Hi friends, I canned 20lbs of ground beef and 15lbs of stew beef today with my pressure canner. I love canned meat for the convenience of it and that it's relatively easy to do. I shared tons of pressure canning tips with you and took and morning walk through the garden. I hope you enjoy coming along with me.

I grew up on a off grid homestead in remote Alaska. when we harvested Cabbage we had an underground root cellar. We would pull the whole plant root and outer leaves. To store them we hung them by the root and they would last till spring. the roots kept them fresh and the outer leaves protected them from spoilage. I miss that form of storage. it was raw but it stored all our fresh produce all winter. There was no going to the store and once in a while we had family fly in to visit or send a drop shipment. there was my parents and 5 kids . I was once medi-vact out by a military rescue when I broke a bone. our communication was a ham radio. That cellar was our life line.
That sounds like it could have been a fun adventurous childhood.

Many good memories but it had challenges. We grew up thinking Sunday was bath, laundry and TV.. When We moved to Anchorage and found outthis was anyday it was amazing. I think we were on the homestead full time 5-6 years. @@Mel-vu9ss

If ever you wondered if you were supposed to be on this land, that old mower part Dan found was a very loud affirmation. I truly enjoy the bits of history so much which you mix in to your content, while teaching and sharing your life with us! Sorry you lost a jar. I can only hope to have a thousand jars ine day. I actually bought a couple of Bernardin quart jars from a lady who lived in Canada and came to live in South Africa.

When I was nine,a truck came around at 6 am and picked up kids.I was the youngest working on this muck farm,I peeled green onions for 15 cents a bushel.

I'm getting ready to make tomato sauce in the coming weeks. The recipe I have calls for 45 lbs of tomatoes. I've been freezing my tomatoes whole from the garden this summer. I don't even know how much I have already, so it will be fun to see when the time comes.

I'm from Belgium (Brussels is our capital city) and when you top your sprouts, then all the sprouts will mature at the same time. If you like to harvest sprouts fresh all through the winter (we don't get very hard winters, normally -5 to -8 °C is really cold over here and that is no problem for sprouts, the get sweeter when frost hits them) then don't top them, but for a quicker harvest it's indeed a good idea to do that.

Since we got our freeze dryer, I have been cookiing the meat and then freeze drying hamburger, chicken and fish WE LOVE IT
You looked just as excited as I was when I got my 921 All American canner 😍 last year
We just canned ground beef for the first time last week! It's so great. Just a heads up, we have a glass top too. We looked up the max pounds it can hold, and our AA 921, if full, is the max weight! Yours may hold more, but it might be worth a quick google to make sure two canners isn't too much. It would be such a bummer to have to replace your stove. The garden is sooo beautiful! ~Mrs. C

I always dry my cast iron on a stove burner. When it gets hot, it opens up the “pores”. After it’s dry and hot, I add oil to it with a paper towel and allow to cool before putting it away.
I love your new AA canner. My kids gave me a AA930 for my 60th birthday in 2012. I use it a lot for meat and other canning. The one I got at a yard sale was a AA941 for $5 and had to put $70 in parts.
Your garden is always so impressive. I watch several other channels with lots of gardening and this year your harvest of has been by far the best. Especially the size of your cabbage and cauliflower. Many Blessings!

You can tie a mesh bag or cloth on the sunflowers to keep the birds off.
Nothing any better than have canned meat on the shelves! Your meat looks so good! I normally sear mine in the oven..but I may use my cast iron next time (soon as I can afford some beef chuck that is LOL) That was soooo sweet of your hubby to buy the canner..he`s a keeper for sure!! I'm so excited for you, Chelsea!! So awesome that Dan found you another canner! I have 2, 23 quart canners and it is so nice on those busy days. Years ago, I had a 16 quart, and I think that will be my next purchase, to find a smaller one, so I can do small batch stuff too. Some days, I just don't have enough to fill the big boys. Soup for me today, I have three big pots I am working on this early morning, get those canned up and hopefully spend a good portion of this afternoon out in the garden, working on fall gardening, then this afternoon/evening, working on storage in the basement where all my jars are. Big plans, cross your fingers for my poor body! LOL :) Have a great weekend!!

I’m growing zinnias for the first time this year. For years and years I’ve had massive flower and vegetable gardens but had never grown zinnias or calendula. I’ll not ever not have them for as long as I can garden. They’re beautiful! Your daughter did a great job. One year I grew about 500 lbs of tomatoes but that was a long time ago. This year I have 42 tomato plants and won’t get close to that. Weird weather year. Get them while you can. 🍅
PS: my husband is enjoying your cookbook as much as I am. Next up Lemon Bars!

I got my All American canner over 50 years ago. I bought it from a catalog company Speigels no longer in business for 79.00$ it was the largest one they made. Still using it today at the time that was a lot of money. Some things are different it doesn’t have the rocker but just a thing a flip down. They are made to last.
Your channel is my favorite new channel! Just discovered you. Wow! I used to have a micro goat dairy and a maple farm, and you are inspiring to get back into it. I never preserved food that much aside from freezing but you are inspiring me to get back into some of the farming I used to do. Your channel is so soothing. I love it! Thank you !
It is perfectly ok to use dish soap on your cast iron. The no soap rule is from the days of lye in soaps which did damage the seasoning. I spent my career working in professional kitchens and trust me when I tell you that all the cast iron was not only washed with soap but usually run through commercial dish washers. The key was the immediate drying by hand and a light coating of a neutral oil. Olive oil is okay as long as you use the pan often and the oil doesn’t have time to go rancid. Love the new canner!
Great video. Thank you from Ireland. Pressure banners are crazy expensive here so still researching canning methods while I save to buy one.
Also, if you need to clean, a cast iron pan and want to protect the finish. Not regularly, only when needed. Use course table salt and a damp sponge. Pour the salt in, scrub it around with the sponge, and try to remove as much as possible of whatever is sticking on the pan. The salt will lose its sharp edges. You may want to do this more than once, then thoroughly rinse it. Heat it on the stove and reoil it for storage.

I only use bacon grease on my cast iron but I do use soap and water to wash them. Some of mine are three generations of soap and water cleaning and also bacon grease.
I trimmed half of my onions and made onion top pesto with roasted walnuts (recipe from Acre Homestead) yummy !
Hi there, I love your tours of the ranch and your gardens. I enjoy watching you and the kids can and preserve. On the last tour you showed us your nasturtiums. You may want to harvest them and the flowers to freeze dry. They make a fantastic wasabi/ horseradish sauce or past for beef, or chicken. It's very tasty with just enough kick or zing. And the bite is 1/2 the strength of the fresh leaves. I've been dehydrating mine for a long time and even have a Italian seasoning salt mixed up. I actually use it in my pizza dough in place of the salt. I hope you try it!

Chelsea, I bought your cookbook and it’s lovely but I misunderstood what recipes were in it. I thought there was some canning ideas and there was not. You can cook your ground beef and drain the fat and freeze dry it and when you go to use it in sauces and things you will be surprise of the results

Chelsea, glad that rain helped scour out some of the smoke. We had some roll down here from those fires last week and oh my, the smell, throat and eye irritation was so awful. May those fires end soon! Garden is still so vibrant - great video and love that new canner ❤️

That's NOT a dumb question. I'm curious about that too. We have a three stage knife sharpener that we use but I'm curious what she uses as well

This was a very, very informative video. In all my years of canning, never have canned meat. Widowed, now, & kids way grown & on their own. But, it was fascinating nonetheless even though I’ll not can any at this stage of life. But, how wonderful for the younger folks who will get much helpful information thanks to your expertise 👌
Love your new canner. My first new canner I got was a all American I bought it 1997 at northern hardware in PG I still love it. Recently I picked up a old one similar to your old one…but not a all American. I did what you did but all new things for it. Anyways hope you had fun at the fruit stand, I love that place, I just got peaches from there a week ago. Anyways cheers Chelsea, and thank you for sharing🌷🇨🇦
Good video! That is so cool that you had the part for that mower! A friend of mine runs older equipment, will have to keep you in mind should he need something! LOL. Saw some cabbage in the store yesterday that were at least a foot across. I am trying to grow some that large as well but with the rain had some more split. Oh well. Without my netting though, despite my dusting, the loppers have moved in. Still happy with brassicas this year though. Amazing that even after draining the fat that there is still a fat cap. Looks good.
Congradulations on your new canner. It will last you a lifetime! That is the same one I have and never had any regrets. 😊
