12:09 This is called lo meen 撈面 (lao mian in Mandarin) in Cantonese. You are supposed to dip the bamboo pressed wonton noodles in that bowl of dipping sauce. Lo (lao) = stir up, dig up. Meen (mian) = noodles. The bamboo pressed duck egg noodles zhu (bamboo) sheng (rise) mian (noodles) are so bouncy and al dente because duck eggs bind the flour better, and adding the bamboo pressing, the noodles become very bouncy.
Welcome to Guangzhou. I hope you can visit some archaeological and historical sites like Museum of the Nan Yue King Mausoleum, and two of the world’s oldest mosques built right after the founding of Islam in 620AD during the Tang Dynasty of China, Xianxian Mosque and Huaisheng Mosque. Also the Six Banyan Temple and the Pagoda, the Baiyun (White Cloud) Mountain, and Yuexiu (Yue (which means southern region of Yangtze River) Beautiful) Park, where you can find the statue of Five Goats with a bushel of rice in their mouths. Guangzhou is nicknamed Five Goats City and Rice City because of that iconic statue in Yuexiu Park, in addition to being Flower City. Canton Tower, Haizhu Bridge (Hai = Sea, Zhu = Pearl) across the Zhu (Pearl) Jiang (River), night river cruise on the Pearl River, Sun Yat Sen Memorial Hall, Huang Hua Gang Seventy-Two Martyrs Mausoleum commemorating the Guangzhou Uprising which preceded the Xinhai Revolution of 1911 that overthrew the Qing Dynasty leading to the foundation of the Republic of China. Guangzhou is both a historical city and a world mega city, one of the four first tiered cities besides Shenzhen, Shanghai and Beijing. There is a saying in China “Eat in Guangzhou”, because Cantonese cuisine from Guangzhou is the most famous among the Eight Major Regional Culinary Styles. The others are Chuan cuisine from Sichuan province, Min cuisine from Fujian province, Jiang cuisine from Jiangsu province, Zhe cuisine from Zhejiang province, Hui cuisine from Anhui province, Lu cuisine from Shandong province (birthplace of Confucius), and Xiang cuisine from Hunan province. Greetings from Los Angeles from a Guangzhou born Chinese American ❤❤
18:14 this is called Zhima (sesame) qiu (balls). It’s made of glutinous rice pounded into a paste, and then filled with red bean paste dou (bean) sha (sand, paste) and then deep fried in oil, and then coated with sesame seeds outside. It’s part of the yum (yin in Mandarin) (drink) cha (tea) or dim sum dishes. Yes, it’s a very typical Cantonese dim sum dish sold either as a takeout or in restaurants. ❤
20:00 this is called yao za gui 油炸鬼 in Cantonese, and you 油(oil) tiao 條(strip) in Mandarin. It’s eaten either alone or with rice porridge zook in Cantonese (zhou 粥 in Mandarin). In the northern region or in Taiwan province, it is also eaten with hot soy milk dou (bean) jiang (thick milk). It’s another typical Cantonese yum cha dish. ❤

22:24 Wotou: A traditional Chinese food. Made mainly from cornmeal. It has a simple shape and a slightly rough texture. Wotou is a staple food in some areas and is known for its plain and natural taste. The reason why wotou has a hole is to ensure even cooking during steaming. This hole allows the steam to circulate better, making the wotou cooked thoroughly.

I believe that in pig trotters, there are more collagen than fat. They're like chicken feet, full of collagen. Beef tendon is all collagen. I love clear broth beef brisket (with noodles). You can have beef tendon or beef brisket, or both, in the noodle soup. I prefer beef tendon.

Chinese cuisine is incredibly diverse and beloved by its people, but for many Westerners, the bold flavors and textures can be very different from what they’re used to, even for many Chinese raised in the West. Watching this couple on their food tour, it’s clear not every dish was to their taste-and that’s okay! Just like most Chinese people might not be used to Western staples like hamburgers, steak, or cheese, we shouldn’t try to convince others to love what we find tasty. Food is about sharing and exploring, not forcing preferences!

The sesame deep fry ball is made of glutinous flour and they have the savoury one and sweet one. I guess you were eating the sweet one. The dough stick is deep fry and usually eat with congee or soy milk in the morning or anytime of the day. The wonton noodles if it’s too long ask the restaurant staff to cut it so it’s easier to eat.

Cantonese food is the best IMO because it's goal is to accentuate the original flavor of the ingredients, as opposed to an overwhelming sauce. Cuisines that use heavy seasoning like Sichuan can be good, but there are a relatively small finite number of sauces and thus flavors. It can get boring, whereas with Cantonese cuisine the number of flavors is only limited by the number of different ingredients in the world (another reason why I think Cantonese eat everything to explore new flavors)

Actually, if you ask the waitress to scissor the noodles a bit, I think she would be very willing to help. 🤣😂
As for the strange ball like item you took as breakfast, it's read as 'Jian Dui' in Chinese, but seemingly no single official English translation. It might be known as sesame balls, sesame doughnut, deep fried sesame dumpling, sesame seed puff and so on.

Those “famous” restaurants are those spending most on advertising so that they are listed in social medias and became Michelin. A lot of them are for tourists only. Actually not really good. From my own experience traveling around China, just find restaurants that have chains in the city. It’s always the best. For small restaurant, also try to find chains. if there is no chains, try some street food that you like. Search the restaurants that local tried multiple times(not some “special” ones that are used to serve for tourists or just eat once)

BTW I personally think you guys like strong flavor of food, and those mostly exist in northern part of China(northeast dishes, shanxi, shaanxi dishes, north west dishes, Beijing dishes, etc). You will also find sichuan food great. For me personally, guangdong and fujian food might not suits your stomach really much.

regret😢😢u're missing one food that goes with it. Round sesame balls and long, deep-fried noodles, both need soy milk to taste good. The key is the long fried noodles, which must be put into the boiling soy milk to taste better.😊

Etiquette wise, would suggest leaning into the food as you're struggling with chewing / cutting with your teeth rather than trying to yank from it or using hands when it comes to noodles, both are more toddler moves....
