I’d be tempted to do the prawns first, then remove them before adding the other ingredients (then put the prawns back it at the end). Love the idea of the chilli crisps at the end - will definitely try that. Thanks.

I made 2 batches of chili crisp over Christmas and I have been putting it on EVERYTHING. Obsessed 🤩 switched up the second batch to have more dried garlic instead of onion and more cardamom instead of star anise because I ran out. I think I prefer the second batch!

Could you walk us through your kitchen and let us know about some less common ingredients (in the West) and what they’re used for? Galangal is a great example of a less common ingredient you’ve described and used (can’t find it here in DC 😂).

All of the stuff you use was already in my pantry but not the crispy chili oil. That is not going on my dinner. Spicy is not my friend but it is my husbands friend so I will get him some. We spend more at one of our Asian supermarkets than we do at Woolies. Two nights we have Japanese, some nights are Chinese or Thai. I am an expert at making them all healthy now. We just started learning and cooking together and of course your recipes are used too. Thank you. 🌸
