Well after over 40 years of making sauerkraut in a 10 gallon crock, why I never thought of putting a leaf on top to help hold it down. Learnt something new today👍😀
Whew! That was a lot. And a lot of fun to watch. ❤️ I’ve canned 17 quarts of spaghetti sauce, 12 pints of bread and butters and 14 quarts of dills. So far. ❤️❤️

Hello from West Virginia ,US .I'll be starting tomorrow on doing 3 bushels of white peaches for the freezer , and 1 bushel of yellow peaches to water bath can . I hope everything turns out I haven't canned in a few years but I'm confident it will be ok. All of your canned food looks so good .
We have a large straining basket for our blanching pot .....you just dump the veggies into cold water and then load up and do the next batch in the same hot water!!!

I'm in a bit of the same place today. Corn had to be picked this morning. Juice tomatoes have to be picked and put in the roaster. I have 5 pints of corn in the canner and will be making corn relish after I take my granddaughter to volleyball practice. Then I'll be turning the tomatoes that have been cooking overnight into enchilada sauce.
I have a Cusinart Food Processor and it’s a workhorse but the model is not one of the 2 that their chopping blade fits . I love the heavy base of my model , it stays put .
Hi Chelsea! Just wanted to quickly say how much I admire you for so many things…. Your talent in the garden and kitchen, your sunny disposition and . your (hard) work ethic. You and your husband are the finest examples of how to farm and raise a family. My envy runs deep😉 I do a little canning still at 67 yrs. I have access to wild blackberries here in southern BC so I made blackberry jalapeño jelly. Sauerkraut is also my favourite. Thank you for all you do! @donnadennis5536 - Yes, Chelsea is amazing! I think having a large family and a supportive husband goes a long way to motivate. And I hope her children are able to lend a hand when possible. So much fresh healthy food in their larder is wonderful. I am 74 and still gardening, but cutting back. We raise grass fed beef in Central ⛵Lakes Region New Hampshire. My husband just turned 79 and my brother-in law is 76. They work our 350 acres, comprised of 40 acres in hay fields and commercial logging and firewood, with 50 head of polled Hereford. Our garden used to be huge, but I am now supporting local farmer's markets as much as possible. Its one way to give back to the community and it gives me a break to pursue other endeavors, like art and a bit of traveling the area. Just took a trip to Vermont to King Arthur Flour store with a neighbor. That was fun! If times warrant that we go back to more gardening, we are equipped to jump back in. I would be open to raising chickens for eggs and meat, as well as meat rabbits. Trout fishing is good here. My neighbor and I could get together and do some serous canning. Its all good. Chelsea does inspire me to try new vegetable varieties and her recipes are so good!
Chelsea have you ever used salad cucumbers to make pickles. I have used them to make refrigerated dill pickles and sweet pickles. They have always worked really well for me. Super crunchy I realize you are getting plenty of pickling cucumbers

Hi from Australia, wow your doing an amazing job of processing your food. I have actually blanched my cabbage and put it in the freezer, then cooked it in butter, a good pinch of nutmeg and a little pinch of pepper. It's delicious. I love it in soups as well. Sending blessings 🙌 🙏
I shred my cabbage and freeze it. Then for the winter I can make runza burgers. Brown hamburger and wilt cabbage in it after fried. Onions optional add salt and pepper to taste. Make different kinds of runza burgers. You can use cream of chicken, or cream of mushrooms, spaghetti sauce, or just add cheese and put on buns. Makes a good meal quick. Runzas originated in Nebraska and I adapted it into a bun instead of dough.
I think about you every time I do any canning. I just did 45 pints of pickles over the course of 2 weeks. Can't get over how much you do in such short period of time. Kudos to you!

Are you planning on feeding the whole of Canada ive never seen so many vegetables and that's just the first lot. I take it you will be doing the same thing tomorrow you must really enjoy you're job Chelsea. But that's the idea saves your bank book especially in the winter. It's so funny how we love our different occupations i use to love mine indoors self employed like your self's. My husband still keeps it going but on a very smaller way keeps him happy.

What a wonderfully productive day! I'll have to try making sauerkraut. I remember how good your mom's was, but I have never attempted it. I am completely worn out watching you. Hi Chelsea, just thought I’d let you and the LMR family know that Kitchen Aid also makes a kit of attachments for the mixer that has a dicing blade just like the one you’re using with the food processor but it fits on the kitchen aid mixer but what I love about it is you can set it above any sized bowl and just go to town with your cutting and you don’t have to keep stopping to empty the food processor bowl. I hope that made sense? I also have the KA processor but when working on a big project, this one is fantastic! 👍❤️

I'm processing about 30 lbs of apples from our small orchard this week, and just that has me a little overwhelmed. There's no way I could do what you do in a day. 😂

Just a note on the cucumbers you weren't sure what to do with: If you grate them and freeze dry them, you can use to make tzatziki sauce.

We always did crout in a 5gal ceramic crock. It took time but it was very good

I also do cowboy candy and make it into a relish for hotdogs, hamburger’s, add it to potato salad, and pizza topping life is better with cowboy candy🥰
