    I wash and rub the skin off the ginger (grown in pots on our rooftop) cut it into thump size and put it in a bag and into the freezer. When I need some, I just take a piece out. Keeps (almost) forever. Saw someone grind the ginger up and put into ice a cube tray, freeze, put the various cubes into a bag and keep it in a freezer... ready when needed. You are incredible, always working on something and looking pretty and poised. Please take a break sometimes ... looking forward seeing your new family addition!

    Its kind of crazy seeing the little baby already on its feet and helping wash the ginger. Watching all the kids grow over the years of this channel is heartwarming. I think you will look back on this time at some point and be glad you documented all this in the time they were still so small.

    This is my favorite homesteading channel. Can you please please make a video on tips on how to get started, things to look out for, companion planting, etc. (or if I missed that video, please let me know) I've been gardening here and there but nothing very major. I definitely have the thought and intention of starting this upcoming spring and I just don't know where to start and how to commit to it. I would LOVE to hear tips and tricks from you. I hope one day to be self sufficient like you guys!!! Thank you for your effort in making these videos for us. They are very inspirational!!!

    Becky you are so inspiring. I've been feeling a bit overwhelmed and down on myself with just one little one and nowhere near the level of things to do as you do. While I'm not sure my life will ever look like yours it does motivate me to think about small things I can do now. I know this isn't the focus of your channel but tips on getting 18-24 month old children involved especially a very spirited little guy would be wonderful.

    I absolutely love your channel. Growing up in Guyana (a South American country), we planted a very small garden, and I remembered my mom would make tea from the leaves of the ginger, and it was very delicious.

    Btw, super tasty and easy pumpkin soup recipe - Boil pumpkin and puree it, add sweet cream, salt and nutmeg (kinda a lot). You can add to that carrots as well. And that is it. Add croutons on top and you are solid. Some people add chicken on top as well.

    AWESOME stash of candied ginger! WOW and your freezer is packed with it as well. Wonderful harvest and I'm going to go back and relook at how you planted it. I've grown ginger but only one lump from the grocery store. It always doubles or triples in size from the chunk I first planted so I guess it is doing fine but not like that harvest you had - my mouth dropped and I could hardly believe it. My turmeric also grew so well with pretty flowers but I never dug it up. I wonder if I'm going to get a harvest without planting this summer. I just walked away from the plants and told them to surprise me! So happy for you in that bounty!

    I have a large pumpkin I need to roast and then freeze. I was trying to figure out the best way to do this. You gave me the best way!!!👍. You are at the end. Hang in there. Rest is coming. Hapoy Holidays and looking forward to hearing about the new babe coming. 💕💕💕

    For ginger, my favorite way to store is to just blend it up and then freeze it. I break it off into chunks for stir fry or whatever. Super simple!
    Ps. I feel like you look so happy and healthy and full of life!!! 🥰

    I highly recommend freeze drying your pumpkin. After I get mine out of the oven and cool it completely I put it on the trays and pre-freeze then freeze dry it and then I grind it up into a powder in my blender afterwards. It makes it so easy and convenient to just take out a little bit you need for recipes here and there.

    We are in south Arkansas. Used to live in north central Arkansas. We plant our cow peas right after the first frost. We pick them fresh for 2-3 weeks every other day. Mow them down and after a month you get another 2-3 weeks of picking. We grow 8 300 foot rows of purple hulls. We have a 3 acre garden in our big field. For things that don’t need a lot of tending (other than the few weeks of peas), like potatoes, corn, mellons, winter squash, etc. Then we have the smaller garden at the house for things that need to be checked daily.
    Family of 6 and we grow all our veggies and we are able to sell enough mellons to cover seed and fertilizer/compost. So, other than time, our veggies are paid for.
    Thankfully we have a freeze dryer because we don’t have cellars down here.

    Long Island Cheese pumpkins are the best. I've grown them for 2 seasons since seeing yours. Their beautiful and taste amazing. Awesome harvest. Salsa Verde is delicious poured over a pork roast and cooked.

    Amazing ginger and turmeric harvest!
    Mine failed again this year but I had a lovely harvest of lemon grass. Both the leaves during summer and the stalks.
    I’m with you on the end of season preservation burnout. I canned more (homegrown) beans and meals in jars (including Thai soups) this autumn because I was concerned we’d have even higher energy prices or maybe even energy rationing during our UK net zero overreach this winter. We’re lucky that we can generally harvest fresh produce over the winter but not if we have long spells of below zero.
    It’s nice to see your tree up. All set for thanksgiving/Christmas and new life.
    [Loving your ketchup recipe still, btw. Used it in my cannoli beans, too 😃🫡]

    Whew, I'm right there with you sista being tired of the garden and preserving! I will be missing homegrown tomatoes in a couple of weeks though, lol! Great work on finishing up your Summer garden and preserving! I LOVED the candied ginger project....how interesting. I try to do a few new things ever year to add to my skill set and such. Time for a slower pace....ENJOY!!

    I just finished my last batch of pumpkin I dice up and cook in the instant pot and freeze in 3 cup containers to use to make pumpkin bread

    I harvested a TON of turmeric in 2023. I put some in the fridge fresh, dried some and ground it up. I also gave some away, but I had so much that I threw it in a bowl and it sat on my counter/table all winter. I have a small house and don't have a cold storage. This year in the spring, some was shriveled up but most of it was sprouting and ready to be planted. I put all the mother plants in the ground and some of the rhizomes. It all grew and I will harvest it all after Thanksgiving this year. I was surprised and thought most of the turmeric would rot but it did great! So I guess I was wondering if you saved any to plant next year or did you freeze it all? What a great harvest you had! I haven't been able to get Ginger going, that's on my list for this spring.

      I froze it all because I figured it wouldn’t keep. I did leave one small ginger plant out in the garden, but it already looks in bad shape after some hard frosts.

    WOW WOW WOW!!!! Amazing. I pray you can get some rest in now. How was the Salsa? I have that book and was planning to make it this year. I had thousands of tomatillos, but I think I let them go to long????? Worms got to them. It was weird, cause nothing else in garden had any bug issues :(

      I might still do that to a few. But not right away since I don’t want to do anymore preserving right now 🤪Dehydrated ginger tastes so different than fresh or frozen. Since fresh drying is different than plain dehydrating, I’m curious if it would maintain more of the fresh flavor.

      Yes, love them and all the extra space. Not sure if wall ovens have the same space capacity. But if they did I imagine choosing one or the other would be a personal preference. I do like the extra cooktop space too.

      Yes, it was a success. But we didn’t eat as many pumpkin seeds as I thought so haven’t needed to grow it again.

    You said the soup processes at the longest time so you can pretty much add anything you want in it. Does this mean I can pressure can my regular soup and chili recipes so long as I process them long enough? Or do I have to use only specific canning recipes. I have currently only canned individual vegetables.

    Kind of house design/structural question but what material is your countertop? It looks like marble and for someone who does a lot of cooking and preserving, particularly with acidic things like tomatoes and vinegar - not to mention a house full of kids - it looks pristine! If it is marble, do you seal it with anything special to keep it so unblemished?

      It’s quartzite. And yes we sealed it a couple times already but it’s quite a bit more durable than marble.

    I watched on RUclips Asian bloggers make the ginger candy. And YES! It was a LONG process and LOTS of sugar.So I don't see the healthy part in it as well 😅😅😅

    I don't understand the comment about leeway on the soup because it pressure cans 90 minutes. If you go "by the book" I don't think the pressure time makes any difference. Can you give an explanation of what you meant?

    Oh my gosh so WHAT IF you used Cams air compressor to blow off the extra dirt from the ginger roots????? If that's to strong and damages the roots tender fresh flesh you could have the kids try to use a leaf blower, I bet they'd enjoy and get a laugh outta doing that 😄
