I've been watching your videos since you were at the basement. I haven't tuned in for the last few months since I have been so busy with life. Watching this video, I can see just how HUGELY Cooper has improved in his candy making skills. Just the small movements seem so much more natural and confident. Well done, Cooper!
I'm surprised you guys haven't tried making mango with tajin-flavored hard candy. It would go good with a lot of the citrus favored candy you guys make.
Reapers have a very sharp, almost acrid taste that in my experience doesn't naturally pair with sweet. It tends to work better towards dry rubs, jerky, and other savory things. Habanero peppers go very well with sweet. If you're going for heat, the Red Savina is one of, if not the hottest breed of habanero. It's a fruitier pepper, and I like to mix it with things like chicken, strawberries, and pineapple on a skewer with a honey glaze. It would probably make a great candy. Jalapenos for sure, I've had jalapeno jam, but it's too mild for my taste.
As a guy who grows and grinds his own chilli peppers I discovered the 3M masks with those filters on either side work really good at keeping the spice out of your nose lol
They are called respirators. Hubby said they should have been worn the whole time. He used to be an EMT & a Fire fighter. He was also a Correctional officer. He has seen hundreds of staff & inmates go into respiratory distress from just pepper spray which isn't remotely as hot as what they put in that candy. Some people even go into respiratory arrest from super hot peppers etc. That is why I have seen multiple Drs. on TV ask people to stop the hot sauce/ tik tok/ hot pepper challenges. I wouldn't have been able to go in the room without one of those white suits & a respirator. I can't barely handle the tiniest bit of jalapeno in my food. I have extra & heightened taste buds & smell. At least they all already knew how they reacted to spicy food so it was fun. The people who don't understand the Scovil scale are always in for nasty surprises. It's not a joke. Glad they all fared well. 😊
I’ve heard salt takes the spice out. I once was at an olive oil store that offered tasting of oil. I had one of their oils infused with ghost pepper. I was a person that at the time not consuming dairy and they mentioned putting salt in the mouth it actually worked.

if lemonade helps should sell them with a lemon candy as like 'Fire x Extinguisher' or even wrap it around a lemon/citrus candy core so its spicy on the outside but if you get through it can get some relief.
Love watching you guys make candy! FYI milk cuts through that spice better than lemonade in my experience and I LOVE spicy foods. Idea...if you put some kind of humorous warning label on the boxes they'll probably sell faster. lol

Just to remind that heat destroys capsaicin. Ever try those Asian chili oils that were not very hot, the chili is aded to the hot oil destroying much of the capsaicin. Temperature control when the powder is added will determine consistency.

Try adding this to chocolate. The cocoa butter in chocolate would help to temper the heat and being able to chew the chocolate helps the tongue heat bc you don’t have to spend time sucking on it. I think it would work great in a cream or a cluster
Picture it Sicily 19...wait. so if you could find a way or do some sort of bacon flavor extract with maple in it that could be an interesting savory flavor. Or, like "liquid smoke" with a maple flavor for a maple bacon-esque candy. Do a whole small batch of various savory flavors call it "flavory savors." Liquid smoke does help bring out certain flavors to the forefront like caramel if I'm not mistaken. Plus it's great for marinades

I am watching currently so maybe you will answer this question before it ends...but I'm guessing the heat from the hot sugar brings out the heat from the reaper more? When I've cooked with hot peppers it seems the high temps elevate the spice level quite a bit

Weathers candy stop the burn. Mexican restaurants serve pralines for same reason. The sugar/fat (pecan) in the praline or weathers which has fat stops the burn.

I grow, dehydrate, and grind up my ghost, peppers, habaneros, reapers, etc. and I use the powder not only in savory foods, but in brittles and other types of candy and cookies
You should have a look at the Chase The Heat YT channel with Johnny Scoville of Blazing Foods. He and the staff there try all kinds of peppers, sauces, tinctures etc. As Johnny always says "Get on the bus". It is a great channel.
you could make a hot chilli candy with a center of citric acid to kill the burn after, i.e. you suck the chilli layer off to reach the citric acid core ie a hot candy with a built in cure
should do a new candy line and call it Lava Fruit or fruity fire and put on each bag what flavor each one is like id do cherry ,watermelon and strawberry and i would atleast do lemon blueraspberry orange as well and give out atleast free sample of each flaver and get your customers feed back on which flavors they liked the best and go from there and id def do free samples just make them smaller then the actual size but big enough so they can get a decent taste of it since not everyone likes hot candy now me i wouldnt try it cause i like my candy to be sweet and sour
I grew those peppers a few years back, and dehydrated them. Whenever the dehydrator was running, my eyes burned, and my sinuses had never been clearer.
I remember years ago stopping in at a hot sauce shop with a buddy of mine. They actually made you sign a waiver before you could try any of they're massively spicy hot sauces. I'll never do that again.

Capsaicin isn't water soluble, so you have to do something to get it to blend with the sugar and water. I love hot chilis!
