What he was pouring on the cling wrap over the bucket was melted sugar. I don't know how he developed the technique but he uses it a lot for his really intricate desserts that need a clear glass looking cover. Imagine a pocket watch, compass, a flower display etc.
For most of us, who don't know how to make candy like you do. I donr get depressed, i respect your knowledge and efforts. Like you said, "he has the time", and abilities and helping hands now. You and Terry worked and brought up your family. You are awesome and you are teaching others how to make what you make. ❤❤❤ Behind him, there is many hands cutting, melting, carring thing for him. There is no shame in being normal, hard working everyday person going about their day and providing a service with pride and joy. Every field has their genius outshining everyone else, they're a thousand steps ahead of rest of us mere mortals, he just happened to be the Michelangelo of chocolate. He got a Netflix special and I love his approach of display his show-stopper, asking for a similar creation and then coaching the worst of the group on a 1to 1 session (the total opposite of what reality cooking has turned to). He come across as a genuinely nurturing/caring person and the medium he's chosen to express his creativity is chocolate.
i heard he's making all those chocolate sculptures for his museum, the chocolate is all stored and until he opens his museum he's showing the world what he's making its really cool
yes you are correct, all the sculptures are stored in temperature controlled room so they don't melt, and chocolate is extremely shelf stable if you keep the conditions perfect and a very dry environment to prevent mold growth
I think a lot of his things are for promos and special requests but he does preserve some and puts them on display at his school .. I’m sure I’ve heard that somewhere lol. He’s a master chocolatier but I’m guessing he has a huge team behind him too. It’s lovely watching him he’s such an artist and comes across as a nice guy on his show. Hercules Candy are amazing it’s a totally different field and everyone loves your candy. It’s good for you guys to watch too though some techniques may help or give Steve some inspiration we learn all the time. The moulding kits are a good idea you could make your own chocolate moulds in whatever design you like and potentially save some money there long term. Keep up the day to day grind, we love u guys
I’ve watched nearly all his videos, so I already know what he’s making at the start of each one. Also, if you REALLY understand chocolate, the techniques he employs aren’t a surprise. But his artistry is out of this world PERFECT.

I agree with Terry that his best stuff is the stuff like the banana cake. The big sculptures are impressive but seem impractical. The smaller desserts are just impressive without the lingering feeling of "but why."

I think you should definitely take (and film) a trip to visit Amaury. It's hard to believe, but he is as nice a guy as he is good at creating chocolate masterpieces. There was also a food competition show on Netflix he hosted. There was only one season, and I suspect the reason is that he just wasn't mean to the contestants like they are on other food competition shows.
