Yes, Walker's Wood jerk seasoning is a good substitute when can't make by scratch. Browning sauce on point. One suggestion, if I may, you can soak the peas overnight, it saves time when you ready to cook. I had the pleasure of visiting Ghana years ago and I was embraced like family. Some Ghanaians told me that Ghana is sometimes referenced as little Jamaica... so true. Keep the meals coming. One love.

Growing up this was what a lot of Caribbean had, rice and peas with chicken I can smell it now, so glad you used the fresh herbs my mother would also use fresh c/milk which gave the rice it's beautiful colour.

Everything looked amazing. My mom used lentils sometimes if she didn’t want to use beans and it works brilliantly as well. Please try breyani with mutton (or biryani) as well. We eat this in South Africa 🇿🇦

2 hours is long time,it easiest when u put the bean in the water bring it to a boil and turn off the flame,hot water soften things quicker.You could do this one hour before u start cooking.Jus a tip from Jamaica.

Hi Beth, I will do well to start adding information about the cookware. The colorful pots with white inner paint are cast enamel cookware. I mostly buy my cookware from Macy’s.
We call dem dutchie or dutch pot in Jamaica 🇯🇲 otherwise know as dutch ovens. Made out of cast iron. Very good for long slow cooking! Well can be used for most dishes and baking too.
Yeah. I am Ghanaian and normally cook with black eyed peas. I will need to make a Caribbean infusion with that. But yes I love pigeon peas in my rice and peas too. 👌🏾😋
Next time you're cooking rice n peas, please pressure the peas for about 20-30 minutes and they will be soft. No need to be cooking peas for 2 hrs. Respectfullyy, a Jamaican. There are more things for u to learn but let me watch n comment again.

Walkerswood is awesome. Next time add some brandy and scotch bonnet pepper to the greens. The beans soak it over night.

Kwankyewaa's Kitchen you can omit the pepper but brandy bring about the flavour and grill it on hickory wood fire. Good with pork as well
