Chicken Chow Mein with fried noodles

- Delicious Chinese stir fried noodle recipe that's quick to make. Chow Mein basically means stir fried noodles. This version fries the noodle a little, bringing out the nutty flavour while adding a little crispiness. When buying Chinese egg noodles, look for the Hong Kong style or the ones with Chow mein on the packet.
It’s a fairly simple recipe, in fact I can prepare it and cook it faster, than calling for Chinese food delivery. Having a good wok with a powerful jet does help, but you can certainly do it in a frying pan at home. The wok gives you that wok hei, some also call it breath of the dragon or wok breath. That’s what gives your food that smoky or charred aroma flavour you get in real Asian cooking. You don’t get the same result in a pan, but the pan is much healthier, so it’s a good trade off. I have my wok set up outside then bring the food inside, it drives the neighbours crazy with that beautiful outdoor cooking smell.
I used broccolini for this recipe, I like the green colours mixed with the red bell pepper, but you can use other vegetables such as Chinese cabbage, bok choi etc.

No bell pepper in this dish, please. It would charge the flavour. It's exactly like you are putting bell pepper in Spaghetti.

Me: I would first caramelize the onions, then fry some scrambled eggs before adding the noodles. You don't need to move the noodles too much to make it crispy. Then you can add the veggies and the meat except for the spring onion cones and bean sprouts. These can be added just 10-15 seconds before turning off the fire. This way the noodles will be less greasy and the veggies will taste fresher.

You can definitely use Extra virgin olive oil in a frying pan on domestic stove but in a very hot wok, best to use a vegetable oil.

Joel my good Aussie friend, great recipe I like those little baby corn cobs in there also, Asian cooking is not in my wheel house when cooking,but I really like to eat it. I can't get some ingredients here, & I have 2 Chinese restaurants that are within 15 minutes of me & both make great food at reasonable prices & less costly than I can make it at home. I didn't know Whiskey was part asian breed of a collie, lol, he seemed to be willing to eat some,lol, cheers mate.
Steve, sometimes when I don't feel like cooking and that's not often, I pick up the phone for Asian food, the thought of waiting for it to be delivered which is usually 30-40 minutes makes me put the phone down again. I can prep and cook this in 20 minutes, plus the caveman in me enjoys to play with wok fire. 👍

Looks delish. What kind of burner did you use. Normal stove tops do not have a high temperature required for this type of cooking. And where did you get it from??
I can taste it with my eyes, Joel! However, as a kid my mom's version of home made chow mein...the canned La Choy made it home from the grocery store...another childhood trial by terror! 😆
