I really love how you offer substitutions that you'd find in a western kitchen.
It makes it so much easier to cook something when I want to, rather than having to plan the cook!

Just tried your recipe for hoisin chicken stir fry and it was amazing! The chicken was so tender, I marinated the chicken for about an hour so it was very tasty. Thanks for all the recipes ❤

I have been soaking diced ginger into maple syrup and about to create new tasty soy sauce. As I simmer (30~45 minutes) with soy sauce, gingerole and shogaol (from ginger root) increases and make really good tasty soy sauce that gives sweetness and bit of ginger kick (depends how many grams of ginger got cooked). Because of new sweet soy sauce with little bit of ginger kick, you don't have to use both soy sauce & sugar. And you can use that gingery syrup (ginger + maple syrup mixture) as sugar substitute for Chinese Cuisines. Really amazing!!!
After I watched your "Shanghai Noodle" video, I purchased 老抽王 (dark soy sauce) from Chinese Market and noodle dishes are looking much much better. Thank you so much.

Instead of "rat", maybe you could use "mouse" instead as in Thailand, the two words are interchangeable. IT sounds so much better.
