Good video! I'm in my sixties and have been grilling since my 20's. I currently have two (22" and 18") Weber grills that I have owned for at least 20 years. Some of my younger friends keep trying to get me to buy a pellet grill and they brag about how easy they are to operate. But to me, this here is the only way to grill. There is something primitive and personal about using a charcoal grill, and having to pay attention to what you are doing, as opposed to just setting the temperature and letting the machine do all the work.
Just in time for Memorial Day. I’m about to grill up using your methods. I appreciate that!!!

How much coals do you use in your chimney to put in your grill. I have grill just like that but my fire box is not as thick that I got from Lowes
When I'm grilling direct, I typically use 2 chimney starters full of charcoal. Here's a video I have that takes you step-by-step on how to use chimney starters: ruclips.net/video/eW1M-8h9AgM/видео.html. When grilling direct, I don't use the offset firebox. I've got my intake vent on the firebox set fully open. Overall, I've been pleased with this grill.
What were you damper settings for your intake 1/4 1/2 3/4 and the exhaust

How often did you flip the wings ?
Since we were grilling directly over the coals, wings were flipped every 3 minutes until the temperature of our grill stabilized.
