    Do cranberries have more pectin than other fruit? All jams rely on this, but they are not known for their jiggle. Cranberry jam is good on blood sausage.

      Compared to other fruits, cranberries are high in pectin, yes! So you couldn't use raspberries the same way. I think a lot of homemade jams have gelatin added (but I don't make jam or jelly myself)

      Maybe if they were making clear jelly for dessert they would use gelatin. But for jam you would add either isolated pectin or other fruit that have excess of it. As long as it doesn't flow down a slice of bread, it's good enough. I made jam this year with just raspberries or blackberries.

    I grew up with both my mother's homemade cranberry sauce, and my aunt's canned log version (they would take turns hosting Thanksgiving). I always thought the canned sauce was weird and tacky. Why didn't Auntie mash the log with a fork so it sat more appetizingly in its cut crystal sauce boat? I make my own sauce, now. I mold it in a small ring, and it glistens on a raised compote on a sparkly wreath of sugared rosemary dotted with fresh cranberries. It looks very festive and appeals to both fresh and canned sauce preferers. 🦃

      It prevents the oil and the sugary water phase from potential separating! If that happens in such a large batch, it's super wasteful and hard to salvage

    Wisconsin is the largest producer of cranberries in the US. Oregon is the 3rd largest producer and Washington is the 5th largest producer.

    Cranberry sauce is easy to make at home. Cook berries and water in a sauce pan add sugar. The recipe calls for a cup. But you are in control try 1/2 cup of sugar. Cook for 8 to 10 minutes stirring constantly. Berries will break as Abby showed in video. Transfer to a bowl and allow to cool before refrigerating. You can eat in cottage cheese or yogurt. It's also good on a Turkey sandwich.

    i clicked on this video expecting to know most of the information but i actually learned a lot of new things i really find this video very informative and enjoyed the way it was presented i felt like leaving feedback because there wasn’t very much views, also i have a question regarding the way the body processes the food and the changing of the microstructure does the amount of chewing play part in this ?

      Yay, I was definitely hoping to surprise people with new information! Chewing is absolutely helpful in breaking up the food and making nutrients more available BUT our teeth are not nearly as strong as industrial machinery used in processing food :)

    This is not rocket science, nor are the food pieces particularly microscopic. You can directly see how big pieces impact the cooking time. An we might have been told as children to chew the food well to get most out of it. The nutrition facts is accurate because they can't presume the processing. The eater may or may not have teeth. Liquids pass through immediately and go to waste.

    The same studies that tell us others poisons are good for us. We're supposed to listen to them over people who dont have propaganda to push. If you are lactose intolerant and then you drink raw milk and it doesnt mess with you. That is CLEARLY better then some evil agenda pushing humans words.

    A lot of sugar/carbs. Nutritionally better off with full cream milk rather than oat and almond milk. If she had more protein in the mix she might feel less hungry between meals and be able to cut down on the snacking.

To become something like a research chef or culinary scientist you said you could take culinary arts. But would it be best or work to take a food science degree (4 yrs) and a culinary arts program (2 yrs) so you have the right knowledge for these types of careers?

      Yes, you could definitely do that but it's quite a long education (6 years)! You could always do a food science degree and in summer try to do an internship in culinary during the summers. Something a little more creative like this could get you to where you want to go but save time and money :)

    I cut out processed foods. Cheese was allowed, but I could no longer choke down pre-grated cheese. My body told me something was off, so I looked into it and discovered that it's 3% sawdust. Message is that your body when you're off processed foods will tell you what's up. When you eat garbage every day your body's signals about what is real food and what is not get all messed up.

    I'm a person that rarely, if ever, gets sick. Never had the flu, don't remember the last time I had the common cold. Last week I ate 3 Oreo Boo Halloween cookies. One hour later, I was sopping wet with a fever, had dry heaves for hours on end and stomach cramps. I know it was the cookies because that's all I ate, a couple of cookies and a cup of black coffee. I looked at the bag of Oreos thinking they added something I'm allergic to, obviously. It said "Contains a bioengineered ingredient" Made in Mexico. We can't even make cookies in this country anymore? Whatever it was passed after a day and now I'm fine, but it was a terrible experience let me tell you.

    So after buying sourdough bread 2-3 Xs a week for the last 2 years at Publix Supermarket in SC, we noticed 2 weeks ago they added the label. I questioned it to the baker he had a look of panic, he said shit they didn't tell us, let me ask my manager. He didn't know about it🤔he goes I guess one of the flours we use has it and walked away. There were 4 of us listening, we all put it back on the shelf. I contacted Corporate Publix, and asked why did this change, why are you working with a company that sells this, why does Europe not allow it? Her response was I will send you information, I said I will be boycotting your bakery and telling others, which means not eat their sandwiches. I will attach her response. Start asking! Thank you for taking the time to contact us and allowing us the opportunity to serve you. We appreciate the trust you have placed in us as your grocer of choice. At Publix, we work hard every day to provide our customers safe, high quality products. We want our customers to have confidence in the products we sell and to have access to foods that fit their preferences. We understand that many of our customers are interested in knowing more about genetically modified organisms (“GMOs”) in the food they eat. We agree there is a need to educate the public about genetic modification and other forms of biotechnology. We believe consumers should have access to consistent, accurate, and relevant information about the products they buy. Publix, much like American consumers, looks to federal agencies, such as the US Department of Agriculture (USDA) and the US Food and Drug Administration (FDA), to set product labeling and standards for foods, including information about GMOs and bioengineering. Effective January 2022, the Standard requires food manufacturers, importers, and other entities that label foods for retail sale to disclose information to you about foods that are bioengineered or that contain bioengineered ingredients. GMO foods have been available to consumers for many years. Scientific studies and evaluations by several health and regulatory agencies have found GMOs to be safe. In 2020, the FDA released Feed Your Mind, an education initiative to help consumers better understand genetically engineered foods. Details of this program can be found on the following FDA website: www.fda.gov/food/consumers/agricultural-biotechnology/ We understand that some customers may want to avoid GMOs and bioengineered foods. For these customers, we recommend our growing selection of certified organic products, which are made without the use of GMOs and genetic engineering.
