Can I use this to bind an 11 inches length of paper? It looks like I can punch the hole, but how to press the 11 inches wire spines if the pressing area seems to only fit 6 inches?

Yes you can do up to a 12". There is a sliding ruler much like many cutters that expanse the punch area and guides to tell you which pegs to pull for whichever size.
