      You will absolutely love freeze dried mashed potatoes! They taste just like they did before freeze drying. Some advise though. Put silica gel desiccant packs into them. I didn't do it with my freeze dried apples and they stuck together really bad. I had only used oxygen absorbers. They still tasted fresh, but they stuck together bad.

      Hi! I saw a tik tok that showed scoring the peaches then putting them in the freezer overnight, leaving them out to thaw the next day, and the peels just slipped off! No hot peels to deal with! It was for tomato’s instead of peaches but just FYI it might save you some time! :)

      I ordered the electric canner from Amazon. After waiting all summer for it, because it was out of stock, it finally arrived and the bottom was broken in pieces. I was so disappointed, of course I got my money back but I’m reluctant to order it again.

      Thanks for sharing the hotsauce recipe! I would love to make some for my husband and I. Our kids are in a phase of thinking everything is spicy so I'm hoping having yummy flavours for us to add to our own plates will jazz up the sometimes bland food I have to make. I'm in total awe of you being able to eat all these things while pregnant. I could barely look at a tomato without getting heartburn while pregnant let alone eat anything spicy!

    I've been feeling overwhelmed looking at my kitchen table and sunroom that have 20 lbs of peaches, 70 lbs of tomatoes and 2 5 gallon buckets of apples. Watching your video gives me inspiration to just get it all done

      I'm not sure if you're able to, but my mom found it much easier to stay motivated to do her food prep and preserving if she invited over her friend or my aunt. They would make it a team effort and spent any down time (during canning or waiting for things to cook) hanging out and sitting and chatting. She said it helped make the tasks not feel so big and overwhelming.

    I just gotta say it. You are one of my FAVORITE youtubers. I am 23, about to graduate nursing school (NICU here I come! Already got a job!) and I cannot wait to be able to start my garden. It's gonna have to start small, but I have huge aspirations to one day be able to provide for myself and eventually my family in the same way that you do. I will be giving myself a space to enjoy that is outside, in the sun, in nature, an amazing form of exercise and fresh produce that I know exactly where it came from and how it was handled. I have found you to be a huge source of inspiration for me and I really wish you guys nothing but the best :)
    Since it's still gonna be quite some time until I can afford enough land of my own to have a nice garden like this, I have been doing as much research and taking as many notes as I can on how to care for and process different produce so that it's not as big of a hurdle once I finally get to start :)
    You are SUCH an inspiration :)

      Some unsolicited advice. As a NICU nurse you have to be careful not to allow your job to consume your life.
      Make sure to enjoy your days off and realize the babies need you to be happy and healthy as well.
      Also don't forget to keep your relationship going with your friends and family.
      Get married asap. No seriously a decade will pass extremely quickly. Getting pregnant is very difficult in your late 30s.

      Excellent job and congratulations!
      While you are doing your research make sure to put some of it to use.
      Try growing some things in pots or a Greenstalk planter and get some supplies to start learning to can.
      You can buy produce from a farm or market like Becky to learn on.
      Jess from Roots and Refuge started learning to can with blackberries she picked on the side of the road outside of her town.😊

      @@anonomas6126 Thank you for your words of wisdom. You made a really good point about the babies needing me to be functioning well too. There really is something to be said about not really being able to give your all when you are struggling. That being said, my mental health has quite literally never been better than it is right now :) I know that will change with time and as life hits me along the way, but I have really worked WITH myself to get here. Now the challenge is maintaining that. Thank you for the insight!!! As for getting married…. I currently have an amazing boyfriend who would give me the world, so if things keep going this way then that will be in my future at some point :)

I was hesitant over the past year due to not knowing what the sun exposure during the day was going to look like since I’ve been moving frequently because of college. But I’ll be going back home soon… just in time for spring… I think I’m gonna invest in some strawberry seeds. Thanks for the much needed push :)

    I NEVER time peaches (or tomatoes) when I blanch them to peel. The peaches tell me when they are ready to come out of the water. The skin starts to pull away where I put the X when it is ready. Every fruit is an individual. Some are ready before 30 seconds while others need 120 seconds.

      Same here...and honestly, I don't even X them. Both tomatoes and peaches will start to peel not matter what and you will know when they are ready.

    Our neighbor was an avid gardener who used to share his bounty with our family of 8. I vividly remember him sending us bushels of apples and my mom would send us back with a couple of homemade apple pies. And he would feed me from the garden when I followed him around..

    The reason your raw pack peaches float is because the raw peaches still have air trapped within the fruit. Cooking them in the syrup you are going to pack them in ahead of time releases the trapped air so they don't float. They shrink during the process and yes, you can pack more fruit in the jars to can. It’s a matter of preference. I prefer raw pack over hot pack. I want my peaches cooked the least amount of time possible.
    P.S. You are a freaking rock star! You should be very proud of your accomplishments. Bravo!

    25 feet of grease! That sounds unreal, I did not know people actually poured grease down the drain (it was drilled into me by my parents to never do so.)
    My dishwasher stopped working too! (Our motor died). The joys and perils of modern living. Really enjoyed, as always, all the preserving and canning steps.

    When peeling a large amount of garlic I put it in a dish towel and rub it between the layers of folded towel. Learned this working in a restaurant kitchen.

    Hey darling! You are accomplishing sooo much in so many areas. I only have one suggestion about your canning. I noticed that you were using a metal butter knife to debubble your canned peaches. I was taught to never use anything metal in your jars. You can easily Crack or chip your jar and never know that it cracked, not until it breaks while it's processing. You work so hard, I would hate for that to happen to you. Pam in South Carolina

    Everything looks so good! I just finished canning 50 quarts of peaches myself. I tried something different with my peels and pits this year- I used my steamer and created peach nectar to make peach jelly and juice to drink.

      We did this last summer in our steamer with peach peels and apple peels. Made yummy jelly. :-)

      I made peach scrap jelly at the same time I made mesquite bean jelly. So as an experiment, I mixed some of each juice to make a blend jelly. So good! If anyone is in the southwest making mesquite bean jelly, mix some peach scrap juice with it- it’s a phenomenal combination.

    You will get more success with blanching if you put fewer peaches in each time (I do 5 at a time) and add ice to your cold water. When you put too many in the peaches the water won’t reach the right temperature for blanching in time. As for the cold water, regular cold water heats up too fast, and the peaches don’t get the chock, plus you risk that they continue cooking. I usually get a big bag of ice for food preservation season. That way I always have it in hand for blanching.
    Also, thanks for the tip of garlic confit, my family loves it.

    i know it was already mentioned but for anyone who may have missed it: it’s extremely important to NEVER fill your blender more than halfway if you’re blending hot liquids. keep your blender lid on and never lean over the blender when you turn it on unless you want 2nd degree burns. becky you are so lucky you didn’t get hurt!

      @@happydays1336 I've heard of blenders exploding with hot liquid in them, I don't think you're supposed to use very hot liquid, cool the liquid down a little before you use it.. Please guys, for safety's sake..

    When you blanch stuff it needs to be a quick process, straight from the pot into ice water fast, not into a separate bowl taking your time. The whole thing needs to be under a minute total. It will save you having to cut off half the peel

    If you want to make pies for the freezer easier than you made today, just make your crust put in pie pan make your pie filling exactly like you were going to bake, place in pie pans add second crust place on sheet pan put in freezer for an hour or so then wrap in parchment paper wrap in foil and you will be amazed when you bake a fresh blackberry, peach or blueberry pie in the middle of winter. I’ve done it for years and it really is so simple. Also you can go to goodwill and buy pie pans for cheap if you don’t want to use throw away pans. Thanks for your videos

    Becky, I use 1/4 cup of vodka to replace some of the ice water and the crust is so flaky. It seem to inhibit the formation of gluten. 🥰

      I live in Auckland and have Mesclun, Pak Choi, Spinach, Spring Onions, Mint and Lettuce growing really well! Lemongrass, Basil and Beefsteak Tomato seedlings getting started too. All in containers and in a sheltered North facing courtyard. So enjoyable

    Everything looks delicious but, that peach pie filling, oh my. My mouth is watering looking at it! I recently made my own verde salsa, thanks to you, and canned up what I wasn't going to use on the chicken I made for dinner that night. It was my first attempt at canning and they turned out beautifully. Thank you for sharing your homesteading adventures. You're such an inspiration.

    Becky love your videos!! Please research venting your stove if it’s propane. It’s not a building code in many states but it affects your indoor air quality, particularly with elevated Carbon monoxide levels.

    20 feet, that's probably all the way to the tank, if you have one. Hot greases typically would solidify in the last five feet of pipe before the tank. I would have the septic jetted from the tank or clean-out back to house to make sure that you don't have this problem again come winter. Good luck!

    How I like to preserve my cilantro is a toss is in the food processor with some olive oil and make a paste out of it, then I freeze it on a tray in small balls. Once frozen I put them in a ziplock bag. Ive had it last for over a year that way. You've been super busy but next cilantro harvest maybe give it a try 🙂

      @@teniaosayande6355 You're very welcome and I hope you like it. When I add to to my guacamole or Pico de gallo it still tastes pretty fresh. You can also do this with basil and chives. Ive never tried with other herbs yet.

    Word of caution: blending hot contents in blender can cause it to explode, especially if the cover is on. Happened to my daughter and the kitchen was a complete mess. Luckily, she did not get burned.

      I was nervous watching her fill the blender that much. I’d definitely let the sauce cool a bit first and fill halfway. I’m usually overly cautious though haha!

      I was always taught to hold the lid down with a towel. My Mom blew up a blender with hor sugary fruit.... Got burned. It looked like blood all over her when she screamed... And I thought shed gotten her hand cut in the blender!

    I agree with keeping pie crusts in the freezer. I’m not a big sweets person when it comes to pies but pot pie, now that’s one of my favorites haha. It’s tradition that we bring a few crusts to my aunts on thanksgiving or the day or 2 after and we use leftovers to make a pot pie for each of us. Not only are they delicious, they help us get rid of leftovers so we never have any food waste anymore. But it also gives us another excuse to visit each other and have a second thanksgiving almost haha. My son and I go over, always in comfy clothes, we eat some leftovers, relax and let that digest before we get to work. Then once all the work is done and they’re in the oven we usually relax and play a board game or work on a puzzle. I think day after thanksgiving is my favorite holiday haha. It just makes my heart happy and it’s a tradition I’m glad we started.

    Le Cruset makes a Revolution Wire Skimmer I bought it for when I make strufoli (Italian honey balls Christmas time dessert). That may help you get those peaches out easier that the all clad spoon. If the prior owner put a lot of grease down the drain if you have septic I would get it pumped now just since they were putting grease down a drain which is a No no you don't know if they used septic safe toilet paper and it can mess your whole system up.

      When i had septic issues ( not grease related) I had to call a guy out to fix it. He gave me some advice. When the old owners move out they need to take ALL of their sh*t with them!! Meaning if you buy a home with a septic, ask that they pump it out before you buy it. It can be worked into the contract.
      It ended up that it didn't matter if they pumped it out because the tank had various issues and we had to replace it. 😬 But I just wanted to pass the info along for others who may be buying a home with septic.

    your hot sauce looks so good! the reason why your blender exploded like that is bc you put too much in there and sealing a hot liquid will cause that explosion bc steam expands things, including liquid. if you didn't have that stick in there and started it with a dish towel over it, steam could escape and not cause an explosion 🙂

    I got courgettes from a neighbour today too.😁 I saw someone caramelized and canned onions, that would be so good for your big cooking days and you could do it with the onions you don't think will store long term 🥰

    Just a tip for the future if you’re doing peaches again, just cut them in half, twist out the pit and put them cut side down on a baking sheet. Broil on low for about five minutes and the peels will just pinch off. That way you’re not trying to twist pits out of sticky slippery peaches. Same works for tomatoes!

    13:30 I have never cut the skin before blanching my peaches. I'll have to give that a try and see if it makes them easier to peel. They come off pretty easy as is but maybe your way will make it a little faster.
    23:00 I keep a few plastic containers full of water (turned ice) in my freezer for blanching. Ice cubes melt too quickly.
    42:00 I've been using "green bags" for years. They really do prolong the freshness of veggies. I sent some to Kenya w/ my missionary friend too. She was so excited to have them. She only shops at open air markets where locals sell their produce/products. (She told me how they have live chickens in the market. you choose the one you want, and they butcher it on the spot. The customer gets to pluck and clean the bird)

    Does anyone else watch canning/preserving videos while canning/preserving???😜. Today I’ve been at it AGAIN with tons of jalapeños & cayennes. I also had apples that needed using up so apple jalapeño jelly 27 1/2pints -then chopped another big basket full of jalapeños. Also did a big batch of hot dog chili sauce😜
    I feel kinda like I’m canning with a friend while watching and love getting great ideas and recipes! Thank you Becky for hanging out with me today😜
    I made garlic jalapeño hot sauce & cayenne hot sauce a few weeks ago-dehydrated the pulp-it does make awesome seasoning!!!

    I love canning peaches (peeled and quartered) in a very light syrup. We eat them in a dish with some of the juice in the winter. If I want to make a pie I just need to thicken the juice and add the peaches...pop it into a crust and voila! Love seeing all your preservation.

    I like to put the peaches in a bowl with lemon juice so that they keep their colour while I’m prepping them for canning or baking...they tend to brown if left on a cookie sheet like that.

    Suggestion. Get a small bucket to put beside you on the floor for compost items so that you aren't taking up your work space with a large bowl.

    Yah! I absolutely hate it when our sink goes off & starts leaking or backing up or anything!!! I am sooooo glad it all worked out! I love peach things! A couple weeks ago I got a great deal on peaches, (I do not live out on a farm but in a sub division so I look on to your RUclips with awe!!!) & I made refrigerator Jam out of them! The jam tastes like fall! I live in AZ so it is still HOT here! I love canning stuff! YAH! Everything you made was from the heart! I love that! Keep Smiling Becky!!! 😁

    A trick I recently learned with peeling fresh garlic that I thought you might appreciate since you processed all of the awesome garlic for your hot sauce... Take as much paper off as you can and separate them. Put in a bowl and pour boiling water over them for anywhere from 1-3 minutes. Then when you cut off the end end of the clove the peel comes off so easy. Why has no one told us this before!!! I've been putting more garlic than usual in everything because its so easy to peel!!!

    I have used Debbie Meyer green bags and boxes for quite a few years. They really are so nice at keeping fruits and veggies and bread and cereal fresher and longer.

    I have found it is difficult to peel and pit the peaches when they’re not quite ripe. We picked up three bushels and I put them up in three different batches as they ripened. It diversifies the work load while making it much simpler and prettier peach slices. It also draws fruit flies but I’ve not had a preservation season without those anyways. 🙄

    Hey Becky, the peach skins will peel off easier if the don't cool too much. Have you ever tried to cut the peaches in half horizontally? It's much easier to get the pit out that way, give it a try. Really enjoy your channel! Love how you just dive right in on things and figure it out as you go.

    We have peach trees and I love when it's peach season. The reason your peaches didn't peel well or come off the pit is because they were not ripe enough. I think they could have used another couple days to a week of ripening on your counter. I usually put mine in paper grocery bags and let them sit.

    The peaches look mouth-watering! For what it's worth, I have never found it necessary to cut the cross in the bottom of the peach before blanching. Simply blanch the whole peach, then poke the tip of a knife in next to the stem and lift a section of skin - peels beautifully.

    Blended can peaches are awesome when baby starts to eat. Both my daughter’s loved home made can peaches blended up. You might want to can a few for your little bundle of joy that is coming.

    I've canned peaches for years and never cut a crisscross on them. Have just dipped in boiling water for a minute and have never had trouble peeling unless they weren't ripe enough. Very interested in the digital pressure canner!

    Oh Becky I love your channel. You need to check into clear jell instead of flour for your pie filling and you bought cling peaches that’s why they stuck to the pit.

      My family has started to avoid corn and corn products like nobody's business! Turns out corn is inflammatory. Our arthritis is noticeably improved. Good for improving any joint pain. (Like in pregnancy?🥰) Wheat, all the way!

    I found your channel about 2 months ago. Since then I have been playing catch-up trying to watch your current videos and also old videos. I love your channel and I am always amazed at your talents in the kitchen and gardens. But, Today’s video was so special.     I'm learning so much from you and all your videos, thank you, Teacher! 😊 I notice you use plastic for hot liquids and I would be concerned about the chemicals from the plastics leaching into food. I have been avoiding buying a blender for this reason as I'm having trouble finding one with a glass (or steel?) container. I have mostly de-plasticized my kitchen. I have never canned anything in my life but your videos are so inspirational that I am planning on getting started--just have to get equipment and supplies gathered. I live in a small northern town in Canada so it's not easy to find some things. Will have to check out the big ordering place online I guess.

      I can imagine it would be quite difficult to find a non plastic blender! Have you tried using an immersion blender? It’s not quite the same but it may work until you find what you’re looking for. Just a thought☺️

    While I was watching this I heard you say that the Walla Walla onions don't have a long shelf life and I wondered why you don't chop them and put them in your freeze dryer, that would give them a very, very long shelf life.
    If I had a freeze dryer, that's what I would do. Right now I chop up and freeze a bunch on cookie trays and then put them in freezer bags or containers to store and use as needed throughout the year. It's a nice time saver for me, chop up a whack load a couple times a year and have ready to use onions for any meal and we do the same with our peppers too. :D
    Looking forward to your next video. I'm new to preserving, still haven't started canning yet as it intimidates me more than I care to admit, but I'm learning a lot from your channel, that whole making extra and freezing it when it comes to meat, etc... never occurred to me before I started watching your videos and as soon as you mentioned it I almost smacked my head like in the old "V8" commercials for not thinking of it myself. LOL! :D

    I have to share. I checked on my garlic yesterday and a lot of it started going soft and I was so sad. I decided to try to preserve it and made some crispy garlic in chili oil. I had the corner of a jar of the S&B umami topping (which is amazing on everything BTW). And used it as inspiration for those little nuances like a touch of sugar

    Miss Becky just a little advice when you are boiling anything on the stove dont remove the liquid you need just take your wooden spoon and place it across the pan stops all from boiling over!! love watching you !!!

      That has never worked for me, not even with starchy potatoes or pasta. I just end up with a scorching hot, wet spoon to handle on top of the boiling mess.

      Get yourself ceramic “no boil over” pot disks. Cheap and incredibly effective.

    If you ever have to cut the pits out of peaches, you can save the peach pits to make peach jelly! We boil the peach peels and pits in water to make juice, then make a peach juice jelly recipe 😊 then we give whats left to our chickens!
