    📝 Ingredients:
    • 250g (9 oz) penne pasta, cooked as per instructions
    • 250g (9 oz) halloumi, cut into cubes
    • 1 large red onion, chopped
    • 4 garlic cloves, minced
    • 1 tsp salt
    • 1 tsp pepper
    • 1 tsp chili flakes
    • 1 large zucchini, chopped
    • 200g (7 oz) baby tomatoes, halved
    • 1 cup Kalamata olives, pitted
    • Fresh parsley, chopped (for garnish)
    • Olive oil (for cooking)
    🍽️ Instructions:
    1. Cook the Pasta:
    Prepare 250g of penne pasta according to the package instructions. Once cooked, reserve some of the pasta water, drain, and set the pasta aside.
    2. Cook the Halloumi:
    In a large skillet, heat a drizzle of olive oil over medium heat. Add the 250g of cubed halloumi and cook until golden brown on all sides, about 4-5 minutes. Remove the cooked halloumi from the skillet and set aside.
    3. Sauté the Aromatics:
    In the same skillet, add a bit more olive oil and sauté the chopped red onion for 2-3 minutes until softened. Add 4 minced garlic cloves, 1 tsp salt, 1 tsp pepper, and 1 tsp chili flakes. Stir for another minute until fragrant.
    4. Add Vegetables:
    Toss in the chopped zucchini and halved baby tomatoes. Cook for 4-5 minutes until the zucchini softens slightly and the tomatoes begin to release their juices.
    5. Combine the Ingredients:
    Add the cooked halloumi cubes back into the skillet with the sautéed veggies. Stir in the cooked penne pasta and some of the reserved pasta water to create a light sauce. Simmer everything together for 2-3 minutes, allowing the flavors to meld.
    6. Garnish and Serve:
    Top the dish with freshly chopped parsley and serve warm.
