Lets face it. A lot of us would never have expanded out cooking without Jamie. I know this is a simple recipe, but cooking with halloumni cheese in this way was never something i would've considered. His use of fresh ingrediants, used in a speedy manner.......the man is a national treasure. Love from an Irish fan.
I have done this with halloumi (as in the video), with feta & parsley and with buffalo mozzarella & basil (added the cheese and herbs just before serving, after taking the pan off the heat + more for garnish). I think I actually prefer the feta and mozzarella versions, although the halloumi one is good too. Was going to add some kalamata olives to the feta version, but didn't think it needed them. Very quick and easy 20 minute dinner, whatever version you do. Going to try it with parmesan or pecorino next...
Jamie you're the man! I'm following you since my teenagehood and I have to say you're maybe the only northern chef that loved and understood the Mediterranean cuisine that much. Love from Greece sir!
Orzo is wonderful. I live in a rural Canadian village and it’s readily available. It’s stuff like halumi cheese that we have trouble getting unless we go to a bigger centre.
Though Greek I 've never had kritharaki (orzo)cooked like that but I will certainly try it. You made my mouth water despite just having had lunch. Thank you
Being Greek Cypriot, me & my non Cypriot wife still have to grate our separate cheeses for pasta dishes as i will only have Halloumi and she doesn't like it 😂
Nice classic! Actually the traditional Orzo ("Kritharaki") in Greece is made with flour & milk instead of water. In some areas there is sour milk used, even eggs! It was a method to conserve those ingredients throughout the year.
@@oksalbright No idea unfortunately, my grandma used to make something similar but that time I was way too young to appreciate the value of such a recipe... Yes sour milk is close to buttermilk. However now I'm thinking, maybe they used normal whole milk and flour and then let the dough to ferment a bit and get that sourness... Let's try to apply plain pasta recipe and replace the water with milk and then see... 🙂
Are you sure your grandma made orzo? I'm asking because the description and the ingredients you've given point to trahana (an entirely different traditional Greek pasta), not orzo. Trahana is made with milk and eggs.

OMG. I can't wait to try this! Anything more than 5 ingredients and I won't cook it (and I'm someone who loves to cook so much that I went to culinary school briefly many years ago). But I just don't have the time or energy for complicated recipes. Plus, groceries are SO EXPENSIVE these days!🙄 I'm learning to do more with less. Thanks for the inspiration Jamie!

The book of recipes looks so good. I’m hoping those recipes fit in well with the Mediterranean diet my doctor has me on to lose weight before surgery because I want to try those recipes.
I made this with 2 tins of tomatoes and Risoni instead of Orzo… not sure if the Risoni was the problem, but the ratios were way off. I had to strain half the liquid away to make it work out. Still lovely in the end

Also in Asda, got some today, was only 75p a bag on offer - already have the Tesco one (also on offer £1.20) so will compare them. Sainsbury's have it as well but it's £2 a bag!

The base (orzo+tomato sauce) is incredible. Did it with fresh oregano, green olives and feta. Simple but delicious.

Buttermilk is the same as greek "xinogalo" which translates to sour milk. Same thing

I cook this recipe .. the same but instead of orzo we put rice ..and it's so yummy . Specially in winter . and you can make it with pasta or bread

Looks great! Also consider toasting your orzo in some butter/olive oil before adding to the sauce for extra flavour as well :)

You can find ‘aged’ halloumi which is harder than the squeaky halloumi in Turkish/Greek food stores which is much better for grating over pasta
