Cuisines that use heavy seasoning like Sichuan can be good, but there are a relatively small finite number of sauces and thus flavors. It can get boring, whereas with Cantonese cuisine the number of flavors is only limited by the number of different ingredients in the world (another reason why I think Cantonese eat everything to explore new flavors)
Actually, if you ask the waitress to scissor the noodles a bit, I think she would be very willing to help. 🤣😂 As for the strange ball like item you took as breakfast, it's read as 'Jian Dui' in Chinese, but seemingly no single official English translation. It might be known as sesame balls, sesame doughnut, deep fried sesame dumpling, sesame seed puff and so on.

Those “famous” restaurants are those spending most on advertising so that they are listed in social medias and became Michelin. A lot of them are for tourists only. Actually not really good. From my own experience traveling around China, just find restaurants that have chains in the city. It’s always the best. For small restaurant, also try to find chains. if there is no chains, try some street food that you like. Search the restaurants that local tried multiple times(not some “special” ones that are used to serve for tourists or just eat once)
BTW I personally think you guys like strong flavor of food, and those mostly exist in northern part of China(northeast dishes, shanxi, shaanxi dishes, north west dishes, Beijing dishes, etc). You will also find sichuan food great. For me personally, guangdong and fujian food might not suits your stomach really much.
If you have acne on your face, you can visit your local hospital or traditional Chinese medicine clinic and ask them to prescribe medicine to treat it.
