    I've never been out of the states, but I've always had chickens! Non-refrigerated eggs is the usual. If you have to refrigerate your eggs, they have been through a wash that removed the natural, protective bloom and/or are old!
    That clam opening technique was awesome! I will definitely try next time I forage some cockles!

    One of my favorite places you two have visited was the island in Alaska I believe, the ranger station with the hot springs that flowed through the “pool house” such beauty and peace in that place

    That was a very good attempt at a banh xeo. Good job on adding beer to it. Any carbonated liquid will make it crispier. My mom used to add coconut soda to her batter.

    Hey Taku
    I am impressed with the bánh xèo. As for the fish sauce, you may want to add some sugar. It would give it a little sweet, salty, and sour taste. My wife’s recipe for fish sauce is 1/3 fish sauce, 1/3 lemon juice, 1/3 sugar. You can also add some chopped garlic and chilies.

    If you're still in NZ you should check out the canals in Twizel in the south island, some of the biggest trout in the world are caught there if a bit of freshwater fishing interests you

    Critical note: eggs in the usa are treated differently and must be refridgerated. Nothing wrong with how they do it in new zealand etc. but make sure you keep your US eggs cold 👍

    Taku, to get it crispier you need to double the amount of oil and put a cover on top (doesn't need to be sealed but enough so the top side of the Banh Xeo will cook as well). After 4 minutes, take off the cover, fold the Banh Xeo in half and depending on how crispy you want it cook for 30-60 seconds each side.

      This exactly. It is also okay to turn the heat down almost all the way. This allows more time for the Banh Xeo to get even crispier without overcooking the toppings.

      Less oil can be better for your health in dishes that absorb it though, his is still crispy just not next level crispy

      yah, I use less oil and heat on high. maybe even after its cooked. very hot pan will do the job

    Just want to say Tacu this week has been one of the hardest weeks in all my 31yrs I was struck down with a nasty viral infection combined with anxiety attcks almost passing out on a daily but the only thing that made me feel better was seeign your videos thanks for being the kind hearted legend that you are your super easy to watch bro & inspiring. I love seeing you in this part of the world carrying a stubbie instead of a can of beer lol I hope you can make a stop in Australia next Ill be deffinetely coming to meet you if I can.     Great video! A little tip if you want a crispier texture on the banh xeo add ice cubes to the batter mix. Gives the frying part a quick shock.

    Hey Taku, been enjoying your and Jocelyn's travels for a few years. Not one to comment, let alone comment on the comments! Purging clams and other filter feeders is awesome! I prefer to use ground black pepper or fine ground white pepper as it accomplishes the same thing, and imparts pepper flavor! Writing you from the Maisian Coast (Midcoast Maine) which is my mission - get Americans to eat all the seafood that we have here. Peace and Love!

    Future tip Taku! For the banh xeo dipping sauce, i would recommend also adding some white vinegar, coconut juice\soda, minced garlic and lots of sugar! It will take your dipping sauce to another level !

    Back home in WA, we use cornmeal, and yes it definitely works. The sand left in the bottom of the bucket is amazing.

    Thanks for all these episodes on NZ. Love its nature so much that I visited the country twice. Self-drive, bungy jumped, and did the Milford Trek.

    In 1990's we visited NZ and Australia on separate 6 week trips. Travel about 1200 miles on each trip. In NZ sheep were on every hillside waters & seas were pristine clear. Now those many of NZ fresh waters and stream salt water areas "may" be polluted?? Cows not sheep? Fertilizers?? Too many, too soon? Maybe my recollections and comparisons to today are inaccurate? NZ followers may know? Back then green lip mussels were like $2 for 2 dozen and oysters/lobsters not far behind that price!! Mouth watering!!!

    Nothing like a feed of Pipi. There are a variety of clam called Tuatua that make a good kai. Happy foraging Taku, I am jealous as hell watching from cold rainy Washington. 🤙🏽

    I was at a training school in CALIFORNIA many many years ago & was able to visit my sister in Santa Maria. As I had never been to a beach that was nothing but rocks from living in AK. all my life, they took me to PISMO. It was probably early June & there were a few people on the beach, & what she called the hardcore surfers out catching smallish waves. I had noted that all my companions all had long pants, hoodies, etc. I thought because of the slight wind. Little did I know they were all freezing & suffering from the "cold". I was in swim trunks & a T shirt. Asked if I could swim a little, & sister looked at me like I had corn growing out my ears. ("but you don't have a wetsuit") I then let her know that at 75-78 degrees air temp was killing me & needed to cool off. The water was a bathtubby 55, maybe 58, & the wetsuited surfers were also giving me sideyes, like I was nuts.(at least I didn't look like a seal!) Anyway long story short was as I was out there about waist deep I was startled to feel these "Rocks" under my feet about 3" under the sand. Being a "pebble puppy" at the time I wanted to see what it/they were. To my amazement it was this 4" purplish cockle type clam. I then used my toes again to fill all my suit pockets & arms. Went back to sister freezing on the beach & showed her the treasure. She then advised me of a couple of facts; 1-I did not have a CA fishing licence, 2- PISMO beach clams were "endangered ".
    Then BIL pointed left & up & asked if I could see those green tanks up in yonder vally. I said yes. "Well, that's the cooling tanks for Diablo canyon nuclear plant, & we probably don't want those clams anyway".
    Wound up skipping them back into the surf.. Damn shame, as PISMO Beach clams used to be famous..

    My family is from Central Vietnam. Growing up, we ate Banh Xeo with a Peanut sauce, and we eat it with a fork and knife.
    Vietnamese people from other regions wrap the Banh Xeo up with springroll wrappers, and then they dip it into a Fish Sauce.

    Not everbody lives by the ocean. Maybe many ours away and then you might want 150 or more to stock the freezer. Because its a long and costy trip. Just my 5c

    Banh Xeo is traditionally made with rice flour but now some people mix both rice and wheat flour.

    We usually leave them in fresh salt water for 18 - 24 hours out of the sun, covered and they will spit out any sand.

    Corn meal is better for feeding clams, it is Rainier and will remove the sand faster, good luck on your trip.

    bahn chel. we called it asian taco. one of my lease favoirte dish. my mom when ever she make it, i only eat one or two. i dont like food that is soft or mushy. i would try to over cook it to make it crispy but still not my fav.

    The flour and pepper purging works better when the clams are spread out and not on top of each other.
