I tried this and while the crispiness and mouthfeel were heavenly, the flavor was slightly burnt. I kept the oil in relatively low heat during the frying, but the cooking time of 15min + 15 min turning more seemed pretty excessive. Did you really mean a total of half hour deep frying, or just 15min and I misunderstood?
I had a similar experience. My pieces are really crunchy but the outside was a little dark. The fat had a nice -2 inch crunchy outer layer. I used a wok so idk if this affected the cooking time. Next time I’ll go by the color more vs the 10-15 minute suggestions.
