16 Conchas Ingredients
6 1/2 cups of Flour (AP or bread flour)
1 1/2 cups of sugar
1 1/2 cups of Luke warm milk
4 room-temperature eggs
1/2 cup of butter (salted)
2 Tbsp vegetable shortening
2 Tbsp vanilla
1 Tbsp baking powder
4 Tbsp active dry yeast
1 tsp salt
2 Tbsp cinnamon
+ extra flour for dusting
Concha topping ingredients
1 cup flour
1 cup vegetable shortening
1 cup powdered sugar
+ extra flour for dusting
Food coloring or hot chocolate of color
Bake at 350 Degrees (f) for 20 to 22 minutes
8 Conchas ingredients
3 cups of flour
1/2 cup sugar
3/4 cup of lukewarm milk
2 room temperature eggs
1/4 cup of butter (salted)
1 Tbsp vegetable shortening
1 Tbsp vanilla
1/2 Tbsp Baking powder
2 Tbsp active dry yeast
1/2 Tsp salt
1 Tbsp cinnamon
+ extra flour for dusting
Concha topping ingredients
1/2 cup flour
1/2 cup vegetable shortening
1 /2cup powder sugar
+ extra flour for dusting
Food coloring or hot chocolate of color
🛑 for the concha cake use 8 concha cake ingredients and the same for the topping
Bake 25 to 28 minutes and let rest another 30 mins

If you don't like using artificial color an you want a strong strawberry flavor in the topping, you can blitz freeze-dried strawberries in the food processor or spice grinder and use that in the topping! It's not quite as strong of a pink, but it's a great flavor, and natural color.

Can you use pastry flour or does it matter?
What did I do wrong 😭 my concha dough was so runny I had to add a bunch more flour. The same for my topping it was way too sticky I had to add more flour
Mine was runny as well. I added flour slowly until it was right. I noticed she scooped her ingredients. They will never be the proper measurements. If you scoop the ingredients, you pick up more. It's better to pour your ingredients over the measuring cup and scrape off the extra. The best way is to weigh them. After playing with the recipe for a couple of hours until I got it right, they burnt in the oven at 350 for 20 min. So that might have to do with different elevations. I bake for a living so I know I'm not a horrible baker. Just need a better recipe (: and remember to keep some of these factors in mind when trying new recipes. It's not always you.

Stephanie I want to say "Thank you" so much for these Mexican sweet bread recipes. My dad was a Mexican "panadero". COVID took him on dec 15 2020. These recipes bring so much loving memories of him I know its not his bread but as I make it and my house smells like my favorite childhood memories of watching him make this it makes me smile and I feel him close.

I just tried the 8 concha recipe and I loved it !! Your instructions were super clear it made this 10x easier!! My concha’s turned out so well I could cry 🥹 I did have trouble along the way because I had to add more flour to the dough and the topping but other than that, smooth baking!!
The 8 concha measurements aren’t correct. It should be: 3 ¼ c. all-purpose flour

I’ve followed your recipes on average about 3x per week for years now, so I’m no stranger to them. I have even made other conchas recipes of yours, always with great results. For this recipe, I followed it to a “t” and ended up with cake batter. I had to add another 3 cups more of flour plus a pinch of salt to get a dough that could hold a shape.
I’m wondering if you live in the mountains and the elevation is the culprit? I’m in South Texas for reference. Anyway once I made those changes, I got beautiful conchas. My friend who I made them for tried one fresh out of the oven and she said it was “the best thing I ever ate.” Thank you again!

I just finished making the dough but it doesn't come out like yours. Mine was still so sticky, even after I added about a cup more of flour it was still sticky 😔 I'm waiting for it to rise now but can anyone give me suggestions on what went wrong?
I think we all had the same issue with the stickiness....I jus had to add flour until it was manageable.

For people who don’t know much about yeast the liquid you are pouring the yeast into has to be warm. Warmer than 90 degrees but cooler than 110 degrees. Anything cooler or hotter than those two numbers your yeast won’t proof.
