    One step that can be done to reduce to clumping and stickiness of the noodles after cooling them down after blanching is to thoroughly rinse the noodles in cold water (while gently rubbing them to get the excess starches off the surface of the noodles) immediately after blanching. You can then strain the noodles and then either dry them in the refrigerator or with an electric fan. It also helps to drizzle some oil on the noodles and mix it all together beforehand to reduce the sticking, which also allows for easier stir-frying later on.

    Okay THIS is the perfect recipe for chow mein, THIS is what I've been looking for because every chow mein recipe ive watched has never explained what makes it "chow mein", but finally Marion explained that its all in the texture of the noodles - and THIS is how you achieve it.

      Noodles can be steamed directly in the pan, which can avoid noodles breaking. It is recommended that you go to a Chinese supermarket to buy a thirteen-spice seasoning, which can be added for cooking.

    It's amazing how the whole world misspells Chow (fried) Mien (noodles), that it has become an acceptable error name :) We know you don't mean it and are doing this to help the rest of the world identify the dish lol. Really love your sparkly personality, Marion, and your dishes are divine! 🩷

    We had this for dinner last night. The noodles are amazing. Nice and chewy! We loved it. I would probably put half as much pepper in the marinade though as it was very peppery. Still very good though!

    Some 5 minutes ago, I explained to friends how not every expert is therefore able to be a good teacher.
    That's why I'm subscribed to your channel, Marion!
    But as of 19th of aug, 2022, there is no discount code anymore for that new book. Just wanted to buy that book for my sister in law in the US.

    Hi Marion, in my country the chinese farmers market sell roasted pork (it’s red on the outside). The restaurants usually use that in chow mein. Can I substitute the chicken with that?

    Hi Marion, I love your recipes!! However, I always have to omit the oyster sauce when it’s called for as we can’t consume shellfish for religious reasons. What is a good alternative for the oyster sauce??

      There’s a vegetarian version of oyster sauce called “mushroom oyster sauce”. You’ll need to check particular brands to make sure there are no allergens or oyster extract used. But typically, it’s made from mushrooms and not oysters. You can find it near the oyster sauce in most Asian supermarket. Hope this helps! -Team Marion's Kitchen

    Can the noodles be boiled a few hours ahead of time?

    After getting my degree in RUclips cooking I have learned that most people will let you know ahead of time the ingrediencies and measurements used for a dish described prior to the actual cooking. Chicken, ginger, carrots, and cabbage quantizes would be nice. Love the idea but lacking in percentages to make sure that dish isn't overwhelming with any certain ingredient. I'm sure the answer is going to be....buy my cook book.
