Ingredients:
400 g (14 oz) dried pasta shapes (I used rigatoni)
1 tbsp vegetable oil
1 large red onion peeled and chopped into wedges
1 red bell pepper de-seeded and chopped into large chunks
1 yellow bell pepper de-seeded and chopped into large chunks
1 courgette (zucchini) chopped
pinch of salt and pepper
2 cloves garlic peeled and minced
1 tbsp tomato puree
½ tsp dried oregano
½ tsp dried thyme
2x 400 g (14 oz) tinned chopped tomatoes
120 ml (1/2 cup) double (heavy) cream
100 g (3 packed cups) fresh baby spinach
100 g (1 packed cup) strong cheddar cheese grated
100 g (1 packed cup) mozzarella grated
Small bunch parsley roughly torn

I always cook for my brother on weekends and he usually likes what I make. This past weekend I made this pasta bake and he told me it was the best thing I've ever made. Thank you for this delicious recipe!

Hey Nicky - Absolutely love the channel! My daughter is vegetarian and I’m trying to do more for her. Thanks so much for this recipe. Question … could I put chopped Swiss chard in instead of spinach as its incredibly easy to grow and I’ve got tons? Also … mushroom? Would you fry the mushrooms a bit first, if they are ok, just to help them keep their shape and texture? Love it all… getting very foodie now. You are such a star ⭐️ love from Clive and Hannah x

I had a suspicion that the sauced seemed awfully bland with just a pinch of salt, pepper and oregano and thyme. And once I tasted it, it was indeed bland. So I remedied it whilst cooking and added garlic powder, chicken powder, onion powder, paprika, red chilli flakes, mixed herbs, and cajun seasoning. Not too much, a little of each. And it turned out wonderfully flavoursome and not in need of any protein.

Either of these ( The Tuna one)will hit the spot!(I like to mix in some Salmon as well) And add a little Heat to the Bechemel Sauce...But u can't go wrong with either,plus a Salad,A Glass of Wine👍☘️

What's an alternative for the heavy cream? Would some type of milk replace it?

That was my question too! Cream isn't generally a store cupboard/fridge staple, but something you buy in specially (in our house anyway!)

I would use full cream milk rather than heavy cream.

Made it but was a little sour due to the chopped tomatoes even so I pureed them first. I would use passata or tomatoes sauce.

I got half way through the video and decided this is what I'm making tonight. I brought the recipe with me and looked high and low at 2 different stores for GRATED mozzarella and sharp cheddar cheeses and found nothing so I just bought shredded. I finally got home and finished the video and noticed you were referring to SHREDDED cheeses. Lol It's all good. I'm making it in a few hours

I think it's per serving. It's a lot of calories
So I made this recipe today and I liked it but I found it very bland. I think next time I make it I will season it my own way with more salt and pepper, oregano, thyme, onion powder, garlic powder, red pepper flakes, and paprika.

To much Pasta and not enough sauce, I prefer a more wet dish not dried out with pasta 🍝 just a variation on ingredients and it’s a perfect dish
