  • A vrat special paratha, a recipe you have never tasted before! Easy kneading, easy rolling, tips for a quick meal! Aloo curry especially for fasting days!
    Ingredients for parathas ( 7 parathas):
    Sama rice/ samo seeds 1 cup
    Water to rinse rice
    Water to cook rice 1 1/2 cup
    Salt 3/4 tsp (sendha salt for fasting recipe)
    Potato 250 g
    Ginger, a small piece
    Green chilies (2)
    Cilantro/coriander leaves
    Ingredients for potato curry ( 2 servings)
    Potato 500g
    Oil 1-2 tbsp ghee/oil
    Cumin seeds 1/2 tsp
    Ginger chopped 2 tsp
    Tomato 150 g/ chopped 3/4 cup
    Green chili paste 1 tsp
    Salt 3/4 tsp+ (sendha salt for fasting recipe)
    Cumin powder 1/4 tsp
    Kashmiri Red chili powder 1/2 tsp OR black pepper powder 1/4 tsp or as per taste
    Water 1 1/4 cup
    Cilantro/coriander leaves
    Tips:
    For parathas
    1.You could cook samo seeds without pre-soaking. Rinse seeds well. Cook in 2 cup water.
    2. Cooked rice should be dry and on the warm side when you add grated potatoes.
    3. No water is to be added while making dough.
    4. This dough does not need to rest. You could make parathas right after kneading dough. Make sure to knead dough well.
    5. Do not over boil potatoes.
    Tips for making potato curry:
    1. Choose ingredients that you eat during fasting days. Many people do not eat red chili powder, coriander leaves/seeds and ginger during fasts. We do eat, that's why I have used these ingredients.
    2. Remember to crumble boiled potatoes. Do not cut with a knife or mash the potatoes.
    3. While making curry do not add all the water at once. first cook curry in less water. Then add water to adjust consistency. Adding too much water in the beginning may result in a starchy gravy.
    4. To make the same potato curry on a non fasting day, spice it up with 3/4 tsp coriander powder, 1/4 tsp garam masala and 2 tsp kasuri methi. You may also saute 1/2 finely chopped onion along with ginger. allow onion to saute to golden before adding chopped tomato.
