Kimi Werner does it a bit different, bashes it on the rocks then gives it a salt massage to get all the slime off/tenderise further. Can even be dried like jerky. Thanks for the extra video’s coming onto RUclips 🤙🤙🤙🍻
Another great video! Congrats to your fantastic family and lifestyle. You're right finishing the octopus on hot coals tastes even better. Personally I then like to just to season it right before eating.. drizzle some olive oil, lime juice, seasalt and pepper..if you like it some spicy chili flakes
Iv moved to Spain from nz and here it's a delicacy they boil it until it turns pink /purple then they cut it up in bite size pieces and drizzle olive oil, salt and red pepper on it.
Hey bud, Great vid! Super funny. I get a lot of octopus out here in California. So tasty! Don't know why anyone would think biting the brain is strange...that's just how it's done! Sometimes we throw Pacific giant octopus straight on the grill with butter, garlic and lemon, though we beat the hell out of em first to tenderize. two spot octopus is excellent in Japanese-Hawaiian style Poke too. Seems like we have a lot in common man, (google "countryman forager") and if you're ever in CA hit me up! -Kevin
The way we do it is flail the occy over rocks on the shore about 50 times. This tenderises it and removes the skin. Cut it up, then lightly coat with flower, salt and pepper and shallow fry.
Hey bro when i catch an octopus i smash it against a rock about 50 times thats how you tenderize the meat and after iv smashed it on the rock i rub it against the rock untill the legs go curly that takes away the slime. Then i leave it in the freeza for at leased 2 weeks. Makes a big difference.. By the way great work with your videos love your lifestyle!!
"crush up some kiwi fruits and marinate it overnight, some enzyme in the kiwi makes it more tender" Probably the most New Zealandish thing I ever read...
Octopus vinaigrette salad: Boil the octopus with salt for seasoning and chuck one onion in the pan with it. When the onion is cooked the octopus is ready. Get rid of the onion. It was only there to tell you when the octopus was cooked. Let the creature chill, chop the octopus in small bits into a bowl and add olive oil, vinegar, finely chopped red onions and chopped parsley. Serve with a nice bread ( to dip in the dressing) and a cold beer. Really enjoy your videos. Peace.
There is no right or wrong way to cook tako. Here in Hawaii we smoke it , frie it, boil it , bake it ,barbicue it . It doesn't matter its all up to you the way you like it. Personally i love it smoked with chili pepper and shoyu sause?
Oh my goodness letting your kids make fires in the yard? That is what made me sub because i let my kids do the same thing . We have let our kids cook on fire since they were 4 and the oldest are now 8 and guess what????? No accidents because they have been taught safety and they can do it in the open without having to sneak around. Great channel.
yea... shake the shit out of the octopus in the bowl!! hahahaha!!! :-) great video, once again, James. When I´m over in NZ some time, I come across your house and show you some tipps and tricks about cooking :-) You seem to love it.
Ha, there is at least a 20 second rule for food that hits the floor! So, killing the octopus, I have never given it any thought, your way seemed pretty effective and quick. How else can it be done?
Hey Bro, There's 2 ways to cook octopus/squid/calamari etc. Either cook it for hours at a low temperature, think casserole/slow cooker, or at a high temp for about 30 seconds to 1 min in hot, hot oil, 200 degrees+. Keep doin' what you're doin' mate, love your channel. P.S. Your wife's hot......
omg it's like kiddy porn look at all those toys on the ground. by the way if you want ultimate tender octopus, you need to massage the pus for two hours. for reference look at the movie Jiro loves sushi. He talks about massaging the crap outta the octopussy. I think they may use either coarse sea salt our maybe even rock salt. you do it until the slime is gone and also use to tenderize the meat.

crush up some kiwi fruits and marinate it overnight, some enzyme in the kiwi makes it more tender
We would always take kiwi fruit to the bach with us especially for that reason. Then again, everything tasted better cooked at the beach.
"crush up some kiwi fruits and marinate it overnight, some enzyme in the kiwi makes it more tender"
Probably the most New Zealandish thing I ever read...
and the the funny thing is I'm an Aussie, we are pretty much the same as Kiwis, except our women don't have beards.
