Absolutely 😂😂😂 one time Becky from acre homestead had been cooking and accidentally threw her rubber spatula behind the stove.. about a week or 2 later she was complaining she couldn't find it.. I reminded her.. it was hilarious.. she just ordered new ones from Amazon cause her husband still hasn't retrieved the list one 😂😂 I just can't get on board with the egg cups.. I can't stand cold eggs and reheated eggs just seem to have a rubbery texture I can't get past.. I have tried all types of fillings but I really think it's the eggs themselves that throw me off. I would like to try the granola bars tho

Hello, I've been watching for some time now, and I don't normally comment, but i am also very lactose intolerant, and I have recently learned some information i would love to share with you. I had a gentlemen that was working at cheese counter at one of our local grocery stores and he informed me that, those who are lactose intolerant should be able to eat aged cheese as long as it's been aged for 8 months or more, because the lactose naturally evaporators during the aging process and the grass fed butter should be ok to use because it's usually the grain that is ged to cows that people can't tolerate. Hope you found this useful.
Hi Sarah! Lactose is a milk sugar, and sugar does not evaporate, neither naturally, nor any other way. What happens is, bacteria in cheese are able to break down that sugar, the lactose (it's like they eat it). So the longer a cheese is aged (and harder it turns) , the bigger the amount of lactose the bacteria present are able to get rid of, to levels that become safe for a person who is intolerant to it. Butter contains very low levels of lactose, either the grass fed butter or the other, because butter is mostly a solid mass of milk fat with very little watery substance in which sugar (lactose) can dissolve, so grass-fed or not, the levels of lactose in butter will be minimum. What grass-feed butter won't have is certainly all the nasty chemicals, the ones that come in the grains and the ones that are added to regular butter for conservation and colour. It will have a higher quality of its fats and more vitamins (A, E and K). It's the absence of added chemicals and the good quality fats that make it easier to digest - and tastier!
Yup!!! lactose intolerant here. I can eat cheeses from Britain/Ireland more they are more of a pure product. Tillamook cheese is good too. Lol! Raw milk doesn’t upset my stomach either. Its been interesting experimenting with different cheeses, of course everyone is different.
For the egg bites- look for a recipe that adds cottage cheese. Sounds strange- but def changes the texture. So good!

I love the ones from Starbucks (WAAAAY too expensive though) and the closest recipe I can find to those use cottage cheese (which bumps that protein up too). I also did some more research and baking them in a ban marie (pan of water) gives them a much more custardy texture.
I use a Starbuck's copycat recipe for our egg bites and change them up with what I add, yet always include the cottage cheese,as it does make for a wonderful bite. I also blend all the ingredients in my blender.
And I bake mine in a water bath. The texture is so nice!
I often make egg bites. I put the spinach or other veggies directly into the muffin cup and then pour the egg mix over the top. That way, I am sure it is evenly distributed.

When I make granola bars I add egg white to hold it together. Learned it from a old baker. Makes it hold together & crunchy. Love your videos.

Blend cottage cheese until creamy and ad to your egg bite. Delicious
For your granola bars, use dates!! Super healthy, they add moisture and great texture!

I make egg bites in large muffin tins. I add spinach, broccoli, cauliflower, sometimes if i have asparagus. I also add onions and peppers, bacon bits, cheese and eggs. Love them . I eat every day. Freeze some. Love it. Love your channel
I have been making egg bites for a couple of years now. I add cooked ground breakfast sausage or cooked and chopped up bacon and I always add grated cheese of some type. We like the 4 cheese Mexican blend. But have also done others. I also add onions chopped small and broccoli chopped up too. There is no limit to the different types of egg bites you can make.

Diced ham ( I usually just use deli ham since it what I tend to have on hand) and a little Swiss cheese is wonderful in the egg muffins. Bacon and gouda is amazing! Sausage and cheddar with caramelized onion is great. You can add in a little chopped scallion or onion or green pepper if you like. Finely chopped broccoli and a mild cheese is nice too, but you may want to cook the broccoli a little in advance if it isn't tender enough for your taste. It is a great way to use up leftovers from last night's dinner.

I just made egg bites yesterday. The silicone liners make all the difference. I will never make them without liners again. I made sausage, onion, mushroom, broccoli, potato, cheese and egg. I cook all the veggies and meat first to reduce the moisture so they don’t get that funky texture. I have no issues with freezing them and reheating. The best part is they are completely customizable to your combination preferences.
I did them with no liners and they worked well. It probably depends on the muffin pans you have.
I’ve been using an egg bite recipe that you blend up the eggs in your blender with cottage cheese and shredded cheese for extra protein and then I’ll put my ‘extras’ in the muffin tins so that each has even amounts and pour the egg mixture over. Great recipes........I used to make breakfast mini corn bread muffins with sausage, onion and feta crumbles (or shred cheddar) cheese. I even scrambled eggs and added to the batter. Always a family favorite.
Hi Chelsea, I make granola bars, and I increase the honey... and definitely put the parchment up the sides of the pan.
You can use sweetened condensed milk as a binder but it adds a lot of sugar. I use the sweetened condensed coconut milk from azure
Something I will do for my kids is stuffed waffles. I make waffles batter, then put cooked sausage and cooked scrambled eggs and some cheese in the batter and cook. I will also make a breakfast pizza with cream gravy, sausage, bacon, scrambled eggs and cheese. They have no problem eating leftovers, if there are any.

I slightly melt one cup of each nut butter and honey together which holds the bar together. I also add finely chopped dates, chia seeds, pumpkin seed, sunflower seeds, or anything that provides a little protein.
I add pesto when making egg muffins... very yummy

I have the exact same oil sprayer. I love it! It doesn't use propellants, and you can use any liquid oil. I use olive oil in it for almost everything as well.
Best binder gor granola bars is honey or brown rice syrup or chia seeds or flaxseed or nut butter

For Egg Production: Add supplemental light to your chicken coup. We are down to less than 10 hours of day light in my area. I add enough life using a timer to total 14 hours of light. I buy a good quality layer mash and add oiled sun flower seed, oats, and cracked corn. I make a freeze a suet block, and add one a week to the coup.
I add the light after my chicken malt in the fall, and remove when day light returns. Egg production slows a bit, but still 14-17 eggs a day from 21 hens.
I bought one of those sprayers a few years ago. They're fantastic! You can also just squeeze the sprayer's trigger one time and it will keep spraying for a while...you don't have to repeatedly spray in small 'squirts'.
Love your videos. I will be making egg bites, use to make them in my insta pot. I have 4 of the spay bottles, for olive and avocado oil and vinegar and balsamic vinegar. I bought a green one so I can tell the olive oil from the other one.
I make a lot of egg bites. It is much easier and more uniform to mix your eggs separately and put your ingredients in each muffin cup. This also allows you to make different flavors.

I bought one of the spray bottles a year ago and said the same thing. I was looking to do the one from the Amish. Some day I will buy a cookbook. I love old cookbooks and try to buy ones I will use them.
I've made egg bites before and added crumbled cooked sausage or bacon. Also, parmesan cheese tastes great with them also.
looks yummy. I add greek yogurt or cottage cheese and blend it makes the bites creamer and gives more protein.
Hi Chelsea! Happy New Year! When I make egg bites, I put the add in on the bottom of the cup and just add the egg mixture. That way I can evenly distribute the “good stuff”! I use broccoli and cheese, or bacon and mushroom - yum .

Have any of you wondered if a few years down the road we hear about side effects of silicone like we did with Teflon. I’m not meaning to sound alarms but just wondering if anyone else has concerns about it
I don't use it a ton for that reason.
years ago Drs stopped using silicone because of problems ,I am like Chelsea now..I started to say cUSING CANCER BUT i REALLY FORGOT...BUT i DONT USE silicone anyway..Many years agao maybe 50 or more,I bought Wilton cupcake pans 4 of them...and they still look and act brand new...they have been used a lot...baking for my sons classroom and holidays .well used...

Hi Chelsea, happy new year to your family! Health and happiness for 2025. You made me laugh with the cooling on the porch! I do the same in the Maritimes 😊. For the egg bites I agree that cottage cheese ( I blend it before) helps the texture and adds extra protein. Adding a water bath in the oven helps a lot as well with a more velvety texture. Hope it is helpful 😊

Your bars sound delicious, as do the egg bites. Regarding the bars, take your bars out of the pan and place them on a sheet tray over parchment paper. Bake like biscotti. This will dry them out and crisp them up and they will hold together. As for the egg bites, if you use your instant pot, stacking the cups up on the trivet or the cups sold specifically for this purpose, they will be more like the ones TH and Starbucks sell. There are recipes out there for the sous vide bites using the IP that work well. Perhaps Dan would like some bacon or Canadian bacon in his? We love them this way.

Use date (paste) in the granola bars to help stick.
I put honey or molasses in my granola bars. Just a little bit helps bind them together.

You could put bacon in the egg bites and add your choice of dried fruit. Like Apricots or prunes in energy bars!!

Don’t try to freeze the egg bits they get so dried out and a weird texture when you do but I did see where you can add cottage cheese or ricotta cheese it’s supposed to help with moisture. They say so blend it on to become more of a liquid. I have silicone muffin pans and they puffed up also. Also try putting sausage or bacon in them.

I melted dark chocolate in the bottom of my granola dish, let it harden, then put the granola on top…it seems to help with them holding together!

With your new oil sprayer you could spray your cup before you put the honey and syrup and it slips right out no need for the spatula or the finger😊

I use old fashioned oats and double the maple syrup or honey.
My egg bites I put ham, peppers, shredded cheddar, or swiss, chopped mushrooms and green onions.......sooooo delicious, so much better than Timmies. And I add the ingredients to the silicone cups then pour in the eggs
I use 1/2 quick oats & 1/2 old fashioned oats in any oatmeal cookie or granola recipe. If I don’t have quick oats I chop old fashioned oats in my food processor until quick oat size.
I have the same silicone muffin cups. Great for dipping sauces as well. Just an FYI, don’t run them through the dishwasher. They absorb the soup and will make your food taste soapy. As me how I know 🤣🤣🤦🏻♀️🤦🏻♀️

You could try psyllium husk powder and chia seeds to hold together better.
I have a bunch of those silicone muffin cups. So easy to get stuff out of and easy clean up. Not sure why your muffins did not rise as good as the others. I have no problems with anything I make rising properly.
I make egg bites and add cottage cheese, shred cheese and diced red peppers. I cook them in silicone cups but they are smooth edge not fluted and I don't put them in a muffin pan, I just line them up on a cookie sheet. Mine are usually pretty consistent in size. For the granola bars, would mince meat help hold them together?

I make my egg bites in the instant pot. Done in minutes.
Add the solids into the muffin cases first. That way all of them have the same amount. Then add the egg mix last.
