- Well hello dear friends and family! Here's another motivational cook with me video for you. I am so happy to know that these videos have been helpful to a lot of people. A lot goes into making such videos. Thanks for making it worth it.
Jerk chicken recipe:
About 9lb chicken leg quaters
⅓ cup Walkerswood jerk marinade
½ of a medium sized onion
2 thumb size pieces of fresh ginger
3 scallion stalks
About 3 sprigs of thyme
½ crushed black pepper (pimento is preferrable)
1 teaspoon allspice
Salt to taste
Rice and Peas Recipe:
2 cups jasmine rice
1 hot pepper for flavour and heat
1 cup water
4 pimento berries
1 sprig of thyme
1 stalk scallion
1 14 oz can pigeon peas
2 cloves of garlic, crushed
1 13.5 oz can unsweetend coconut milk
Salt to taste

I rarely comment on videos, but I absolutely love this!!! I was so excited to get a notification and waited patiently to get out of class and watch. I am a college student and your meal prep videos have inspired me to keep up with my Ghanaian culture through food. Because of you, I have been meal prepping for about a month and you have made it so easy for me since I live at school. I actually had your baked jollof for lunch today and it was amazing! Hey sissy, I love your channel, I have always meal prepped because I wanted my family to eat good. Some people may consider me bias/sexist, but many American women cannot cook properly for their children and it saddens me. I wish schools would initiate your/American cooking classes in school. Our children are growing up on processed junk. Thank you so much for allowing us in your kitchen. Love Ruby.

Girly you have a good life. Take some time to enjoy it and your children. They grow up so fast and time goes fast. I enjoy watching your shows. I know you work too. That’s good because you’re still young but the main thing is to enjoy it as you go. You’ll understand what I’m saying by the time you’re in your 50’s. Then in your 60’s you’ll definitely look for the time. By 70’s you’ll have beautiful memories hopefully of your children when you’re cooking the way you are and sharing it with your grand children. I’m saying all this to say its hard work but its not if you take time to enjoy it. I know your husband thank God for a beautiful wife and mother of his children. Don’t forget to grab a little me time from time to time. My oldest daughter and her husband are both 49 this year. My oldest gran is in 12th grade. Her sister is one year behind her. My youngest daughter and her husband are both 33. They have a 12 year old and a 15 year old. All the children are getting older so fast they’re amazed how fast time is going.

Oh my sister I forgot to thank you on your last meal prep video containing the ham hocks. Boy I had to travel to the USA walmart from Canada to go and get this ham hock. And boy is it good. I added the ham hock to my palm nut soup. It was a hit in my house. Thank you
