Authentic Ghanaian Waakye feast - Detailed Waakye Stew & more - Cook with Me - Ghana street food

    INGREDIENTS - for Waakye stew:
    * 4 pounds total of assorted meats (Boneless beef, oxtail, tripe, cow Hyde, cow foot, goat meat) cow Hyde and foot are optional, but if used, must be parboiled for 30 minutes.
    * 2 medium red snapper cleaned and cut to manageable sizes
    * 5 medium tomatoes
    * four large onions.
    * 1 sprig fresh rosemary
    * 3 habanero chilis
    * 2 thumb size ginger peeled
    * 10 cloves garlic
    * 1 tsp dry red chili flakes
    * 1 Tbsp curry powder
    * 1 Tbsp all purpose seasoning
    * 1 tsp aniseed
    * 1/2 tsp coriander seeds and dry rosemary
    * 1/2 tsp each crushed black pepper and white pepper corns
    * 4 cups oil
    * 1/6 Tsp of baking soda
    * 2 cups tomato paste
    * salt to taste
    STEPS:
    Combine all meats in a pot and add smoothly blended combinations of (half onion, coriander seed, dry Rose Mary, black and white pepper, aniseed, half Tbsp of curry, half table of all purpose seasoning, dry red chili flakes, garlic, and one thumb size ginger,).
    Reserve 2 tablespoons of blend to marinate fish. Rinse blender with half cup of water and add to meat and cook for 35 minutes or until tender.
    Blend rest of ginger and onions to begin base of Waakye stew. Also remove seeds of tomatoes and cook till tender and reduced and then blend to achieve tomato sauce consistency.
    When meats are tender, separate boneless beef, goat, and oxtail, and fry till brown and caramelized. Set aside. Dredge marinated fish in flour and fry till crispy, and set aside.
    In the same oil, on medium heat, fresh rosemary, rest of curry powder, and 2 remaining habanero chilis. Fry for 1 minutes, and add tomato paste stirring constantly, and fry till dark burgundy color is reached, which may take 10 minutes. Then add onion and ginger blend, Stir to combine, and place lid on pot, and fry for 15 minutes on medium heat, till oil begins resurfacing.
    Add tomato sauce and stir to combine. Cook five minutes on low heat with lid on. Add tripe, cow foot, Hyde, and broth to the pot and stir. Cook for 2 minutes and then add fried meats and stir. Cook on low heat for 10 minutes with lid on and till oil resurfaces. Turn heat off and allow to cool and skim of oil. Add hard boiled eggs, and fried fish prior to serving.

    This warms my heart. The part of Lagos i grew up in through the 80s, we had a lot of Ghanaian neigbours, so i grew up eating lots of waakye, sweet breads and buns. The taste is out of this world.

    So many of these ingredients remind me of my Jamaican kitchen...the oxtail, the goat meat, tripe, cow skin, the snapper, fried plantain(we dont add any seasoning to the plantain), but the meats are always prepared as separate dishes, never combined. And that drink reminds me of our sorrel. Thank you for this video. Everything is beautiful, and the kitchen so clean and well organised. You are really gifted.

    Oh I want to try this recipe i think i will be able to get 99% of all ingredients, here in Jamaica we use all these spices so i should be able to create this stew by carefully following your instructions. My taste buds should be amazed.

      People actually eat this for breakfast in Ghana which around 9am or 10 am. You don't feel hungry when you eat waakye in the morning.i personally get to drink lots of water all day till around 6 then i can have something light like Rice porridge or some payed since my mum sells fruits ( we always have fruits at home) it's very healthy heavy meal.

    I like watching nigella and it’s because she uses language exquisitely and you do too which is a bonus for me since I like food and like listening to stories so I appreciate one with good descriptive ability that takes you on a journey and a pleasant one at that. Bon appetite!

    This lady's cooking is amazing! I stumbled on this channel and I love her style - takes me back to growing up in Ghana. If you cook for weddings, I'll definitely love to book your services on my big day. Super awesome. I watched some of your other videos and I loved them all.
