    *Dear Emmy,* 🙏🏼
Will you please try out the childhood snack that my mom made for myself and my siblings when we were growing up? This was a relatively simple recipe. I am Mexican American so this little snack is reflective of that. Lol.
My mom called them Banderitas (translation from Spanish to English is “Little Flags.”)
They were called Banderitas because the the different colors of the condiments reminded her of a little flag.
We often ate these when we were outside playing, and we wanted a hearty little snack that we could run back outside with.
    *Recipe for “Banderitas”*
    (Little flags)
1: Flour Tortillas (you don’t necessarily have to make them, but at least purchase from a good Mexican restaurant that knows how to make them right).
2: 2 medium thick slices of all beef deli sliced bologna.
    3: Mayo, Mustard, Ketchup
    Instructions:
Heat the tortillas on the stovetop. If you have a comal or a pan it will work.
Put the two cold and fresh slices of bologna on the tortilla and and then add the mayo, mustard and ketchup. Then roll them up like taquitos.
This is my moms snack that she made for us as kids. Now that my siblings and I are all grown up, a couple of us still enjoy the occasional Banderita. ❤️☺️

I've had a recipe for pork and beans cake for years. I used to make it for every new family moving into our neighborhood. I got the recipe from a murder mystery book whose main character is a baker/caterer. I love this recipe. However, because so many people do not eat pork, I use vegetarian beans. I add pecans or walnuts, and I bake it in a loaf pan.

My husband's aunt makes this and taught me how to. The recipe is different. Not as much sugar, and we blend the beans up to where you don't see them. We do use pecans, and bake it as a round cake. We also use a little coconut in it too. For the frosting it's a cream cheese frosting with cinnamon, nutmeg, and vanilla with chopped pecans. The beans add to the moisture to the cake so not as much oil is needed either. It is so yummy!!!

    Interesting recipe.
You can either grease & flour the bottom of the cake pan or use parchment paper on the bottom of the cake pan.
There's gluten free cake & brownie recipes that use cooked / canned white, black or garbanzo beans depending on if they're for white cake, blondies or chocolate cake or brownies. Those recipes usually put everything in a blender so the beans get pureed.

YAY!!! You remembered the baking tray!!! WOW! That was a lot of baking powder and soda. But I can understand why they added it, beans are very starchy and dense like potatoes. The extra is just a precaution for the rise. I would go ahead and reduce it down to 1/4 tsp of each instead of 1/2 tsp to reduce the overflow from the cans. But your cake pan version looked great! Yes, parchment is our friend when baking. Even in the can, just make a tube of parchment for easier release. It almost reminds me of your bread in a can recipe you did way back when. I would recommend changing the sugar amount to 1/2 a cup per 2 cups, that's a lot. Or better yet, change it entirely to molasses for a richer deeper with just a hint of sweet taste. Great share!

Emmy, try making Migas. It's a spanish dish. very cheap.
    Ingredients:
1 old french loaf or baguette (2-3 days old, dried out and hard)
    big pinch of salt
a whole bunch of garlic (at least 7-8 cloves, maybe more), whole
    Chorizo (mild), diced
    Olive Oil
    Water
    Prep:
Blend up the old baguette until you have fairly coarse breadcrumbs
add water and salt over them and mix them around until all the breadcrumbs are soaked pretty wet but not dripping, leave in the fridge for a couple hours/overnight.
Pour olive oil into a large pan, medium heat, add peeled whole garlic cloves and diced chorizo and fry lightly until the oil took some colour from the chorizo and the garlic is lightly browned (don't let it go too dark).
Take out the garlic and chorizo and keep in a bowl to the side.
In the same oil, put the breadcrumbs and fry them, continuously stirring on medium heat around 45 min to 1 hour. This is the part that takes the most work and time because you have to constantly poke and stir the breadcrumbs so they lose their moisture and break up. First it will all clump up together but over time it will start to look kind of like small river gravel and be easier to stir. Don't turn up the heat too much or you will just burn it.
After about 45 min you can add your garlic and chorizo back and continue to cook it all together until the breadcrumbs are not soggy anymore but also not dry. They should be slightly crunchy but chewy.
For pictures, google "Migas de los montes de malaga"

I was wondering if you would compare it to a spice or carrot cake. The texture, crumb, moisture content looks similar - or similar to a banana bread or amish bread. It honestly doesn't look bad and I can see the beans not lending much to it other than the occasional texture...much like carrots in a carrot cake. If it's similar to any of these things, I think the addition of nuts would be almost natural. Thanks for sharing Emmy!

Enjoyed this recipe, but what would you eat it with??.along with? Do you think reducing it to 1 cup of sugar would be good or is that too.little bit?

I never bought pork & beans, but definitely had them when others made them. I do buy BBQ beans that often have a bit of pork belly in them, though. I've also seen the Heinz beans in tomato sauce and Heinz tomato soup cans in the international sections of US grocery stores, but at ~US$5 a can, a little too pricey. I haven't tried the beans, though I did try the tomato soup, which was pretty good , but not worth that much more than Campbell's.

I would have thought of that as more of a pork and beans bread instead of cake. It looks so moist and delicious and it looks like because it is from pork and beans it would be slightly sweet. Yum!

Canned goods have a liner of plastic on the inside. The heat from cooking causes the plastic liner to leach into food. See: microplastic contamination. You should never use canned goods as cooking pans, unless the plastic liner is removed first.

You can get the Heinz canned baked beans here. I don't often see them at the big chain grocery stores. I find them at independent grocers. Honestly they really aren't any different than tasting than any other brand beans. I suspect the Heinz brand is so popular in great Britain because they are the biggest brand in the UK. Everyone grew up eating them post war. Kind of the same way Campbell's soup is so popular in the US. Try and find someone who grew up in post war America that didn't love Campbell's chicken noodle soup when they were a kid. Btw, Heinz also makes canned condensed soups too. I'd be interested on your take on them compared to the Campbell's brand.

Emmy, have you ever had Tomato Preserves? We had them in the 70s; it was so delicious you could eat it straight out of the jar.
I’d love to see an episode with it. You want the Tomato Preserves recipe on the back of the Sure-Jell package, the one with allspice, cloves, and cinnamon.

My mother always served baked beans with hamburgers. I am now a vegetarian since 2000. Turns out baked beans, much nuts, sun flower seeds, processored, a tad flour, IS the best hamburger meat. ...can cooking .. fun.

I've made black bean brownies, the beans aren't really distinguishable. These are basically blondies, I can see how a sweet barbequeish flavor of the pork would work with that.

I asked the same, why? I thought at first this was a recipe pushed by food producers back in the 50's that encouraged the "frugal housewife" to try new recipes from canned goods that would "delight her family". Did quick research, as I thought, pork and beans were among the first commercial canned goods, going back to 1880's. Boredom: All those cans of beans, gotta use them up, but we can't eat another plate. Safety: Way back then, canned goods were not as safe, they used a tin-lead alloy to seal the cans, use it, don't store it. Diet: Well, it was a way to stretch protein. I wondered if some creative cook in a GoldRush camp came up with this.
