How to make Escovitch Fish Jamaican Style

- This is a video tutorial that will show you how to make escovitch fish step by step!
PLEASE NOTE: The ingredients listed here are for ONE fish. If you are making more than one fish, the list of seasonings apply to EACH fish.
These ingredients are good for a medium sized fish that weighs approximately 1 lb
You’ll need for the fish:
1 cup of canola oil
All purpose flour (enough to add a light coating on each fish)
2 tsp maggi fish seasoning
1 tsp goya adobo
1 tsp garlic powder
1 tsp black pepper
1 tsp seafood seasoning (you can substitute with old bay seasoning if you don’t have seafood seasoning)
For the sauce:
1 handful of pimento seeds
5 sprigs of thyme
1/2 onion cut into rings
1/2 green pepper sliced into strips
1/2 red pepper sliced into strips
1/2 cup of oil
1 tbsp Ketchup
2 tsp vinegar
(And you will repeat the seasonings listed above to add to the sauce)

Directions:
First wash your fish with fresh lime or lemon juice. You can soak it in water and lime while you prep your onions & peppers. This gets rid of the rawness of the fish. Make 2 diagonal slits about 1/2 inch deep on both sides of the fish. Pat each fish dry with a paper towel. This is important. Wet fish will fall apart in the oil. Now that your fish is dry begin adding the seasonings listed above. Repeat the list for every fish you make. Massage the seasoning into the fish. At this point, add your 1 cup of oil to your pan and start heating your oil on medium Now get your flour and lightly sprinkle and pat the flour onto each fish until your fish has a light coating of flour completely covering it. Your oil should be hot now. Do not begin frying the fish unless your oil is hot! Fry each fish 4-5 min on each side until golden brown and set aside.
Sauce:
Throw off half the oil and discard. The half remaining you will now, on medium heat, begin making your sauce. Add your onions and peppers. Sautee 1 min. The seasonings listed above you will add now and continue to sautee for another 2 min. Add your ketchup. Sautee 1 min. Add your vinegar. Sautee for another minute. Pour the sauce on top of the fish and now you can enjoy!
