This recipe looks delicious. One thing, though - if you put the prawns in the really hot wok first, then the flavourings, then the veggies, won’t the prawns be overcooked by the time everything is done? I’d be tempted to do the prawns first, then remove them before adding the other ingredients (then put the prawns back it at the end). Love the idea of the chilli crisps at the end - will definitely try that. Thanks.

That's what I was thinking but Marion cooks seafood slot and her mum is a professional chef, I trust she knows what she's doing but its worth keeping in mind when cooking similar prawn recipes.

. Since I started watching your channel,my pantry is filling up with various east asian sauces something I am enjoying cooking atleast once a week. At times I take inspiration from your recipes and then try out my own way especially because I can't handle too spicy 🔥.

Pretty sure 'pants down' is Australian 😂 I have never heard of it here in the US
Love, love, love your videos. Thank you for making things do-able for those of us have not grown up with these amazing recipes and techniques.

@@gemmah-c6897 Definitely Australian and also in New Zealand. It’s a thing that’s decades old and often used in other contexts as per Marion in this video.

It's also known in South Africa, so maybe originally British?

There is a similar phrase here in the US, but it’s not the same meaning. Getting caught with your pants down means getting caught unawares or unprepared. Lol.

I made 2 batches of chili crisp over Christmas and I have been putting it on EVERYTHING. Obsessed 🤩 switched up the second batch to have more dried garlic instead of onion and more cardamom instead of star anise because I ran out. I think I prefer the second batch!

Now that we are calendar year 3 into a pandemic and you’re still giving us amazing recipes, I want to dive even deeper into Southeast Asian and Chinese ingredients. Could you walk us through your kitchen and let us know about some less common ingredients (in the West) and what they’re used for? Galangal is a great example of a less common ingredient you’ve described and used (can’t find it here in DC 😂).

Idk about anywhere else in the world. But here in San Diego, California, I’ve always heard the term pants down referred to as you catch someone off guard (catch them with their pants down.)
But I like that for a match of pool lol.

Nicely done. It took me years to develop this recipe by taste. The only differences - I put a little white pepper in mine and I fry the noodles so they are a little crispy and pour the rest on the top, which I believe is more Hong Kong style. Love your videos and your dedication to teaching us to make great food!

  • @karenstrong8887

All of the stuff you use was already in my pantry but not the crispy chili oil. That is not going on my dinner. Spicy is not my friend but it is my husbands friend so I will get him some.
We spend more at one of our Asian supermarkets than we do at Woolies. Two nights we have Japanese, some nights are Chinese or Thai. I am an expert at making them all healthy now. We just started learning and cooking together and of course your recipes are used too. Thank you. 🌸
