Instructions for the Correct Method: Skip ahead to 4:27 if you plan to follow the video. Chain your preferred number of chain stitches. Slip Stitch (Sl St) into the first chain stitch: insert hook, yarn over (YO), and pull that loop through all loops on the hook. Chain 1 and Single Crochet (SC) into the first stitch as normal (insert, YO, pull up a loop, YO, pull through both loops) to start your next row. Not shown, but recommended: place a stitch marker on the first completed stitch of the row so that you can easily count your stitches. When finishing a row, make sure that you skip the chain stitch (shown around 5:38) and instead slip stitch (Sl St) into the first stitch of the row to join the round. (This can be seen again a little clearer around 6:51.) Chain and continue SC to start your next row… Also, specifically for amigurumi, some people choose to yarn *under* rather than over (YO is standard for all other types of crochet) because they like the way that the stitches look.
