- Professional chef Lish Steiling and home cook Beth are swapping chocolate chip cookie recipes and hitting the kitchen! We set Beth up with the finest ingredients from chef Lish’s kitchen along with her recipe for an unforgettable batch of $108 cookies. With her cookie-baking credentials on the line, Beth dialed up food scientist Rose for a quick consultation. Meanwhile over with chef Lish, Beth’s recipe and $14 worth of ingredients were being remixed up to gourmet status with a little skill and professional know-how. The professional chef really amped up her game... appreciate not adding anything on Beth's ingredients... just pure technique!
I agree and I think it's slightly annoying when the profesional chef switches out items like all-purpose flour for some $80 flour because it is no longer a $14 cookie. Plus you want to see what a profesional chef will do with cheap ingredients.I will say I don't mind when the profesional chef adds an ingredient like nuts or something. I think it's also okay if the chef switches milk or something because they are lactose intolerant.

Lish just dyes her hair platinum blonde, she looks to be in her 40's. Having said that, she kinda is grandma-level with her skill, just not her age :) Probably.

I've tried using the toasted butter and flour method recommended by chef Lish for my brownies and dear god my brownies came out better than I ever thougt possible without changing the ingredients at all. it gives my brownies some nutty flavour... without the nuts.

I love Chef Lish, never talking down ingredients. Giving respect to 'basic' or 'cheap' ingredients that most people use. Just showing off stuff that anyone can do.
This 'no instruction' thing makes sense to me now.
So many of the things I cook at home do not have a book to go along with them, just done it too many times before....
But I am often trying to remember what ingredient I may be forgetting, lists cut back on time standing in the pantry.
Recipes are a guideline. I've been cooking since I've been 5 . Each chef has his or her own interpretation. Your not wrong. This is just an underrated industry and it should be put on a pedestal because Everyone needs to eat to survive. 🙌 dont dought what your doing.
Lish is the family member you always want at a family gathering. She is just pure and has no backhanded compliments, just pure peace and love.

Finally! Someone who can explain what baking soda and powder are for.
It's a chemical reaction in the baking process. Look at a traditional red velvet. The oxidation that occurs between the baking powder and cocoa turns the cake a rusty red/orange color
