In this series Jamie's mentor and friend Gennaro cooks some gorgeous Italian dishes from the town on the Amalfi Coast where he was born. In this episode he shows you how to cook his family's Ragu.

-olive oil
-500g beef brisket
-500g spare ribs
-200g italian pork sausage
salt and pepper
2 bay leaves - sear meet
1 chopped onion add to meat
add red wine to meat, let it evaporate
onion sweat not burn
3 tins of tomato
still on high flame
1/2 glass of red wine mix with 2 tbsp tomato paste, dissolve it and add
add 2-3 cans of water to sauce
simmer
add a large bunch of basil
lower the heat let it simmer for two hours
use tagliatelle pasta
mix in the cooked pasta to sauce
add parmesan
add olive oil

This man has actually changed me. Of all the amazing chefs and videos we get to watch on youtube, Gennaro's infectious personality has meant he is the only one who got me to stop with the easy junk food route and start cooking some of these delicious recipes. It does so much for your health and your mental wellbeing when you can cook something that you or your loved one can enjoy.

I literally wanted to comment the same thing. He made me cry at that exact moment. I'm Italian too, living abroad, and mostly every Sunday my grandmother used to make ragù, the one that nobody can replicate, not even by knowing the recipe, it's all about the love and passion that you share while cooking. Hi my name is Jimmie Gambino. I was born in Corleone, Sicily I do remember my Grandmother making this wonderful and soso delicious recipe. O my god do I remember. My Mama and Grandmother would teach me how to cook, I spent more time in the kitchen then playing outside. Gennaro cook's the same meals like my Mama. I cook a lot at home my next door neighbors would smell the food coming out of my house.... I invited all my neighbors for Dinner. My god they fell in love with my Lasagna, Ossobuco, Carbonana, and my Family Rago. I would a lot for my neighborhood did not charge. I truly love cooking at home. I have all my Grandmother's recipes. O how I miss her so.
We do the same things in Greece my yiayia would make lovely Spanakopita and Gouvetsi and on the weekends us and the entire family would eat and watch the sunset over the Wonderful Coast its a shame she passed on.

Your small hometown is probably the most famous town in Sicily because of these films alone. If you haven't seen those films, watch them, they're great.
It's not about the film, Corleone is where the "Cosa Nostra" born, Salvatore (Totò) Riina was born in Corleone, and he was one of the, if not THE ONE, most cruel Godfather of Cosa Nostra. It's a Real thing, not just a film :)

Every week I cook a great pot of ragu, always different, always delicious. The main ingredient is LOVE. One cannot cook without love, it's essential to make people happy with your cooking, that's what makes me happy in return. It's about love, sharing, and family traditions. This is why I like Gennaro.

My wife made this dish and it was absolutely great!! One huge problem was that we loved it so much that it was gone with a quickness!! If you haven't tried this recipe I definitely recommend it!! He did it very quickly and made it look so simple I think because he has done it countless times, but when my wife cooked this, it took quite a bit of time and took multiple steps to get it all done. Gennaro is a culinary genius, though. I cannot deny that.
Bravo Gennaro! I have made a genuine Italian ragu at least once a fortnight for over 40 years. I adore it. Of all the thousands of recipes I've read and seen over the decades, yours is the only one that has ever brought tears to my eyes. Your memories of your childhood in Italy truly moved me, as they did you.

I just made this recipe 2 days ago. AMAZING!!! I just used the beef ribs and a bit of eye round beef that we had. It took significantly longer to cook than 2 hours, however.... omg. The meat was SO tender, juicy fell off the bones...this sauce was absolutely fantastic. And so economical because there was so much leftover we have eaten for four meals already. Delicious! Thank you, Gennaro!

Gosh, I hate to admit it, but I was getting a little frog in my throat when I heard his mum made it and then he said ,"Do you want some?". And I don't know about you, but he looks a bit like a holy man if you look deep inside his eyes after that, but in food. It is almost comforting and heartwarming to look into.

So Gennaro, Jamie, I made this dish last weekend- I have been deep into traditional italian cooking for many years. The only modifications I did were that I used Chianti wine, san marzano tomatoes, bucatini noodles and dried oregano (taken from the stem) in the sauce. Just amazing- really worth making. That slow cooking really pays off with all the meat falling apart.
