Most "Mexican" restaurants purchase their chips in bulk from suppliers. We have just two mon & pop Mexican restaurants who make their own chips in the kitchen and its so obviously good. What a change it is to visit them just for their chips and salsa. We have another Mom & Pop that doesn't make their own chips but they do hand make their own corn tortillas. If they made their own chips, we'd go there every time we wanted Mexican. As before, love your quality videos and cast !

Can you make the salsa that includes tamatillos and avocados (and I think Serrano peppers?). My friend's wife from Oaxaca made it one time when she visited the states and I cannot replicate it
If it was a Salsa Verde you can start with just Tomatillos, and assorted green chiles. They don't even have to be spicy, but I've seen often times people will use about 2 Jalapeños and 1 Serrano chile (given a set quantity of tomatillos) just keep experimenting and I'm sure you'll find the golden mean you seek, friend. And the best part is along the way you get to enjoy some delicious Salsa Verde! Document what you do!

I am always confused: Sometimes you use the same Ingrediens for the Salsa but cook/fry them first. If I would prepare it without "toasting" the ingredients, I would feel lazy, no? And doesn`t the cooking make it less perishable?
There are lots of ways to make salsa. I always like roasted vegetables. I did not see garlic or cilantro added here. But your recipe. Also, I dont use a blender or food processor to make salsa. Unnecessary.
