    I'm so happy I stumbled upon your channel several months back. I am American and been in a long term relationship with a man who is half Mexican and half Salvadorian. You've helped me surprise him with his traditional food. Your recipes are perfect, you use quality ingredients and you bring out the beauty of Mexican food. Your my favorite RUclips chef. I can see how much effort you put in everything including your high quality videos. Thank you so much for your channel. If you ever wonder if you make a difference in people's lives by posting to RUclips, you've changed mine.

    Delicious Gorditas! Mixing potato and cheese in the Maseca is novel and tasty. I must recommend one important change. The recommended temperature of the frying oil to too low. At 325F as recommended the patties absorb the oil. I used a thermometer and checked the oil as I fried. 350-360F is a better temperature and Gorditas came out better when I raised the oil temp.

    Oh so excited to try this recipe. Few questions I’d you don’t mind. 1) are most typical Mexican dishes filled with flavor? I love your videos and seems they are. I have however eaten food made from someone who said it was authentic food, but it was flavorless that is why I ask. 2). Is sour cream another authentic ingredient? Most -laces if we go we have to ask for sour cream, never on items or on plate. Thank you for your time.

    • @VillaCocina
      @VillaCocina  2 года назад +1

      According to history books, pre Hispanic peoples took appearance and flavor seriously. The more colorful the dish was, the better, because they believed it was more appealing . Plenty of peppers and colorful condiments like annatto 🫑 🌶
      Sour cream, in the other hand, is not authentic Mexican ingredient. Mexican cream is.

    Hi Maam Rossana, I am from the Philippines and I also love a little bit spicy food and I guess I will love Mexican food if I will be able to taste them as they look yummy! I intend to try this recipe but may I know what is ' masarina ' ? And how about the round cookware you have where you initially seared the gordita, I don't have one but can I use a teflon pan instead? I want to try making it, it's new to me. Will it be the same experience with making empanada? I also love empanada!

      Masa harina comes from ground nixtamalized corn, that's dried and then powdered. Later its rehydrated with water to make a dough.
      Yes, you can use a non stick pan but the one I use is called "mexican comal".

    Roseanna, you just created the Maillard Reaction on your meat. We usually call it searing. It is French. Pronounced, My-Yar in French. The Maillard reaction, named after L. C. Maillard, is also known as non-enzymatic browning. It is an extremely complex process and is the reaction between reducing sugars and proteins by the impact of heat. The Maillard reaction starts with the reaction of a reducing sugar with an amine, creating glycosylamine.
