    He's a professor in Chocolateir (sp?) at a Culinary Institute. He teaches professional chefs how to make anything out of chocolate. Most of his creations are put on display at various high end places. Like Vegas Hotels, Museums, The Getty, and he's also commissioned to create specific displays that he charges thousand followed for. He a super nice guy, and yes, he absolutely loved what he does. Especially the more challenging requests. I've been watching him for a very long time. His students say he taught them very intricate tricks & usable objects as molds. I wish I could see him in person! He is an absolute brilliant gifted Chocolateir. I love your watching him. You're my favorite candy site! 👏💞🕊️🙏✨

    I love how Steve genuinely watches these with the utmost respect and admiration rather than jealousy, bitterness or any ill feelings. Terry is always just seems stoked to be a part of it all.

    This man also has a series on netflix. It's a reality show but you can tell he wanted to teach, not have drama. Like, when one lost a challenge, they got personal time with him to learn where they had failed. Really like him

    I watched this guy on Instagram and he is one very talented chocolatier. Don't worry Steve, you're pretty great at what you do and don't forget those HUGE chocolate bunnies you've made back in the basement. Watched that a couple of days ago. Those were awesome. 👍🏻😉

      lets be real though, while its impressive art, its not much in the way of candy. youde only taste dye and tempered chocolate. im sure its all practice or entries into some artistic competitions and the chocolate isn't even purposed for eating but just for looking at. again, really lovely art but such a waste of food

      ​@@thunderborn3231all the creations are eaten. It's said so in the very descriptions of videos. The sculptures prob don't taste like much, but I'm fairly certain the things like the frying pan are p good if they're what they look like/are what are listed in the description.

    The giraffe and dinosaur were amazing... but that pan looked yummy. Super charged banana bread, rice pudding, caramelized bananas and edible pan with sugar lid, YES!

    There are tons of his sculptures on FB and other social media. He also did a TV show. Probably one of the top 3 chocolate sculpters in the world. Some of his work is super intricate and very hard to do.

    I've watched that guy, he is super talented, but it was much more entertaining to watch him with Terry and Steve! I enjoy watching your candy making videos and enjoy seeing the candy makers here and the people who package up the candies and such. Also, your candy is DELICIOUS . Thank you for these fun videos!

    What he was pouring on the cling wrap over the bucket was melted sugar. I don't know how he developed the technique but he uses it a lot for his really intricate desserts that need a clear glass looking cover. Imagine a pocket watch, compass, a flower display etc.

    For most of us, who don't know how to make candy like you do. I donr get depressed, i respect your knowledge and efforts. Like you said, "he has the time", and abilities and helping hands now. You and Terry worked and brought up your family. You are awesome and you are teaching others how to make what you make. ❤❤❤
    Behind him, there is many hands cutting, melting, carring thing for him. Never underestimate what you do. Be proud knowing that people loves the candy you make and will not go to waste.
    Those big eatibble sculptures of candy or cakes, sadly mostly goes to waste.
    My respect for you guys and for every home family business, because there is the fun and joy 🎉 but also there is the stress, and pressure that every business comes with. ❤❤❤

    I agree with her! The pan with the banana cake would be nice to bring at a party, it would be mind blowing for people to see when you cut through the cake, pan included 😂

    I love watching these artists create in chocolate, but I get upset with the waste. On the other hand, your creations are cute and I can gobble them up. I agree with the cake made to look like a pan. That would be so fun to bring to a pot luck/dish to pass. You guys are so fun! I agree. You should've had popcorn!🍿🍿

    There is no shame in being normal, hard working everyday person going about their day and providing a service with pride and joy. Every field has their genius outshining everyone else, they're a thousand steps ahead of rest of us mere mortals, he just happened to be the Michelangelo of chocolate. He got a Netflix special and I love his approach of display his show-stopper, asking for a similar creation and then coaching the worst of the group on a 1to 1 session (the total opposite of what reality cooking has turned to). He come across as a genuinely nurturing/caring person and the medium he's chosen to express his creativity is chocolate.

    i heard he's making all those chocolate sculptures for his museum, the chocolate is all stored and until he opens his museum he's showing the world what he's making its really cool

      yes you are correct, all the sculptures are stored in temperature controlled room so they don't melt, and chocolate is extremely shelf stable if you keep the conditions perfect and a very dry environment to prevent mold growth

    I think a lot of his things are for promos and special requests but he does preserve some and puts them on display at his school .. I’m sure I’ve heard that somewhere lol. He’s a master chocolatier but I’m guessing he has a huge team behind him too. It’s lovely watching him he’s such an artist and comes across as a nice guy on his show. Hercules Candy are amazing it’s a totally different field and everyone loves your candy. It’s good for you guys to watch too though some techniques may help or give Steve some inspiration we learn all the time. The moulding kits are a good idea you could make your own chocolate moulds in whatever design you like and potentially save some money there long term. Keep up the day to day grind, we love u guys

    I’ve watched nearly all his videos, so I already know what he’s making at the start of each one.
    Also, if you REALLY understand chocolate, the techniques he employs aren’t a surprise. But his artistry is out of this world PERFECT.

    i always get a kick out of watching you all make candy. and now watching you WATCH someone else do what they are good at was interesting. .i loved how attentive you both were. what you do is just as much an art and talent as the Chocolatiere , its just different. youtube is questioning my spelling of chocolatiere but i looked it up and i spelled it right.

    I agree with Terry that his best stuff is the stuff like the banana cake. The big sculptures are impressive but seem impractical. The smaller desserts are just impressive without the lingering feeling of "but why."

    I watch his videos and am always astonished by his craftsmanship. His work is beautiful in a different way than yours is. Your candy is beautiful and delicious and if I had to choose between the two it would definitely be Hercules candy. However, I'd like to try that banana cake 😁😁

    I think you should definitely take (and film) a trip to visit Amaury. It's hard to believe, but he is as nice a guy as he is good at creating chocolate masterpieces. There was also a food competition show on Netflix he hosted. There was only one season, and I suspect the reason is that he just wasn't mean to the contestants like they are on other food competition shows.
