Tomato Soup Cake is an old recipe in my family. We always make this cake with cream cheese frosting for birthdays. Before he passed, my grandfather would always talk about his mother making this cake. Back in the 20s and 30's when he was a boy his mother would wrap up slices of tomato soup cake in newspaper and pack them for his father to take to work. My great-grandfather was a train engineer and could be gone for several days at a time, so as this cake doesn't include milk or eggs it packed really well for the duration of the journey. One of my ex-coworkers (now retired, in her late 60’s) used to bring this to work all the time. First time she told me about it I assumed it would taste like tomato soup but I was pleasantly surprised! I liked it to much I requested it one year for my birthday cake at work.
Paul Mab , I think this is a metaphor for life. So many things can come into our life that are unexpected or even unpleasant, but if we have faith and give things time, the result can be sweet.
Just so you know, the terms fruit and vegetable are botanically speaking completely arbitrary and the only real deciding factor is the sweetness of a fruit (most vegetables are either fruits, roots or stems)

This is my favorite cake ever. My step-dad would make it for me when I'd come home on leave. The bundt pan is what he always used. He's put nuts in his. Walnut or pecan pieces. A little glaze is nice in place of the powdered sugar, too. Rum or coffee flavored glaze are really complimentary.
When I was in Middle School- early 1960s- in 8th/9th grade I "worked" in the cafeteria. This was when the Lunch Ladies actually cooked all the food. The SPICE CAKE was always a hit and it wasn't till end of 8th grade that I got that recipe. It was....Tomato Soup Cake!....thank you so much for the Memory and Recipe. You go, Emmy!
I'm jealous. Real food in school? Amazing. I finally went to popeyes and had my first ever chicken sandwich bc the cafeteria patties were so unappatizing. (I've been out of school for 12 years so, it's taken a while to get over the PTSD just from LOOKING at those things lol).

They will likely resist, but if you can get enough students or parents demanding it, I think that's something minor enough that can actually change. It wouldn't hurt if parents threatened to sue either. It's enough of a fluff story you could probably get it on the local news. I...just remembered that schools are not in session. Like, BETTER than a lot of homemade stuff she had at that time. I could not even fathom. The cafeteria food they served at my school in the 80 ' & 90's was some of the most disgusting slop I've ever seen, or tasted. Even the days they served pizza, which was supposed to be a treat, was nothing to look forward to. The soggiest crust (no crust to that crust!). Imagine adding water to a can of tomato paste, and that's what the sauce tasted like. Sprinkled over the "sauce," came a grated cheese, that I can only describe as tasting like vomit. Lastly, some cheap, for some reason always a sickly yellowish colored, plastic-like cheese. No matter how hot the pizza was, that cheese didn't pull or stretch. It didn't budge. I think I need therapy just to deal with memories of that food😱
This recipe, with one can of soup as the liquid- the batter does look too dry and hard to mix. Campbell's current recipe is the same on dry ingredients, but adds 1/4 c water and 2 eggs for liquid. Maybe use applesauce as an egg sub...or more water? It does need more liquid tho, imo.
My family actually makes a really delicious sauce with tomato soup! We, uninspiringly, call the dish "Meatballs, Carrots, and Rice." Brown beef in a deep pan, cut into chunks or rolled into meatballs. Season with salt, pepper, garlic powder, onion powder, and Italian seasoning. Add in halved baby carrots, go until beef and carrots are cooks and beef has some crispy sides. Dump in a can of tomato soup, one can's worth of water and one can of milk, add soy sauce, lots of Worcestershire sauce, a splash of vinegar, and a good handful or two of brown sugar. Simmer until thick and velvety, pour over rice and eat! I like to garnish it with some dried parsley!
Here's an easy one. One box of cake mix, one 12 ounce can of soda, fold together and bake per package time. I use a yellow cale mix and a can of natural flavored seltzer no sugar. It's great and economical. About a dollar for a cake.👍💜
@@MeliBoo4935 yes Melissa. The cake is still sweet. Seltzer with natural essence has good flavor and the cake mix has plenty enough sugar. I use a bundt pan. You can drizzle a glaze over it if you like. A really light fluffy cake results.
I like to do this with lemon cake mix and Sprite or strawberry cake mix and a good icing to make to use with it is whipped cream mixed with dry Jell-O Mix, lemon jello for the lemon cake or strawberry for the strawberry
Love your retro music. I was born in the 50s. My mom went thru the depression so was extremely tight regarding cooking and baking. There was 7 in our family in the 50s and 60s and the woman could make a meal out of a paper towel tube. My mother n law was more food conservative than my mother. They both just blew me away. Women now have no idea what women went thru during the depression or rationing. To think we complain about things such as needing a new car or mediocre kitchen appliances. I love watching you in your kitchen when you show how women pulled a rabbit out of a hat to serve their family. Keep on keeping on, dear....
I just made this, and based on some of the comments I added 1/4 cup milk and 2 eggs (which I know defeats the purpose of it being milk & egg free) and the batter was perfect. It turned out super moist and delicious and no one would ever know it has tomato soup as an ingredient. Thanks for sharing this!
OMG this was the first cake I ever picked out and made all by myself when I was probably 10 yrs old. I just wanted to know what the heck that would taste like. And I loved it! We are kindred spirits, Emmy.
My grandpa LOVED tomato soup cake, my grandma made it a little different tho... She didn't put in the cloves, nutmeg or raisins. She did add walnuts. She would make it and send it to Grandpa while he was serving in the Navy on SS New Mexico. He said it was usually a bit stale when he got it (lol) but he ate it with a really sharp cheese when he could.
I'm so happy you posted this particular recipe as I've been making it for my husband for his birthday or 36 years. The recipe I have from my Mother-In-Law is from a Campbell's recipe book from the 60s but I have an earlier recipe from the 40s. In the recipe I have it suggests 2-8" cake pans and you oil and flour the pans and you bake for 40-35 min. We use cream cheese icing and it is our favorite cake. I made this tomato soup cake recipe that I got from a very sweet elderly lady I met at Trader Joes's. She told me that this recipe was one her Mom would make during WWI and that it was always a hit...I made it when I went to a party that was required to bring an "old fashioned" recipe...it was a Huge Hit!!! xo
I love spice cakes! I should definitely try making this. Also, here's a tip to avoid the flour (or other powdery dry ingredient) mess. Use a spoon to fluff up your flour, lightly spoon it into your measuring cup, then level it off. It might take a bit longer, but it saves you some clean up and provides more consistent measurements. Scooping with the measuring cup packs your flour down and changes how much flour fills the cup with each successive scoop.

My childhood cake ! 🥰 I'm 60. My grand-mother baked it often. In fact, I don't remember her baking another kind of cake ! Pies, yes, but not another kind of cake. I think I wrote to you about it once. I still bake it a few times a year. My grand-mother's recipe is a little different, only half a teaspoon of each spices and... two eggs. I cream the shortening and the sugar together first, then add the eggs and alternate the dry and wet ingredients after. Yet, the batter is still very thick. I usually bake it in a square pan, sometimes in a bread pan, for 50 to 60 minutes. I don't add raisins, but my grand-mother did. I am overdue for baking one... Thank you for this nice memory !

Hi Emmy! I just found your channel searching for this recipe. I left mine at my winter home. Originally, it called for an eight or nine inch square pan. I usually double the recipe and make it with walnuts, bake in a 13 x 9 inch pan, and frost it with browned butter icing. The walnuts and/or raisins should be stirred in after you mix the other ingredients. I also just use half the cloves! My husband bought me a new stove, and requested that this be the first thing I make. There is another version, made with a spice cake mix. It’s quicker, but not as good. Thank you so much. Sharon.
I just made this according to your recipe, except I used a cupcake case lined muffin tin. The quantities here make exactly the right amount of batter for twelve if you use a level ice-cream scoop for each one. (I always use a scoop making cupcakes and muffins - it's ideal for the perfect amount!) Oh and I didn't have icing sugar so I sprinkled the tops with demerara sugar before baking for about 14 minutes in a moderate oven. Absolutely delicious! And you're right, it's amazing, you don't taste the soup at all. Bravo!
Liam Maple there I found a website of someone who copied the old paper meeting cookbooks from that time, page by page. My old computer with that site saved died, but I bet you could google it.
This has been a staple in our household for decades....we love it! One year I added half a cup each of chopped pecans, dates and candied ginger to the raisins .....and voila.....Christmas cake!

This was my father's favorite birthday cake and we enjoyed it on his special day throughout the decades beginning in the 1960s. My mother also made it for their wedding anniversary each year. It is still a family favorite!
I just had to make this yesterday. It was my day off from work, I had all the ingredients already in the house, save the shortening, that I just replaced with vegan butter. So simple, turned out very yummy😚 Thank you!

This was one of my grandmother’s recipes and I e made it a few times. Tip: When you use spray on a pan, if you put it in the dishwasher any overspray will be contained, then washed away when you next run your dishwasher.
Liz S, when you spray on the non-stick spray on a pan it tends to fly around your kitchen. If you put your pan inside your dishwasher and spray it there, the spray is contained and you dint have to clean it off counters and floor.
My MIL used a 9 X13 pan and I have used it also. I added nuts to the batter before putting it in the pan. It is a favorite of my husband. Also good with a cream cheese frosting.

I garden, and when I have an over abundance of tomatoes I freeze them, and make chocolate cake with them ( puréed) all winter long. ( and yes I can them in all sorts of ways too )

I am making it right now but with few alterations. Canola oil instead of shortening, dried prunes and cranberries instead of raisins, 3/4 cup of sugar and canned tomatoes instead of soup. Smells really nice and I am waiting to try what the texture is like 😉🤤

This one is the stuff of legends where I'm from. I should make it some day. My speedy treat from a similar generation is boxed cake mix (spice or Devils food is best) and a can of pumpkin. Mix, scoop out cookies, bake 350 until done. Quick, cakey, great with milk or coffee.

My mom still makes this cake all the time. When I was a park ranger in my late teens she sent one to me in the mail with the cream cheese frosting on the side and it was incredible! A sturdy cake, that's for sure.

I made my first tomato soup cake back in the 70s when I was a teenager I used a can of tomato soup and a spice cake mix. No raisins! I used a cream cheese frosting also.
I make this all the time. It is family recipe. I omit the raisins because I don't like fruit in my cakes (fruit in pies or tarts, never cakes!) but it comes out delicious like a spice cake. I also do a honey glaze or a light cream cheese icing.

I've been making sortedfood's tomato soup cake for years when I want to bring some cake in to 'boost office morale'. I like the carrot-cake-esque aspect of it, without having the half hour of grating carrots (and fingers) involved. It's also delicious with cream cheese frosting or nutella on top. My previous supervisor was a bit put off the first time I brought it in after he got assigned, despite being the resident cake fiend. Rest of our work group fell on it like a pack of ravenous wolves, which clued him in.
There was a soap opera called Passions that had a character that was made fun of behind her back because she would make tomato soup cake that nobody liked.

It's fun to see how recipes travel. We have a copy of this recipe in a 1950s French-Canadian recipe book. It was my dad's number 1 cake. It doesn't taste like tomato soup but more like a spice cake, it's really nice! You can have a contest with your guest... guess the secret ingredient!!!

I'm 60. My grand-mother baked it often. In fact, I don't remember her baking another kind of cake ! Pies, yes, but not another kind of cake.
I think I wrote to you about it once.
I still bake it a few times a year.
My grand-mother's recipe is a little different, only half a teaspoon of each spices and... two eggs. I cream the shortening and the sugar together first, then add the eggs and alternate the dry and wet ingredients after. Yet, the batter is still very thick. I usually bake it in a square pan, sometimes in a bread pan, for 50 to 60 minutes. I don't add raisins, but my grand-mother did.
I am overdue for baking one...

Boy this takes me back. My granny used to make this. She raised 9 kids during the Depression, and many of your hard time recipes are things I ate at her house. This cake is delicious.

A very good cake. With cream cheese frosting. Tomato's are actually fruits so...😉 I made one out of the original Campbell's Soup Cookbook. Lots of yum in there. 40yrs+ I've had that.😀🙏🍅🍰

Hi Emmy! I just found your channel searching for this recipe. I left mine at my winter home. Originally, it called for an eight or nine inch square pan. I usually double the recipe and make it with walnuts, bake in a 13 x 9 inch pan, and frost it with browned butter icing. The walnuts and/or raisins should be stirred in after you mix the other ingredients. I also just use half the cloves! My husband bought me a new stove, and requested that this be the first thing I make.
There is another version, made with a spice cake mix. It’s quicker, but not as good. Thank you so much. Sharon.
I just made this according to your recipe, except I used a cupcake case lined muffin tin. The quantities here make exactly the right amount of batter for twelve if you use a level ice-cream scoop for each one. (I always use a scoop making cupcakes and muffins - it's ideal for the perfect amount!) Oh and I didn't have icing sugar so I sprinkled the tops with demerara sugar before baking for about 14 minutes in a moderate oven.

This has been a staple in our household for decades....we love it! One year I added half a cup each of chopped pecans, dates and candied ginger to the raisins .....and voila.....Christmas cake!

This was my father's favorite birthday cake and we enjoyed it on his special day throughout the decades beginning in the 1960s. My mother also made it for their wedding anniversary each year. It is still a family favorite!
I just had to make this yesterday. It was my day off from work, I had all the ingredients already in the house, save the shortening, that I just replaced with vegan butter. So simple, turned out very yummy😚 Thank you!

This was one of my Mamaw's favorite cakes! She grew up during the Depression and of course lived through WW2 so was VERY familiar with rationing and how to stretch absolutely everything. Thank you for the memories! ❤️
My grandma always made this cake for every occasion. Birthdays, thanksgiving, Christmas, Easter, you name it. All of us grandkids HATED it hahaha.

This was one of my grandmother’s recipes and I e made it a few times.
Tip: When you use spray on a pan, if you put it in the dishwasher any overspray will be contained, then washed away when you next run your dishwasher.
Maybe I’m slow but I don’t understand the tip?
Liz S, when you spray on the non-stick spray on a pan it tends to fly around your kitchen. If you put your pan inside your dishwasher and spray it there, the spray is contained and you dint have to clean it off counters and floor.

My MIL used a 9 X13 pan and I have used it also. I added nuts to the batter before putting it in the pan. It is a favorite of my husband. Also good with a cream cheese frosting.

I garden, and when I have an over abundance of tomatoes I freeze them, and make chocolate cake with them ( puréed) all winter long. ( and yes I can them in all sorts of ways too )

This was my mother’s favorite cake to make.She was known for her tomato soup cake and made it for all special occasions. We make it now when we get together in memory of her.
I am making it right now but with few alterations. Canola oil instead of shortening, dried prunes and cranberries instead of raisins, 3/4 cup of sugar and canned tomatoes instead of soup. Smells really nice and I am waiting to try what the texture is like 😉🤤

My great grandmother would make tomatoe soup cookies and would omit the raisins in a few just for me. A wonderful spice cookie I still make today. This brought back some sweet sweet memories.

This one is the stuff of legends where I'm from. I should make it some day. My speedy treat from a similar generation is boxed cake mix (spice or Devils food is best) and a can of pumpkin. Mix, scoop out cookies, bake 350 until done. Quick, cakey, great with milk or coffee.
OMG! I’ve been meaning to try my grandmothers tomato soup recipe for a few years! The dry ingredients are a little different and it includes one egg. It also included a cream cheese icing with 2 T of milk. Excited to try it now!

My mom still makes this cake all the time. When I was a park ranger in my late teens she sent one to me in the mail with the cream cheese frosting on the side and it was incredible! A sturdy cake, that's for sure.
My great aunt had two cake recipes with tomato soup. One was a spice cake with a cream cheese and butter glaze on it and the other was a chocolate cake with fudge frosting. Both were absolutely freaking delicious.

I made my first tomato soup cake back in the 70s when I was a teenager I used a can of tomato soup and a spice cake mix. No raisins! I used a cream cheese frosting also.
I make this all the time. It is family recipe. I omit the raisins because I don't like fruit in my cakes (fruit in pies or tarts, never cakes!) but it comes out delicious like a spice cake. I also do a honey glaze or a light cream cheese icing.
I have 0 plans to make ANY of these retro videos but I love her videos so I must watch all of them

I've been making sortedfood's tomato soup cake for years when I want to bring some cake in to 'boost office morale'. I like the carrot-cake-esque aspect of it, without having the half hour of grating carrots (and fingers) involved. It's also delicious with cream cheese frosting or nutella on top.
My previous supervisor was a bit put off the first time I brought it in after he got assigned, despite being the resident cake fiend. Rest of our work group fell on it like a pack of ravenous wolves, which clued him in.

It's fun to see how recipes travel. We have a copy of this recipe in a 1950s French-Canadian recipe book. It was my dad's number 1 cake. It doesn't taste like tomato soup but more like a spice cake, it's really nice! You can have a contest with your guest... guess the secret ingredient!!!

1:02 So, I grew up in the military, my dad was air force in Canada from the mid 70's to early 2000's. My mom had a very similar recipe book that was also compiled by the women on Canadian bases. I think it may be a military wives thing, makes plenty of sense when you think about it too
