    Whenever i watch your videos, i always think "That Chelsea moves around in a hurry all the time!" Well, last week i had just started dealing with a big chunk of pork, when we had a big scary floody storm, and we lost power for 5 hours. I was running around like crazy doing everything at the same time. I was thinking, "Now Im moving around like Chelsea!"

    Tip .... freeze dry your onion tops, then powder them in your blender, add salt ..... make your own onion salt. The recipe I found was 1/4 cup onion powder to 3/4 cup salt. It makes a very pretty light green onion salt. PS ... love your channel from here in central PA.

      I also keep a couple jars of dried chopped green onion tops to add to recipes for a pop of colour. You can add them to meatloaf, soups, potato salad, egg salad or sprinkled on baked potatoes. I use them like dried chives but it is sometimes necessary to crumble them a bit so they are not too chewy.

      You can use garlic scapes for the same thing, but it'll be a lighter taste.

    I trim my onions back as well. A friend told me that her parents use to freeze the onion tops and use them in soups, stews or roasts. I tried it and it worked great! Nice mild onion flavor. Love the video, as usual!

    Talking onions, once the onion is good and rooted, I make a trench in between rows. Brush some of the soil away from the bulb. I have huge onions! Love your channel.

      I think it's called ringing the onions. I pull soil away from the bulb, pretty much only leaving the bottom of bulb in the soil.

      It is Beccy does from Acre Homestead freeze dries it she loves it. She also did strawberries leaves this season and said they were amazing as well.

      While I don't have a freeze dryer (yet!) I dehydrate strawberries, wild strawberries and strawberry leaves for tea . Makes great gift in the winter months.

    Good morning, Chelsea! I heard your comment about nutmeg and I used to heartily agree until I heard my alltime fave Julia Child say that if someone tastes then says "oh, it has nutmeg", you've used too much. I tested and confirmed Julia's comment - an apple pie was my test subject. Turns out Julia was right - nutmeg is that perfect background note when called for, who knew? I even went as far as buying a nutmeg mill and a bottle of the nuts. I never had noticed the omitted nutmeg was that "something" which had been lacking. A light hand is the ticket!! Love your videos and the vibrance and wealth in your garden and animals!

    Try making a cold salad with broccoli, cauliflower, craisins, sunflower seeds, red onion etc.its yummy!!

    I just use the 3 m white-grey electric conduct plastic 16 mm piping as tall hoops. I push them directly into the ground (so I don't put in metal sticks first, because that is not necessary I have found) The plastic piping is very cheap and I've been using the same ones for many years. I use big clothes pins to hold the fabric down on my hoops. You can always use the sewing machine to put 2 pieces together if the width of the fabric is to small.

    You can use borage the same way you use comfrey in the garden. Using the leaves to make tea for the plants and you can just put the leaves around trees and bushes to keep the weeds down and as they break down it will feed the ground. Its common here in the UK.

    My broccoli was amazing this year too. I’ve been using the leaves to make a pesto with basil and kale from my garden. Thanks for the tip on saltwater for the worms!

    Zucchini grow SO fast. I checked on saturday, and I was like "ok that one needs to be harvested tomorrow" and then I was sick yesterday, so I harvested this morning, and it was HUGE 😅
    I'm in zone 6a, and we have been getting huge downpours a few times a week, and my tomatoes hate it 😢
    Your veggies all look amazing! I'm hoping to do my own onions and garlic this fall for the first time!

    I trimmed my onions last year and made a lot of green onion pesto, it was a great fresh flavor for recipes in the winter. 😊

    Pouring rain in Victoria BC today, all day long. I am always buying freeze dried herbs from the grocery store, they are delicious so expensive. If I had a freeze dryer, I would be freeze drying all of the herbs and green onions. Soup looked fabulous 👌

    Years ago I stumbled across a wheel hoe mad by Valley Oak Tools. Bought it and all the attachments, including all three sizes of stirrup hoes. We have a fifth acre garden and that thing will keep it weeded with not a great deal of effort. It's faster than using a tiller.

    in the NW UK my Mum planted Sweet Alice ( think you called it Allisium ) and what she called Purple Rock in the rock walls - grew stumpy and bushy - lovely - and very common in the Peak District and stone wall wall farming communities

    The farm you had mentioned and going to get your Squash if yours does not produce must be the farm in Ashcroft, Desert Hills Ranch. If so, that’s my most favorite place to go, and I travel from Hinton Alberta to do it. Well, I’m originally from Kamloops and visit family there often, and always try and plan a trip in the fall to be able to go to Desert Hills to stock up. I only have a small garden, and they are great for the extras. The prices are great too. Oh, your gardens look great.

    I encourage you to consider freeze drying your straw flowers. I have found the results to be much prettier and sturdy than drying them hanging. 🥰🌼

    Hi Chelsea 👋 Your chickens would love your kitchen waste. They can motor through most things you have in your garden but I'm sure you know that already. Also you were saying making hard cheese isn't something you can devote time to, and I totally understand that, but Kate from Venison for Dinner has a great quick mozzarella recipe and it doesn't need you to spend hours in the kitchen. Perhaps that's something you can use in your cooking and will help use up excess milk from the cows.

    Cream of Leeks and Potato Soup....have you tried? With cream soups and creme sauces (example: Swedish Meatballs)....always use White Pepper. It has a completely different flavor that tastes particulary well with creme sauces/soups compared to Black Pepper.

    I love onions and garlic way too much…I trim my onions and eat the onion greens raw… you can treat them like they are scallions, yummy. Also like someone said I will be freeze drying mine and making onion powder and maybe add some FD sliced ones to my own cup of noodles

    My brassica's are outgrowing their row covers this year as well. I am not sure I will do seed onions again as they do not do as well as the sets...but I will see. I may try them again and mulch them right away. For your kitchen scraps, have you considered doing trench composting right into the garden? I do a lot of that in the spring, summer and fall and once freeze up happens I just throw it onto the garden all winter. I find it works great. I was thinking while you were giving a tour of the cabins, which look great by the way, that perhaps a porta potty might be a good idea. Especially if you have older and younger folk staying there. Good video!

    Cauliflower steaks are real good to eat fresh. You thickly slice like a steak, put seasonings and oil, roast in the oven very yummy. Garden looks awesome. Nancy from nebraska

    What a great video Chelsea. Glad to see the smoke is t horrible there that day. We also got a shower the other day too. We just harvested meat birds today so our freezer is filling up. I grew some leaks this year, one of my fave ways to use them is making a leak and potato strudel. Cook potatoes and sauté leaks lightly, make a cream sauce quite thick, mix together then Wrap in phyllo pastry. Sooo good. But your recipe sounds so good too. Thanks for the great content.     Thanks again for the fun. Your soup looked wonderful. One thing I usually do with soups, especially vegetable type soups, is to take out a cup or so (depending on volume), and blending it with my thickener, then adding it back in. The blended vegs really make a nice background broth, and also blends up the thickener really well. If I have meat in the soup, I try to avoid blending it,, but it is great blended up too! Thanks again.

    Hey Chelsea! You were talking about "to top your onions or not to top your onions"? I just wanted to let you know, I have always topped my onions because I was told somewhere along the way that it was the way that it was SUPPOSED to be done. And I'm a creature of habit. However, I don't have pigs and was always sad to see the onion tops go to waste. I saw on another youtube channel, a recipe for onion top pesto so several years ago I tried it. Oh My Goodness!!! It's my favorite way to make pesto now. I "like" regular basil pesto but I feel like a little basil goes a long way so it was never really my favorite. The onion top pesto is so, SO good. It is slightly onion flavored but not over powering and my family loves it. You should give it a try. Talk about stretching LITERAL waste into a meal to feed your large family. It's a winner. 😁 I really enjoy your channel so much. Thanks for all you do.

    I grew extra onions this year especially to trim the leaves of the surplus to requirements for green onion, lemon, pine nut and Parmesan pesto. Worked great but onion bulbs in our wet summer became soft due to water getting into the open leaves. Might do better in areas of sunnier weather and minimal summer precipitation. Or fold the trimmed leaves over, perhaps 🤔

    My sister, since you are planning like a Kitchen / Bathroom area for the common area, wouldn’t it be. A good idea to add a diary kitchen into that area and expand your area by maybe a few feet ? I saw Jessica from Roots and Refuge who didn’t something like that and supposedly it’s better for cheese making since it reduced contamination which is probably your issue. Just a thought 💭. Maybe at least have the area ready so when you are ready for cheese making… you don’t have to break your head again ?
