    I can remember as a child in rural Oklahoma, all the ladies in our church got together every week to can everyone's gardens.
    I started gardening, canning 50 years ago., with my Granny...
    I can remember all of us kids, ladies, on Saturdays, sitting on porches snapping beans, cow peas..

      What a great plan that was and I'd bet it was actually a lot of fun. A couple of friends and I used to have salsa parties where we'd make and can up a lot of salsa. It was great fun.

    I freeze mine too, because it's so hot in Texas and the pressure canner seems too much. Riggs is so big, such a cutie. Great video. Miss the chicken 🐔 .

    I can’t pinpoint what it is, but I rally love watching you preserve, and then seeing how you use that bounty. Just a few days ago, another RUclipsr I love watching…Lisa from “Farmhouse on Boone,” addressed similar issues. Her comment was that we can do anything. We just can’t do everything. Both of your comments from two young, homesteading, home schooling moms are so wise. You’ve referenced that ketchup recipe before. I want to try it as well as your refrigerator pickle recipe! I love buying peaches in season and freezing a recipe’s worth of peach cobbler. When it’s cold outside, I can pull one out, thaw it, and make the topping. What a treat.

    One thing that makes it possible for you to get it all done is your whole family is doing the work including your husband. Some mothers try to do it all in addition to doing the other things, home school, child care, house keeping etc. That’s awesome you can have them there to work song side of you. ❤

    Thank you so much for showing and telling us that you don't do those preservations in a day and how you do it. I always feel so overwhelmed, because it's so much to do in a day and I never think I can do it and always wonder how you can do it while also taking care of your family and your homestead. You gave me the advice I sometimes need to hear (or need to hear on a daily basis ^^') to take my time and do little steps. I always think I need to tackle all at once to be successful. I really needed this reminder. THANK YOU!
    Btw... can you maybe show us how you made the peach butter and for what you use it? :)

    Wow, that hose really cleaned those carrots very well and quick. When I first got my pressure canner it had a very loud hissing sound. I called the company and she said the canner has been sitting on the shelf for some time she sent me a free brand new rubber seal. That did the trick, which I was so glad if did! Yes scary!     I’m behind on video watching because of gardening! 😂. A huge game changer for us was buying the food processor attachment for our kitchen aid mixer. So, so fast for slicing or dicing vegetables. We did our large freeze drier trays with potatoes, carrots and onions all diced, in about 30 minutes, and it’s a breeze to clean.

    I love hearing you talk about time management! Thank you so much for sharing that. I have a small family and I do just a fraction of what you do. This time of year, I feel overwhelmed and often feel like a failure. I've been afraid to "break up" the canning process and try to do it all in one day.

    Yay! Congratulations!! 🎉 👶
    I’ve just followed your ketchup recipe. Oh my word!!! It’s delicious!!!
    Made half the quantity in two batches over three days. (Slow harvest and I wanted to try a smaller batch of your recipe first).
    Kept first mouli sieved roasted batch in the fridge. Added it to the second batch two days later and continued from there. Used exactly 12 lbs tomatoes. I didn’t have a quality cold pressed oil on hand so roasted the onions in with a particularly large juicy batch of Romas. Then moulied. Reading your website blog, I noted your tip about counting the cloves (and only 4 compared to most recipes that call for various quantities of tablespoons), I gathered you might be as adverse to this spice as I am in recipes.… It can easily overpower all other spices in food, IMO.
    Anyway, given your tip, and me making half the quantity, I only used 1 whole clove in the spice bag to infuse the vinegar and rounded up the half measured whole allspice to three. Another change was the apple cider vinegar. My bottle didn’t have the acidity % label (UK). I thought about just using 1 1/2 of white wine vinegar then decided to use 1 1/4 cups white (5%) and 1/4 cup malt (5%).
    I have to say it’s the best tomato ketchup I’ve ever tasted! It’s soooo good that I dare not use it to make homemade BBQ sauce. Any old ketchup can do for that 😂 Unless of course our tomatoes carry on producing without catching the dreaded blight.
    Next time I’ll use 2 whole cloves in a half batch recipe. See if it improves the taste without overpowering. I’ll add thoughts to this comment. It’s unlikely I’ll ever get 24 lbs of ripe Romas in one go for a full batch.

    I think an additional peice of advice you can give to us newbies is to give yourself the time to make new learning curves into habits. You have 15 years of garden experience in your pocket. I just CANNOT do all that you do simply because the knowledge has not become a seamless thought process yet.
    My spring did not go as planned and I had to scale way back my hopes and expectations to basically one goal for the year. Then I can still feel satisfied with what I did accomplish because I did something new but was able to integrate last years experience!

    I love that you mention feeling overwhelmed. I often wondered about that when I watched your videos. I know that you've dealt with depression and it's amazing what you accomplish in a day. I often struggle with getting out into the garden or picking and preserving what I grow. I want so badly to be able to grow food for my family but with depression, it's very hard.

    Canning is not easy, but if your family help is so fun,I remember when we all step in and canning together ( grandma, mom,me and even grandpa), for blackberry and mushrooms we go in the woods, vegetables from our garden and from farmers market, and we don't have that many gadgets like now.

    I'd love a video on the fall planning, I hope you can do it :)) I've just canned peaches last week and I don't have as many tomatoes as you do, but I freeze all of my tomatoes from my Heinz variety tomato bushes and will do some ketchup at the end of the season, I'll definitely try this recipe! I have plums, apples and pears to can this week, I'm planning on preparing some jam from the pears, oven baked jam from the plums and apple compote :)

    You know the discard from the tomatoes when you were making ketchup. You can boil that so that you can get tomato juice out of that. And you just strain that. Also if you make homemade salsa instead of continuing to cook until it reduces down. Take that juice out and can it and you'll be able to have a nice spicy tomato juice to cook with with like for example rice or soups

    you are such an inspiration! not only growing the food, but preserving and utilizing as well :) just wondering if you adjust the salt in the brine to compensate for the salt on the cucumbers? and do you drain the liquid that gets pulled from the cukes?

      I have the recipe in the description. We do not use any salt in the vinegar mixture. We salt the cucumbers then drain, no rinse. All that salt is enough to flavor everything :)

    I’m definitely going to blanch carrots after washing to store in the fridge. Some homesteaders store carrots washed, unblanched and whole in the fridge but mine just go floppy after a week. Which is odd because store bought carrots keep much longer in the fridge than my home grown do.
    Anyway, I’ll try chopping and blanching ….. how long do they keep this way?

      Thank you! We store them in the fridge as-is no blanching. They need to be stored in a bag and green tops chopped off similar to store. We poke one hole in the bag for venting. They store 3 months like this. You can see the carrots in the refrigerator when I put in the refrigerator dill pickles to store. The blanching was only done because we were freeze drying. Sorry for the confusion!

    😅I did the same thing with my peaches. They look awful canned, because I butchered them trying to get the pits out. That’s okay, because they were canned for peach cobbler.

      Tush baby hip carrier. My brother and his wife gave it to us. We love it. Especially since my babies don't like to be in one spot for long. It's easy to put him on it and take him off.

      You can do it!! Try water-bath first. Pickles are an easy first canning project.

    Can you put tomato sauce in carbon steel? I only put tomato sauce once in my cast iron and it look like it ate the coating on the side of the cast iron

      Tomato sauce will remove the natural coating. Lemon juice will remove it too. I think it’s just any acid. I learned that the hard way 😅
