the videos - because of Whiskey and the spinning vegetables!

    Excellent, another Chef Joel meal on the menu at home! I have tried the spin the onion trick at home to peel it, never works. Maybe its Australian onions that make the difference! Thanks again, really appreciate all the work you put into the videos and recipes

    Very nice video. I used ground beef, pork, and veal, ( never heard of using pancetta). I also constantly add water versus stock since I cook sauce a minimum 3 to 4 hrs uncovered. Otherwise very authentic, well done !

    I always like to learn the authentic way of making recipes because each way of any recipe has a great story behind it, and I think that's more delicious Bolognese Sauce,

    This one is very similar to my recipe. I always start with the trinity...onion, carrot, and celery.
    It's the king of Bolognese!

    Similar to how I do mine, I use a mix of pork and beef (veal if I can get it) mince and will only sometimes use pancetta. Bit of wine, my milk at the end, San Marzano tomatoes if I can get them. One of my favourite meals.

    This is close to the Marcella Hazan bolognese. I use half beef half pork, roughly one pound of each. Hazans did not use pancetta, but wow, I'm thinking it's going to be delicious with it. Will definitely be making it with pancetta.
