You might want to look into getting a mallet with replaceable heads. These mallets can be bought with steel, brass, nylon or rubber heads for them. Just a suggestion there though.
You can get smaller curved scissors that would be easier to cut the hole - they call them "snips" and they arae used to cut thin plastic too. Those massive scissors won't be too accurate plus danger of oversnipping?

The grommets that I have seem as though they would be a little dangerous as the male part is sharp and sticks out far beyond the fabric and the washer (female part). What to do to keep from scratching my hand when I quickly reach in the bag?

We have not had any issues with that. The grommets need to pounded together with a mallet.
