Thank you so much for your message! I was really curious about what you mentioned and wondered if dried tofu skins could be used to make vegetarian chicken. Fortunately, I had the necessary ingredients at home, so I tried it last night. I followed the method shown in the video but shortened the cooking time for the tofu skins since they seemed very thin, and I was worried they might fall apart. Fortunately, they were able to form a roll, though some slices broke apart and weren’t very intact when cut. The binding effect between them wasn’t very good. I pan-fried them with some oil and seasoned them simply with salt and pepper. The taste was pretty good. However, there’s a significant difference compared to vegetarian chicken. The texture wasn’t as thick and glutinous as vegetarian chicken but was very chewy, offering a completely different mouthfeel. So, if you want to experience the original taste of this recipe, it’s better to use Baiye tofu skins:-)!
Is it similar to gandoufu 干豆腐? Both have nubby texture and look like thick fabric. I admit that I've referred to guides on tofu sheets plenty of time, but I still can't remember :).

The key difference is in the texture and thickness: Baiye tofu is thinner, more delicate, and paper-like, which makes it perfect for recipes like vegetarian "chicken" rolls. Gan doufu, on the other hand, is thicker and firmer, with a denser texture that’s better for stir-fries or snacks. I hope this clears up the confusion! 😊
