Hi byrdworky, thank you for the question 😄 Yes, this lid helps to minimize oil splatter while allowing heat & steam to escape. There will still be oil splattering, but the oil won't escape from the pan. I also use it as a cooling rack some times with tiny fried ingredients like fried garlic 😄 It is very very useful in the kitchen 😄

Hi B Griff, thank you for the comment 😀 It was at high temperature. I set it up like this: add in cooking oil over medium heat for 8 minutes. After 8 minutes, set the temperature to high, and add in the pork. As the pork is cooking, control the temperature so that the cooking oil is at high temperature, but not too high until the smoking point. Hope it helps 😀 Happy cooking!

However, do note that tempura flour has additional ingredients which makes the food crispier, which tapioca flour does not have. So the pork belly will still turn out crispy with really high heat and with the right cooking time, but it may not be as crispy as with tempura flour 😄 Please let me know how it turns out 😄 Happy cooking 😄
Never tried this meat until recently. I’m used to regular cured bacon or fresh pork as in loin chops so this flavor was completely different than those other meats. My Daughter bought the pork belly by mistake but I’m not sure I could acclimate to this dish. Very fatty & the non fat pork portion of the meat tastes different.
