    Even though this is my 80th year of life and I quit canning just a few years ago…and, even then, I was only canning jam. But, am delighted to watch every video you do, and especially the ones where you process food…whether your own homegrown or anything purchased. So amazed at all you do and your excellent narrative skills.

    Canning is so fulfilling…..and gives you such a good feeling when it’s finished and sitting on the counter. It’s beauty to the eyes. Brings back memories 65 years ago and we ate home canned cherries w/ other fruits. We were blessed children to have our mother serve us in wonderful home canned ways. We were so fortunate. Hope kids ares still that blessed and fortunate. 🎉

    I love watching your videos Chelsea. You always inspire me to delve deeper into our old family recipes (and I aspire to be as prolific as you in the food preservation department).
    I too lost my grown nephew a few years ago. I still hear his laugh and see his smile. My wish for you is that you get to a point of remembering yours where the sweet outweighs the bitter. ❤

    Grief is all consuming and recently I was there and it knocks me to my knees. I agree with life goes on whether we are ready or not. I have learned to let my emotion out when it hit me, DON’T hide it or contain it. I have discovered if you just release it somewhere you feel safe to do so, my mind and body feel a bit of peace after and I can push on until it surfaces again.❤️

    Thank you for your kind words regarding loss. Having lost my brother and mother in the last 26 months has been hard. But it has shown me that I am stronger than I thought, that I came through and now have a new lease on life. I will always have them with me - and this is the key message - you are never alone.

    My heart goes out to your sister and family. I can't begin to imagine the weight of the grief that comes with losing a child. Your sister's message was so eloquent and beautiful.
    Those cherries and that jam look so delicious. My face would have been stained red through that entire video. How did you control yourself so well?! LOL

    Thank you for sharing your words of encouragement and sympathy during the loss of a love one. I needed to hear that, my extended family has been expressing signs of unexplained anxiety and slight feelings of depression. My brother and my sister inlaw gets emotionally down especially around holidays. Last night three our surviving 10, 8, 6 year old grandchildren came over to our house and we celebrated the 4th of July festivities with them. They told us that they grandparents didn't cook anything and they missed their mother and oldest sister, who passed due to a tragic wrong way head on car accident a couple of years ago. The three survived with many doctors visits.
    All I could do was hold them. I made sure they had enough to eat and enjoyed their presents. After the fire works display I again held them and encouraged them that they had to live their lives that shows honor for their mommy and big sister. 💛 💛 They're so young I hope they understand. Thank you for your inspiration.

    I'm sorry for your sister and family's loss 😢if everyone could pray for my granddaughter she is only 20 days old and born with a bad heart and now she is in complete heart failure 🙏👶

    💚 Love your canning vlogs, those cherries and raspberry jam look beautiful! So sorry for your Sister's/family's loss. Both ypur words on loss and grief are appreciated, I lost my Dad a little over a year ago and the grief does just flood forth at unexpected times. I spend much time sitting with my slowly declining, bed-bound Mom, knowing that when she goes, I will really feel the loss of both my parents, and my sister who went way too young. Looking forward to seeing Honey's calf! 💚

    Interesting, I've never heard of "jam lids" growing up in Oregon in the '70's and 80's. It would be neat to see that size of jar thats standard for you guys. I love having the knowledge of how to can our own food. I hope this knowledge doesn't get lost in this modern era.

    I am from Kelowna and my mom canned cherries every summer. She would just put 1/2 cup of sugar in the jar filled with cherries and she would add boiling water to the top of the cherries. She would can with the pits in. The cherries tasted so good and the juice was not sticky at all but plenty sweet. She canned peaches, pears and nectarines the same way. She used the large canner filled with boiling water. When she took them out we would listen for the pop.

    I, too, lost someone (my mom), exactly 3 months ago today. I felt the same way, that things should stop. My feelings would come up at odd times. But, I am thankful that someone else understands those feelings. Thank you. My condolences to you and your family. Thank you for the videos. I like to can, also! 😊

    I always question my canning times too! Especially when im jumping between pressure canning and water bath. Which i was doing today, plus i made soup for dinner! I felt like i had a Chelsea day today! I took a day off my regular job to do this today. 5 + hours and counting. And I love it. My mom also used parifin on our jams when we were kids. They still sell it! I saw some the other day in the canning section of a store i was at buying more jars.

    When I started canning in the early 70s, paraffin was still being used to seal jam!

    I have experimented with sugar, honey, and juice as a sweetener for syrup. The cane sugar helps preserve the canning linger and keeps the colour better. Honey does taste good but it is precious and expensive. You are such a great teacher. You help me to be motivated

    grief is odd..In the first couple of yrs after I lost my son....I used to say it was like walking on ice..one minute your up and treading along and the next your on your ass and never saw it coming...thats what it felt like for me anyways

    It's so nice to see you looking well -- I know grief, and I know it doesn't always stay constant, but I do worry. What a gorgeous counter full of berries!!! I wish I had the space and energy to start a canning enterprise, because gosh, that looks so neat. I can't wait for that garden to start coming in more! It's hotter than hades down here, but dang, it looks like it is up there too! Poor things.

    I bought peaches and cherries. Peaches are sliced and in the freezer. Cherries are destemed, pitted and halved, and also in the freezer. The peaches and cherries will go into the freeze dryer. I pitted the cherries with a stainless steel straw. Glad you showed to use a pop bottle. I'll definatley use a pop bottle next time. I finally used my freeze dryer a couple days ago. I did strawberries from my garden. I hadn't used the freeze dryer for 6 months. I needed a stand for it it. And I was kinda scared to goof up. Im not scared now. I want to freeze dry everything...lol. I'm so glad you and everyone were able to help your sister and her family with your fundraiser. I'm still praying. ❤

    I absolutely enjoyed your video, as I always do. It is always interesting to see what you make in your kitchen and of course also in the fantastic garden including the life of your animals. Your garden is bigger than most so I learn a lot about preserving food and use a lot of your good advice. Right now I have a lot of cherries so todays video was super for me.     I was so excited to hit my 1000 jar mark on July 1st :) What a sense of accomplishment. I have been working really hard to get a lot of fruit and meats done, so I can empty out my freezers a bit. Coming up on harvesting season, it will be crazy to see how many more jars we can all do, I look forward to keeping up on your progress too :) Do you keep track of your jars you are putting up?

    Love your renovations- it’s looking so nice. And the colour of those cherries looks black. Beautiful! I just made strawberry jam tonight… it’s just me so it’s one batch but I wax my jam as did my mom. I laughed when you said that coz none of my friends do that and look at me like 😳. If it was safe growing up it’s safe now .. if I was doing big batches I’d probably water bath. I seen a pressure cooker blow - I was stayed for lunch at a friends house and her mom was canning and poof!! The Amish water bath everything. I got a few books, they just can it LONGER and add a tidbit more salt-or lemon juice- etc. But it works and I’m fine with that. Hugs to your sister snd family. It’s 💔 just unimaginable 😪

    There is a wonderful recipe using cherry tomatoes in the Ball book. Cherry tomato and sweet corn salsa. Only recipe that I have found that is an approved recipe using corn in the salsa

    One more thing, you’re into the older cookbooks. I used faithfully Moms Five Roses cookbook. Recipes would say once dissolved set at back of fire 👍😄 anyway I have it scorched around the edges from the house fire BUT friends found another for me. It has charts for when you butcher beef or pork - but the one that I REMEMBERED and make quite often is the creamed peas on toast. Do you remember having that? There were times mom would boil or bake potatoes, make creamed peas and just bake a mackerel- that was supper, and was one of the BEST meals- Shad was another fish we got often and seasonal was the good ole gasperoux ( spelling?). They say there’s. Bone fir every day of the year 😄. By the time you’re done with deboning the supper is lukewarm but soooo good.

    Fond memories canning mounds of cherries with my mom in Washington State, Yakima, WA…🥰💁🏻in the 1950’s. At age 78 I continue to can many jars of tomatoes from our garden… making apricot, plum & fig jam from our fruit trees here in Santa Barbara, California. Love your channel🥰💁🏻🙏🏼

    It would be absolutely devastating losing such a young loved one. 😭
    Today, ( July 4th ) marks the 14th year since my Dad past away from Cancer. 😭
    My Brother passed away in 2012 and my Mom passed away September 21/21 of covid. 😭😭 The Anniversaries of their deaths are the hardest to get through, but like you said, life doesn't stop. You need to carry on. Sending you all big hugs 🤗🤗🤗🤗🤗

    I bought 35 lbs of cherries, and pitted them all over the course of 2 days, cutting them in half. I am freeze drying all of them. The first load is in the freeze dryer now, and the other 5 trays are prefreezing currently. By the way, a chopstick works great for debubbling.

    Just got my lids from forjars for my gem jars. I do still use the glass lids but only for pressure canner not water bath.

    I put my hard on cookie sheets when warming in oven for easy transport, filling them catches spills and after done canning, washed, labeled down into the pantry … such a time saver!

    Chelsea, I don't understand the purpose of preheating the canning jars. By the time you place the syrup in, they have cooled off.Especially the jars sitting on the counter awaiting filling. Instead, we preheat the jar lids (and each jar briefly in boiling water just as we fill each one) to begin to soften the rubber portion - to create a good seal. We are also 80+ and still 'put up' a certain number of foods during the next 4 months, as no purchased product ever measures up to our memories from childhood, which is where we also learned these fine arts of canning & freezing!

      I heat them up so they don’t crack when I add hot liquid. They do cool down a bit but are still pretty warm. 😊

    The garden looks wonderful to me. I think everything is thriving well because of the weeds...my plants in this heat with very few weeds, do not look like that. They look burnt and struggling. Cherries and jam look yum. We are struggling with the hopeful rain to that just passes over. Very weird year for that. hugs and luv

    You make canning look easy, and as I only can fruit or pickles I think I'm going to swap my gigantic water bath canner for a steam canner. I've only canned occasionally, but that looks so much simpler than dealing with that huge pot of boiling hot water!

    So the easiest way to can fruit is add the sugar the jar then add boiling water to each water dissolves the sugar so much fast than making syrup.

    Oh, I also remember the paraffin wax and my aunts always turned their up-cycled store jars upside down when jelly making.

    I feel like we are sisters from another mister! If it grows from the ground, I will can it, but not a lover of cooking. I make jams, tomatoes, peaches, pickles of every sort, salsas, etc.. 😂

    Cherries are here as well and thinking of doing a box or two of them. Canning looks great! Glad you were able to help your sister with the fundraiser - her words were so nice! Your garden looks good - weed wacking was an excellent idea - don't be so hard on yourself - It is funny, but I noticed the flowers and veggies rather than the weeds, even before weed wacking. It is harder to see the positive's in the garden, and life, but focusing on the negative does you no good and in fact leads to the overwhelm. Focus on the flower growing out from the weed and soak in its beauty. And be assured that even if you did not get it weeded, the garden would produce....seeds want to grow. Good video.

    I buy my lids in bulk from an Amish bulk food store. The rubber ring is blue, much thicker then Ball, & love them. If I can’t get those I’ll try Forjars since they sound similar. Only use Ball now to vacuum seal dry goods

    I’ve been canning for probably 55 years. I learned from my mom. She did all fruits. The cherries were my favorite. Then pears. She never made jam for some reason. That’s what I did and sold hundreds and hundreds and hundreds of jars at Christmas craft shows. From my tiny kitchen. Then I wised up and rented the church kitchen. Those days are over for me but I still can. I got an electric pressure canner and it has been revolutionary. Your channel always makes me smile. You are very dear. ❤️

      Rose Red Homestead has some very informative videos on the various electric canners. Helped me feel comfortable selecting and using mine.

    My mother always used paraffin seals on her jam. I loved her Raspberry Jam, BUT my absolute favorite was Tomato Jam!
