    Great video and just in time. It reminded me that I had 20 pounds of cranberries in the fridge for juice and dried cranberries. What you said about the sugar also made a lot of sense. We have a lot of grape juice from last year, because my kids didn’t like it. Now it’s going in with the cranberries instead of water, and I can cut down on the sugar

    I have two apple trees that I’m working through right now. I canned some apple pie filling, steam juiced several jars to turn into spiced cider later, then made some apple grape juice with the last of my grapes, freeze dried 10 trays and made applesauce (I use my instant pot to cook it and then can it up).

    This year we did 120 quarts of Applesauce. It does get a little old so it's fun to change things up. When making it we make a spiced Applesauce.
    Per 5lbs of apples
    1 tsp cinnamon
    1/4 tsp of nutmeg
    1/8 of tsp of ground cloves
    You can add the spices even after you make it. Our kids don't eat it any other way anymore!!
    Give it a try!

    So funny. I’m simmering my own apple cider mixture right now. I find that I can get 5 pounds of dehydrated apples Into a half gallon Ball jar. I use the vacuum sealer too. They are positively addictive. Every time I put up more apples, I always think of my granddaughter who is a grown woman now. She LOVED those dehydrated apples as a little girl, gobbled them up in goodie packages I sent her in college, and raids my pantry when she comes home for the holidays every year. Have you tried making a raw cranberry orange relish? It does need sugar, but freezes beautifully and is great for not only Christmas and Thanksgiving, but with pork and chicken dishes too. The best part is that it takes about 5 minutes to make. I also like to make apple, cranberry, raisin chutney. It keeps for months in the frig. Becky, baby #6 looks to be growing like crazy! Enjoy your slower pace now that the harvest and preservation season is winding down.

    I made about 50 pints of applesauce. Some plain, some cinnamon and some strawberry. I lost one batch of 8 pints because I dumped an entire Mylar bag of freeze dried strawberries into my blender and didn’t notice the oxygen absorber until I was bringing the sauce up to temp. All this from our apple tree that I don’t spray, so I have to cut around the moth damage.

    I heard from pro cooks the way they infuse flavor is to vacuum seal the food in the flavor you want and leave it there for a few days in the fridge to fully absorb all that flavor, since your vacuuming out the air it helps because its forcing the flavor into the food item. Maybe try that next time.

    QUESTION: If you weren't going to eat the apples as snacks but for making pies or muffins - could use just rehydrate the freeze dried slices in apple juice? Also, would dehydrated cranberries be sweetened if rehydrated in apple juice? Have you tried figs? I think homemade fig cookies would be so good!

    • @TheSeasonalHomestead
      @TheSeasonalHomestead  День назад

      Yes, you can definitely rehydrate apples for baking purposes. The texture is softer than fresh but in a baked good you would hardly notice the difference.
      I’ve had figs and yes I like them! It’s a little cold here for me to grow a fig tree so we don’t easy access to them.

      Every age has its social ills. Not sure which generation you are idealizing, but with every generation a look at history shows that humans have the same tendencies (including idealizing the past). Fortunately in this one, my son isn't a breaker in a coal mine, and I, as a woman, can get a job and hold property in my name. I'm not tied to a drunken, lazy, or abusive husband. Our country is not currently involved in a war. My neighbors aren't slaves, and I have enough free time to watch lovely videos like this one--of a wealthy, beautiful family growing and preserving delicious food. Let's give thanks for electric juicers, freezers, freeze driers and youtube!
