  • Most of us think of freezer burn as those massive ice crystals that form on the surface of our food. But, really this is just a result of freezer burn.
    From a scientific perspective, freezer burn is the drying out or dehydration of food, which explains all the nasty texture effects of freezer burned food.

    even my science teacher couldn't explain stuff like that . I liked the part especially when you explained the process after closing the freezer door how the water cannot dissipate into the food . such a great explanation

    Actually I've heard that the reason your food gets damaged from freezing it is because it is a very slow freeze, and during a slow freeze large ice crystals form. This scientific phenomena was first discovered by a guy who witnessed Eskimos fishing and in -40 temperature when they thawed the fish back out it tasted much better than if the fish was frozen slowly because fast freeze causes small ice crystals

      Yes, you're exactly right that slow freezing yields bigger crystals. This usually messes up the texture of the food after freezing. Freezer burn is the effect of those big crystals growing even bigger as the freezer goes through cycles!

    Sake:
    Splashed on seafood, fish, meats, and vegetables before cooking, sake kills bacteria and takes away any bad smells. Similarly, a splash in a bag of meats destined for the freezer prevents freezer smell from developing. It also prevents freezer burn because sake’s alcohol helps foods retain their juices and texture and seal in their flavors. This quality makes sake an important addition to marinades. Other common ways of using sake are to add a splash when blanching, sauteing, and sweating vegetables and boiling starches like rice, potatoes, and pasta.

      I was wondering if submerging meat in a brine would help. I think brine has a low freezing temperature, so the meat would never dry out or maybe not freeze.

    I found things that I bought 6 months ago, so this morning I just threw out a 1/3 of the food in my freezer, and I'll throw out at least a 1/3 more the next time I head down to the garbage bin.

      Yep, if freezer burn gets bad enough, the texture of the food can get pretty bad!

    It isn’t freezer burn yet. You’ll know freezer burn when it happens. The ice on the food is the beginning of freezer burn when the moisture starts to come out of the food. Food looks dried out and isn’t edible.

    I know in commercial freezers cannot have auto defrost in my state, now I know why.

    Nicely done, thank you ... I forgot to mention I watched a RUclips video a few hours ago and looked up how to tell if my desiccant packets were still " active " ... After a few videos I found that desiccants help prevent moisture ( in the fridge ) ... Food grade are sold ( however they are only about 10% ) but non food grade are the better purchase as ( some of it's beads ) have dark blue indicators ... Dark blue letting you know they are still at work ... Just thought this may help people with fridge moisture.

      Oh, that's a great fun fact! Also, some of those sachets you find in food packaging are for absorbing oxygen (for example in a bag of beef jerky) because oxygen is usually detrimental to food quality. It spurs many chemical reactions!

    If I know I’m going to be storing some meat for awhile, I’ll even take the time to sort of insulate it. That way, when the freezer goes through it’s de-icing cycles, the meat will be protected from the temperature fluctuations.

    I just bought a vacuum sealer and was looking forward to finally getting rid of freezer burn when I freeze broccoli and carrots. I blanched them and vacuum sealed them real good. To my horror, they STILL had lots of freezer burn :-( when I took them out of the freezer. Any idea why this happened?

      That is super weird! My only thought is that the vacuum sealer didn't work properly. Are you sure you suctioned all the air out? Or maybe the packaging became unsealed somehow!?

      @@AbbeytheFoodScientist Packaging was sealed and all air was sucked out. Could be because I blanched them and so naturally, they had some water. Don't know.

    I'm surprised it was said that freezer burn is not dangerous. I thought that ice crystals protected microscopic spaces from the freezer temperature, making it more favorable for bacteria to grow... interesting.

    Doesn't seem like the frosting is a big deal except for fruit that I'd want to eat unprocessed, or the amount of ice accumulation on the radiators. The typical packaging uses too much disposable plastic, especially the thick lockable bags. The long meat products in this example seem fine as they are.

    Great job easy to understand , So when I come home from the market with my bag of salmon fillet's , Can I immediately transfer them to a better freezer bag , From zip lock or something like that ?

    But even those store bought frozen section food, like the frozen fish, vegetables etc, also ended up having ice crystals building up in their packaging unopened. SO, do you transfer those frozen vegetables,fish,shrimps out, repackaged them too ??

      I've always transferred any type of meat vegetables or anything I put in the freezer into a Ziploc container or a Ziploc bag. It helps a lot with the food and it always stays fresher for
