      This is not kachapuri though its Adjarian kachapuri big difference, regular kachapuri is more like a stuffed flatbread with mainly cheese but there are other options like potato or bean filling

    The best part of Khachapuri is there are so many regional varieties. The recipe shown is Agarian in the west of Georgia, and there's so many versions

    I'm Georgian and I could not have been happier. But there's one thing: we do not stuff the crust with cheese. It's crispy on the outside and fluffy inside bread and we dip it into cheese. Also it requires just the egg yolk not the whole egg. But omg, actually seeing this on this Chanel is freaking awesome! Love you Chef John

    Chef John, I just wanted to say. I have been in the restaurant industry for some 30 years and I truly enjoy your videos and your format. You never show the traditional "chef ego" nor do you talk down to anyone. I cant thank you enough for being so encouraging and enjoyable to watch. Whenever I find someone that is learning how to cook, you are one of the chef's channels that I recommend.

      ncuXoguHo4ka Yes, I did. Mine came out slightly darker than Chef John’s did, but mostly that was due to my leaving them in there a little too long. I was trying to get the eggs just right. Use Grass-fed butter if you’ve got it. Tasted much better.

    This is my husband's favourite dish from my home country, but it is very hard to find the right kind of cheese in Canada. I will definitely try your recipe.     I went to this country last december and it was so great and the most remarkable food was khachapuri, it tasted so dang good! like the cheese mixes well with the bread and the egg gives a rich flavor to it!

      @@LifesPeachy321 Great! I've made it a lot since then and have introduced some other friends to this type of khachapuri and they've all really liked it.
      Sometimes that much feta can make it a bit too strong on that taste for me, so I don't use quite half feta anymore. Also I was never really a "runny egg on top of something" person but I've made it without a few times, and really the egg (and butter) elevate it to another level. It really does mix in well and make almost a butter cheese sauce.

      See my comment. If you like kitchen experiments, kefir has yeast, is from the region and can be used to make bread. Sugar will feed water kefir, milk powder will feed milk kefir/whey. Really a fun experiment. I have the grains, so it was natural.

    For some reason I would never think that I would see a Georgian dish on this channel, so thank you for this. You got the general idea on point for the first try, for the future I would suggest a few things
    1. It's made from really simple cheeses; I don't think you would have a problem doing it from scratch. Mix of "Imeruli" and "Sulguni(is made from Imeruli)"
    2. Baked dough tastes better when it's crusty from the outside, difference in textures is yummy.
    3. The bottom part should be left for last, you eat the sides first by ripping off bit by bit.
    4. I noticed that you had some moisture left on the bottom when you picked up the Khachapuri, the bottom part shouldn't be soggy and should be crunchy as well(use pizza stone and high temperature, small chars are good too)
    5. The inside should be a bit wider, with more sauce! :D
    6. Lately in Georgia people prefer to take out the dough from underneath the walls right before it's done so you are left with just crunchy sidewalls, thus a lot less stress on the stomach :D
    7. And personally I put 1 whole egg and 1 extra yolk(second white makes sauce really runny).
    8. No need to cook the whites completely, you're left with white pieces, which don't feel right in the sauce so take the Khachapuri out right before they turn white in colour and they will finish cooking when you mix the sauce(like carbonara)
    I wish you the best times with Adjarian Khachapuri!!! Definitely consider visiting Georgia, I'm 100% sure you'll enjoy our unique cuisine(most of the dishes are stupidly simple and still strangely really amazing), and everything else that goes with it

    I shared this video with my brothers last week...thinking I would inspire them to make it. Instead, my brother Mark discovered Skalka Cafe in Seattle (it's on the corner of Western Ave and Spring St.), and they specialize in these! I got to eat one on Sunday, and I have to say, these are an absolutely incredible breakfast! (and lunch, and dinner...seriously, one of these and you won't be hungry the rest of the day!) Skalka had "Doubles" available, one side had the egg...the other had either beans with bacon or beef stroganoff. Both were delicious! I know it's pretty authentic too...a guy named "Vladimir" came in to pick up an order wearing an Adidas track suit!

    While in Moscow visiting friends, we went to a Georgian restaurant - it was amazing!!! We also found a burger stand serving Georgian style burgers, we still talk about all the Georgian food we had two summers ago! I really want to go to Georgia 🇬🇪 now!

    To be precise, this is Adjaruli Khachapuri which belongs to a Adjara region, south-west of Georgia, close to Turkey.
    They have another one called Imeruli Khachapuri, which belongs to Imereti region, west of Georgia, also very good, probably even more balanced on ingredients and even-baked-ness!
    But the king of them all, is Kubdari, which belongs to northern part of Georgia, Svaneti region. I think the real recipe is kept as a secret there, because Kubdari made in other parts of Georgia tastes terrible! Check that out if you visit Svaneti region.

I searched Adjaruli and Imeruli on RUclips and found a channel, Georgian Cooking with Nino, where she has English language video recipes for those, and a couple other different types. I made the Adjaruli Kachapuri last night from this video, and it was amazing lol. And I plan on trying out the other varieties from those videos when I make it again! :)

      Funny fact: this pastry comes from Adjara region of Georgia, where people are very slim. I felt like a hippo there, and I am not even overweight.

      Just make with gluten free flour, the recipes where it doesnt have to rise much turn out the best in my experience

      @@AmandaFromWisconsin, hachapuri uses a special kind of Georgian cheese, that has a distinct flavour and it's called Sulguni. You can't compare Mozzarella to Sulguni, they are complitely different in terms of texture and taste.

      Yeah, fact there's at least 10$ of cheese in two small breads kinda tell you why it's not popular in the USA.
      With those amount of these types of cheese, a bread like this would cost as much as a 12 inches pizza.

    I'm taking Russian in college, and one time, I went to a Russian / central Asian restaurant like 50 miles away out in the middle of nowhere with classmates and had this. It was one of the best things I've ever had.

    Thanks for sharing one of the delicious Georgian dishes recipes. Georgian cuisine is truly rich. It can satisfy all the people with any dietary preference or restriction: keto, paleo, vegan, gluten and lactose intolerance, you can find tasty food for everybody. There are many healthy and ancient recipes too :) Your version of this recipe is very healful for Georgian emigrants too. (Substituting Georgian cheese is really difficult).
