    Chelsey, next time you use a can of tomato paste, try opening the can on both ends and then push the final lid through. No waste off your tomato paste or scraping.

      @sistermaryam8204. Glad you wrote that out…I was thinking it while watching Chelsea scooping & scraping. My mom is who taught me to do that (& I’m 80, so that was a long time ago!😉). I’ve done that my entire life & got upset when some of the canning companies started making the bottoms of some cans differently- - preventing that nifty trick from being possible 😠. It is such a wonderful way to clean out a can …use it mostly for tomato paste & cranberry sauce!

    Chelsey, I myself have been a Canner for over 45 years. Now we used to eat Pinto soup beans & cornbread once a week. You are correct when thinking by salting the beans when you can them keeps them from getting mushy in the process of canning. It does harden the outer shell of any beans. Even when cooking dry beans by adding salt when you start cooking keeps the beans from breaking down. Also I too soak & drain my beans & cook for 30 minutes. This removes some of that gas. I still cook for a family of 4 adults &one teenager . We are 3 generations in one farmhouse. HAPPY CANNING!!!GOD BLESS from West Central Indiana USA Farmland

    Home canned beans are also good, for people like me, that live on the Gulf Coast and experience hurricanes etc.
    We are often without power for a week or two. You CAN'T pull out the crock pot to cook beans.
    You CAN open a home canned jar of beans and cook it over your camp stove.
    You do a good job with your videos.

    Hi Chelsea,
    I love your videos. Wanted to tell you and your viewers about another Canadian You Tuber, Glen and Friends, he does a cooking show and makes a lot of videos from old cook books, like you do. He also has another channel about airplanes...where he raised money to donate to Hope Air. These pilots fly people from remote areas of Canada to get medical attention when needed. I thought that was very interesting.

    Interesting video. RE: salting beans...America's Test Kitchen suggest brining beans overnight to help prevent both tough beans and mushy beans. Brining causes changes at the cellular level, which I won't pretend to understand, without causing the beans to taste salty. Per pound of dried beans, add 3 tablespoons of salt to 4 quarts of cold water. Soak overnight and rinse thoroughly before cooking. While cooking, season the beans as you normally would. Thank you for your informative videos.

      @@LittleMountainRanch Chelsea, I thought I’d heard somewhere that putting a dash of organic cider vinegar in the soaking brine also helps to breakdown the compounds.

    I laughed when I saw the parchment paper on the lid. My gallon sized jars are old also, so I put parchment paper on the lid too.

    I learned a great tip about getting the tomato paste out of the can easily.....cut the lid off both ends, then using the lid at one end, push the whole can full of paste out the other. Works like a charm.

    For those days when I am to busy to cook I have freezer meals casseroles bags of meat marinated to throw on the grill bags of cooked beef, chicken bacon etc I spend a day filling the freezer for when I'm busy, sick,or lazy😂 also make bread dough, biscuits etc freeze

    Those look amazing! I have never been one that liked beans, but I have recently discovered there are a few I really do enjoy! Black beans are one and butter beans are another! Thank you!

    Those lids on your gallon jars can be sprayed painted your choice of colors that would go with your pantry.

    Ok.. I have to say, I was a big believer for the white colour for the upper cupboards,... But this saje green looks so good. I thought it'd darken the place, but yeah that's not the case.

    Use a pasta pan makes it easier to soak things.Just lift and it's just easier.

    I love bulk canning days but its certainly a lot of work. I'm intrigued by your roaster tip, about putting water under the insert - my roaster says to not do that.

      Just make sure you did it right enough that they have been canned safely or use them up or freeze them right away.

    I canned 14 quarts of kidney beans a couple of weeks Argo so that I have them for making chili. I soak my beans first too and parcook another 30 minutes before canning them. It’s been hard to find dry kidney beans at the grocery store lately. I had to order mine in Amazon.

      Yes, they need to be taken out fairly quickly after the pressure comes all the way down.

    Wow the all American Canner is amazing. We only have a presto- which is good, but the all American is best- no gasket issues there.
    I love canning beans also because where I live we tend to get power outages- and no power means no well water- and dry beans takes a lot of water . Canned beans you can eat straight outta the can if you have to! Cold or hot!

    Hi Chelsea, today we are canning black beans, we have canned them before, we did a dry can and they did come out mushy, so this time we soaked them and did a boil, we are hoping that we will enjoy them much more this time around. Thank you for the video.

    You could have put a pan or cookie sheet in the oven to preheat it then tossed your stew meat on it to sear it lightly on both sides before adding it to the roaster. I’ve done stew with and without searing and both are delicious but seared/roasted meat is definitely superior.

    I love canning beans, it gives me fast food meals. 😅😅 I soak mine, then I cook them for 30 minutes with 2 teaspoons of baking soda to help them be more digestible.

    Here’s a suggestion, when using tomato paste take off both ends of the little jars and you can just push out the paste thru one of the ends and it comes out cleanly.

    I love cooking beans, my little tip is cooking them in chicken broth or stock it brings it a notch up and another one is add a whole onion if cooking on the stove, or chunks if canning, so good! Hugs from NW Ga. Love your channel!

    When Florida started its lottery, I had the best time dreaming about what I would do if we won the money. Such a great time thinking about the “what if”! Much of it centered around college educations for my kids and many of my friends children so that would be something they wouldn’t have to worry about too! I don’t consider myself a “lucky person“ when it comes to pulling my name out of drawings, but I will certainly enjoy dreaming of what foods I will can if I win.     I have a tip for you- take the lid off one side of the tomato paste- then use a can opener to the other lid- then just push that lid through the can and it all comes out in one shot- learned this from watching my Italian friends mothers making sauce

    I am quite new to pressure canning and have canned both chicken and beef. Love them both as it makes a quick and easy dinner!
