    Today in the garden we are bending the neck of our onions to prepare them for harvest and then curing and storing for the winter. All of the children help me get this job done quickly. I then spend the rest of the day working on preserving our zucchini, squash, and cabbage harvests. I am trying 2 new methods of preservation today. I am making zucchini and squash chips in the freeze dryer and learning how to store cabbage in the root cellar. I am really hoping both of these methods work bc they are both so simple and quick.

    I found 3 things about having a swimming pool. 1. The kids started bugging me to let them swim about mothers day. But I let them swim on Memorial Day. It was still COLD lol. 2. By the end of July; they were over it. 3. By having one of the few pools in their friend group; their friends were always over to my house. I got to know them and could always know who and what was going on in my kids lives. Especially great as they got into high school.

    I went thru a very similar situation that ended in divorce. It broke me. BUT God is a redeemer!! He heals and provides!! I to worked very hard and rebuilt our lives! We find out how strong we actually are!! My babies are grown now and turned out awesome!! Some of the hardest work I ever did, yet so rewarding, was raising and loving them!! You are blessed Momma!

    Have you ever made Cabbage steaks...
    Cut them an inch or so thick..Put on baking sheet.
    Drizzle EVO, salt pepper, add cheese, bacon bits, spices, sun dried tomatoes etc
    Whatever you like, then bake until cabbage is done.. Yum

    Tip for those with migraines and love onions, eat fresh onions, or when you grow your onions do not dry them, harvest them fresh and wet and cut and freeze them. Tyramine in onions and aged foods are a migraine trigger. A trigger doesn’t give you a migraine every time because the brain makes migraines at a threshold. Various things are triggers, let’s say your threshold is 5 triggers, so one day you are tired, it’s hot, you are about to start your period, you eat an aged cheese onion soup and bam migraine. But on a well rested stress free day you can eat more freely with no migraine. ❤

      Hmm, as someone who has suffered with migraines for almost three decades this is so true. I have hemiplegic migraines too so that is no fun.

      @@servantwarrior880I’m so sorry! I’ve got mine under control with the migraine diet…except the 2-3 days before my period, the hormones are too strong most months. My husband’s migraines are completely gone, he used to get one a week.

      @@cjdflkjave You tried ibuprofen? It is an anti prostaglandin and it may help. Start taking it 2 or 3 days before you expect your period.

    Bri- I understand how you feel about motivation..I struggle to with the tasks I don’t enjoy! Your doing such an amazing job with the kids, home, garden, and all the other things needed to raise a big family…and doing it by yourself…impressed! You deserve to take time for yourself..don’t forget to do that! Love that the girls get some fun time too, they are so very helpful and I know all the life changes they have gone through lately is hard on them too. Your family is absolutely precious!     Cabbage dies freeze very well. Just don’t defrost it. Use it straight into boiling water or stews but not for salad

    Hi Bri, I freeze cabbage. I remove the outer leaves as you do and cut in quarters removing the core. I slice into about 1/2 inch sections or 1 inches is ok. I stuff into quarter size labeled freezer bags for 2 people. I use in soups, stews, braises or fry up with bacon and potatoes. Perfect! Hope this helps.
    I have also read you can freeze a whole cabbage head and peel off each leaf and use for stuffed cabbage rolls. I have not tried this method. We love stuffed cabbage rolls but I boil each cabbage leaf and stuff which is very labor intensive.

      Never knew you could freeze cabbage till Bri mentioned it and reading your comment. Thank you for the tip. I guess one is not too old to learn and I know one never stops learning no matter what age you are. What is nice is I am 65 years old and have learnt something new which I now can pass onto my children. Thankyou Bri and Susanclark7872. I then can presume you can do this with red cabbage too.     Your garden harvest is amazing!
    Here’s a tip for using zucchini. Grate it to cook in taco meat, sloppy Joe meat, spaghetti, or meatloaf. When it’s cooked grated you really can’t taste it!

    It is great that the older children can and do help with the toddlers. It can be overwhelming at times but it seems as though you all seem to pitch in when the separate task present themselves. Beth was only 4 and 1/2 years younger than I. But when I left for college I know she was a big help with my Surprise Brother. There is almost 15 years in age difference between he and I. I thought it was remarkable that mother could keep up with my brother Chris at 36. But she did have my sisters help.

    When making squash and zucchini chips you can season before freeze drying with many options- ranch, bbq rub, dill seasonings, cheese seasonings like used on popcorns. Any flavored powdered mix or spice mix you can think of that you might like can be done. My friend did a cheddar and. sour cream on zucchini and her kids loved it.

    Hey Bri, you’re doing such an amazing job in this new garden! Wow! Quick suggestion with the squash and zucchini, I’ve been seeing quite a few folks with freeze driers use their spiralizers (sp?) on them before freezing and it makes great zucchini bread. Just a thought if your kids don’t like it much other ways and it’s easier than grating. Xoxox

    Thank you for sharing about the wrapping the cabbage. I didn’t grow them so I’ve been getting from the farmers market and wrapping them like you showed. I also put the date on the bottoms so I remember when I wrapped them.

    I used to put my veggies and apples on a layer of wheat straw then cover with more then another layer of veggies and so forth. I suggest you cover those vents with plastic or whatever and then use a dehumidifier. Moisture and heat are not your friend when storing.

      It isn’t hot down there and from my understanding some moisture is good. Ventilation is actually necessary to maintain air flow and to keep mold from growing. This crawlspace is very dry.

      Maybe you. Old put a dark cloth over the vents to keep a lot of the light out, but keep the air flowing through?

    If there's a Farmer's Market nearby, or maybe a CSA, you could probably get strawberries for much cheaper and then freeze or freeze dry them. Just a thought. I think it would be great content to show people how to buy from local farmers to help add to your food stores. Many people don't think to buy in bulk from local farmers to can, freeze, dry, freeze dry, etc.

      Where I live, local farmers are not cheaper. However, buying bulk from azure is. I know folks that have amish and mennonite farms around them can get amazing deals on produce, but we do not have that here.

    When I was young and had a big garden I remember it was
    "bend the necks by patting the greens down with a broom." They will bend without cracking. Give them a week or two (weather) for the greens to ripen back and harvest.

    I shred cabbage, blanch it, ice water, drain and freeze it. I love the convenience. Sour krout is the other way I preserve it. I learned fermenting from your family farm a number of years back.
