I bought my husband some hard candies for Valentine's day. We loved them so much we had to buy more before the month was over. This time we added one of the most delicious things I've ever had in my life, chocolate covered pecan brittle. If anyone wonders if the candy is good, it's beyond good.
Your personalities show in the way you mix the candy on the table. Steve is very calm, quiet, moves methodically & slowly. While Terry is scrapping very fast, loud noises with the paddles on the table & moving all over. Cooper is in between them somewhere.😂 They really put themselves & their love into everything they do.😊
It's still kinda weird not having Max as a part of the shop anymore, but Cooper and Brian are doing so well and are quickly becoming a wonderful addition to the team!
Max decided a few months ago that he wanted to try something new, so he left Hercules Candy. It was on good terms, but that's about all we know as he is a very private person and didn't want to make a big deal about it.
For anyone wondering. Cream of Tartar is a levening agent that acts fast and is a by product from wine production. Where as Baking Soad, also a levening agent, works slowly as you bake/heat. Baking powder is a mixture of the two so you get the best of both worlds.
In this case, cream of tartar is used to prevent the sugar from crystallizing, thereby allowing the candy to be able to be bent and molded rather than cracking. Because of this, it also contributes to the sheen of the candy as it is worked.
When Steve was putting the colors down I noticed that something didn't look right and then Terry confirmed my suspicions, lol. Where's the purple:) The candy looked yummy. Everyone did a great job. Thanks, Hercules crew, for all you do:) Really fun vidya.
Love the videos. I received my first order this past week. Got the cotton candy hard candy...Soooo GOOD!! Got some chocolates too. 8 oz..gone in 2 days. The chocolate is so good.
love this! I made donuts for 18 or so years, mostly in a mom & pop local shop. It was much the same vibe as this place. Experimenting with flavors, small crew. Hard work, but rewarding!
I think if y’all try to twist the candy while you pull it it will give it a nice design. Like so the lines aren’t so straight, like you do with candy cane

It’s a rainbow not tie die. There are ways around mixing it to make a tie die. Roll smaller pieces and stand them up but stack them around in a circle formation.

No citric acid? That seems like a major oversight (unless it was added and not filmed?). No tropical punch is complete without a bit of a sour edge, as many of the possible tropical fruits in question (e.g. mango, orange, passion fruit, pineapple) all have notable citric acid (especially pineapple, which can have up to 8X the citric acid present in oranges).
I have never noticed if you guys have cushioned mats down around the cooling table and where the counter is that you make the hard candy at to make it easier on your joints?
I wonder if there's a way they could actually make the color pattern look like a tie dye pattern. Like configure the stripes a different way or something. Or do layers of color all the way around the big white center. Who knows. Definitely not me lol.
dont remember if you ever answered why you dont have a driops candy roller like lofty pusute have? then you can have different patterns and it is so much quicker. Love fro Norway

I work at a bakery - there's 3 morning bakers and 2 day bakers. The morning bakers start at 12pm, 1am, and 3am and we open at 6am.

Why do you guys have to keep turning the bigger side of the candy will it melt or get hard if you don't flip it?
Yes! The side away from the candy will get cold, and it will start to lose its shape, so a couple of reasons
